Esslust im Hotel Alpenkönig

Dinner zu zweit im Esslust. Der Service ist ein eloquenter junger Mann mit der notwendigen Lässigkeit den Abend locker angenehm zu gestalten und dennoch die nötige Professionalität an den Abend zu legen. Das Interior ist stilvoll eingerichtet, in blau und grau und kupfernen Tönen gehalten und schließt sich dennoch nahtlos an die holzvertäfelte, rustikale Gaststube daneben an. Wir sind somit in einem kleinen Nebenraum, in dem noch zwei weitere Tische stehen, so dass es fast den Eindruck eines 3-party „private-Dining“ macht.

Der Aperitif ist schnell bestellt, die Küche flexibel genug auf meine Abwandlung der Menüfolge einzugehen. BTW, 66 € für ein 4 Gangmenü ist heutzutage was Material- und Kochaufwand anbelangt eigentlich ein Schnäppchen, ein paar Euro mehr wären gerechtfertigt gewesen. Wir sind insgesamt auch unter 200 € geblieben, was mehr als anständig ist.
Der Gruß des Hauses besteht aus Brot, Olivenöl und Zitronenpfefferbutter und wird das einzige Manko des Abends bleiben. Das Olivenöl ist frisch und leicht kratzig so wie es sein soll, die Butter gut, das Vollkornbrot saftig, nur das „Toastbrot“ ist trocken. Im Anbiss sieht man das „Weiße“ der Krume, als wäre es schon einen Tag alt. Was ich nicht unterstellen möchte, aber wenn man noch etwas verbessern mag, dann bitte Fokus auf das Brot.

Der junge Mann kennt sich in seiner Weinkarte aus, wir trinken - für viele untypisch - edelsüß durch das gesamte Menü und nehmen die empfohlene Flasche Moscato D’Asti. Perlend, leicht und eben typisch floral für einen Muskateller, passt er vortrefflich zum Sommerabend.

Als Starter kommt eine intensive Pfifferlingsuppe mit Schwarzbrotcroutons und einem sehr schön passenden Schnittlauchöl. Danke an die Küche! Beim zweiten Gang habe ich mich für die Trüffel-Taglierini an Beurre blanc und frittierter Rauke entschieden. Die Teigwaren haben einen schönen Biss. Nichts zu meckern. Ich merke nur wieder, dass Sommertrüffel überbewertet sind, kann aber dann doch nicht meine Finger davonlassen. Hätte ich lieber mal die vegetarische Option genommen, die wäre bestimmt spannender gewesen. Hauptgang: Rinderfiletspitzen auf Bandnudeln in Sherrysauce mit Pfifferlingen. Die Rinderfiletspitzen waren perfekt. Scharf angebraten, super zart, innen rosa. Alles richtig gemacht. Vom Sherry habe ich nix gemerkt, war aber auch egal, es war wunderbar. Abgerundet hat den Abend dann eine Mousse von weißer Schokolade auf Erdbeerragout neben Pfirsichsorbet auf Schokobröseln und kristallisierten Walnüssen, deren leicht bittere Note eine gute Balance zum Rest war. Und wenn ich nochmal mal auf sehr hohem Niveau mäkeln darf: Die Himbeere hat sich mir nicht erschlossen, wenn unten doch Erdbeeren sind, die war schön aber irgendwie auf der falschen Party. 😉

Fazit: Es haben sich sehr viele Leute Mühe für uns an diesem Abend gegeben und das Essen war toll! Fahren sie vorbei; es ist definitiv einen Umweg wert!!!

Eating pleasure at the Hotel Alpenkönig

Dinner for two at Esslust. The service is an eloquent young man with the necessary casualness to make the evening relaxed and pleasant and yet bring the necessary professionalism to the evening. The interior is stylishly furnished in blue, gray and copper tones and yet connects seamlessly with the wood-panelled, rustic dining room next to it. We are therefore in a small side room in which there are two more tables, so that it almost gives the impression of a 3-party “private dining”.

The aperitif is ordered quickly and the kitchen is flexible enough to accommodate my modifications to the menu. BTW, €66 for a 4-course menu is actually a bargain these days in terms of materials and cooking effort, a few euros more would have been justified. We also stayed under €200 overall, which is more than decent.
The greeting of the house consists of bread, olive oil and lemon pepper butter and will remain the only drawback of the evening. The olive oil is fresh and slightly scratchy, just as it should be, the butter is good, the wholemeal bread is juicy, only the “toast bread” is dry. When you take a bite, you can see the “white” of the crumb as if it were a day old. I don't want to imply that, but if there's something you want to improve, then please focus on the bread.

The young man knows his way around his wine list, we drink - untypically for many - noble sweets through the entire menu and take the recommended bottle of Moscato D'Asti. Sparkling, light and typically floral for a Muscat, it goes perfectly with a summer evening.

The starter is an intense chanterelle soup with black bread croutons and a very nice chive oil. Thanks to the kitchen! For the second course I chose the truffle taglierini with beurre blanc and fried rocket. The pasta has a nice bite. Nothing to complain about. I just realize again that summer truffles are overrated, but then I can't keep my hands off them. If I had preferred the vegetarian option, it would definitely have been more exciting. Main course: Beef fillet tips on tagliatelle in sherry sauce with chanterelles. The beef fillet tips were perfect. Seared, super tender, pink inside. Everything done right. I didn't notice anything from the sherry, but it didn't matter, it was wonderful. The evening was rounded off with a white chocolate mousse on strawberry ragout alongside peach sorbet on chocolate crumbs and crystallized walnuts, whose slightly bitter note was a good balance to the rest. And if I can complain again at a very high level: I didn't understand the raspberry when there were strawberries at the bottom, it was nice but somehow at the wrong party. 😉

Conclusion: A lot of people made an effort for us that evening and the food was great! Drive by; it's definitely worth a detour!!!
