We went to Central during lunch and were blown away by the couture dining experience we had. We opted for the tasting menu, which is extensive.

Their education regarding native ingredients, arts, and crafts was a refreshing preface for what we would be enjoying. It elevated our experience and ability to further enjoy the nuances of the dishes presented.

Central does an amazing job of combining textures, flavors, culture, and knowledge of native ecosystems into each of the courses.

Our favorite courses were black rocks, extreme altitude, warm sea current and cacao chuncho.

Definitely one of our most memorable dining experiences.

This is the review that I’ve been dreading writing most. I hope this doesn’t get me banned from the building… Central is an experience. Chef Virgilio Martínez Véliz put together a creative voyage through Peru. Unfortunately, I think he tried too hard to keep true to his vision and missed on a few of the dishes. That is not to say that anything was bad. Nothing was bad; only a few of the dishes were not amazing. For the price point (PEN 1500 without tip/$490 USD after tip) and compared to a few other restaurants it wasn’t worth the price. As far as food, this ranked as my #4 favorite in Lima. So the food was very good, but not every bite was “Wow!”  As far as value, it ranks a lot lower, which is why I gave it a cost-adjusted 4-star. If you must go to the #1 restaurant in Latin America and possibly the world, then go. As I said, it is a wonderful experience. But don’t miss out on the restaurant upstairs which I rank as my #1 restaurant PERIOD.

Experience of a lifetime. My mind was completely blown. Literally worth every penny to me. If you don’t like strong, experimental flavors, not for you. But if you are a true food lover, your life may never be the same. I literally woke up the next morning somewhat depressed… I think it flooded my brain with too much dopamine. That or I am just sad that the experience is over. This is art in every sense of the word. I think it is worth going to Lima for. Probably ruined fine dining for me forever because everything will always be compared to my first time at Central. If I didn’t force myself to write this review I would have no words.

A once in a lifetime experience that truly exceeded our expectations. We did the full immersion and were surprised at how much we learned throughout the tour and then watching all of the aspects we learned about come to life on the plate was special. The setting is beautiful with views over Moray and meeting with the local guides was amazing. Francisco was our guide and he was so knowledgeable and a pleasure to spend time with. We loved the bar experience after the tour, trying cocktails with local ingredients. The tasting menu was fantastic- every single thing we ate was delicious and the plating and experience of each moment was unforgettable. The portion sizes are perfect. The staff were wonderful and the service was 10/10. It is worth every penny and I would recommend everyone to come!

The offering is an eight course tasting menu. Altough every dish is instagram perfect view tastes are a little blunt.

From the moment we arrived, we were warmly welcomed by our guide, Maribel, whose friendliness, deep knowledge, and ability to seamlessly communicate in three languages (Quechua, Spanish and English) made the visit even more enjoyable.

The journey began with Mercedes, our local guide, who introduced us to the rich diversity of native herbs. She explained their uses, cultural significance, and the deep historical roots they have within the local communities. This connection to tradition and nature set the perfect tone for what was to come.

The landscape surrounding MIL is breathtaking, especially during the rainy season. The rolling Andean mountains, vibrant green tones, and delicate wildflowers create a stunning backdrop, making the setting almost as memorable as the food itself. What makes it even more special is knowing that this very site—the ruins of Moray—was used by the ancestors of this land to develop agricultural diversity, a tradition that MIL continues to honor and evolve.

The meal itself was a masterpiece. Every course was a celebration of local flavors, history, and craftsmanship. The dishes were not only incredibly delicious but also beautifully presented—each plate a work of art. The flavors were bold, surprising, and palate-opening, allowing us to experiment and appreciate every individual ingredient in a new way. Everything was sourced locally, and everything had a deeper meaning, making the dining experience truly unique.

Beyond being an extraordinary fine-dining experience, MIL is a project worth supporting. It preserves generations of knowledge, fosters the skills of local artisans, and showcases the true essence of this region’s culture. What a unique and memorable experience at Mil. We were welcomed with a quick tour and introduction of the regional ingredients that will be used in the course. The food was introduced using different postcards from the Andes region. I really enjoyed the non-alcoholic pairing. The view was mindblowing!

This was an experience which we treated ourselves to as it was our honeymoon. Undoubtedly the most expensive meal we’ve eaten but worth every penny. Unfortunately we couldn’t do the full experience as there wasn’t availability on the day that we went, but  it was an experience anyway!

Service
The service was wonderful and the staff described the dishes passionately and in great detail in both English and Spanish. The meal moved at a good pace and there were no awkward gaps between courses, equally, we didn’t feel rushed. My husband went to the toilet multiple times during the meal due to his weak bladder but the staff timed our meal around this, they also rearranged his napkin each time he went.

Location
The restaurant is in the most incredible location. The views are spectacular, we would recommend hiring a taxi for the day - our driver took us to other sights nearby and it ended up being a delightful journey to and from Cusco. Warn your driver, the meal is 3h long.

As you enter the building you are immediately enveloped in a world gastronomic experimentation. The diversity of plants and flowers so well displayed with tasteful and beautiful decor. The courtyard is not only nice to look at, but adds to the feeling of total immersion. The rooms are small and intimate and allow guests to feel they are the upmost priority of the staff. Every detail of the building is perfect down to the thatched roof, antiquated walls and Incan decor. The staff took the time do explain each element of the design to us which added to our experience of the environment. One criticism would be that our chairs were quite far apart as the tables are large - easily resolved by shuffling our chairs closer.

Food
We have eaten in a few well renowned restaurants and there have always been one or two courses we didn’t like. This was not the case at Mil. Every course was delicious and well thought out. We were told the story of ancient Incan agriculture, with each ingredient at the centre, through delicious and beautiful courses. The colours and textures in each course married perfectly and made us see simple, underrated ingredients in a new light.  It was a great way to learn about ancient local traditions and culture and to be fully immersed in it. The meal connected us to the Incan agricultural scientists of Moray experimenting with different textures, varieties and combinations of the ingredients found in this harsh climate.

It was easily the best meal we’ve ever had and we would honestly return to Cusco just to come back! Thank you for teaching us, and sharing your experiments and your passion with us!!

What an amazing location and we’re so grateful to find it. The staff was caring, considerate, and friendly. They went out of their way to make us feel welcome. The location is so unique. Such a beautiful feeling of being immersed in Italian culture through the location, the staff and the food. We enjoyed going up to the rooftop to see the view of the city. The breakfast was outstanding.  They have a little table set up to dine in the courtyard in the mornings. We had a special dietary need, and they accommodated so nicely. One of the staff offered to take us into the historic tunnels below, and it was such an interesting experience.  I So excited about coming back someday  can’t wait to do so!

Hard to pick a favorite thing. Our room was very nice and the bathroom was terrific - bathrooms are important to me. The location is fantastic - the Trastavere area has lots of restaurants. The hotel specifically has a gorgeous garden - do not miss that. I could have just stayed there.

Staff is wonderful - kind and thoughtful.

The hotel has a stunning chapel. The continental breakfast is extensive. When we returned for the evening,  I just marveled at the beauty of the actual facility. I spent time exploring the stairways and art. I would find it hard to stay elsewhere when I return.

Brilliant stay.

We (me and my husband)came here to celebrate my birthday , must say cannot recommend anything better.
The hotel is beautiful located in the heart of the city. The service, staff, food is excellent. Since checking everything is perfect. The reception staff were very friendly offered us early checking. We booked the restaurant for dinner and the food is fantastic. Daniel from the restaurant served us and I must say he’s an excellent staff.
The rooms are spacious and very clean equipped with modern necessities. The breakfast is brilliant serving buffet service.we love our stay and thanks to everyone from Donna Camilla savelli to make our stay so memorable.

We will definitely be back

This hotel was beautiful. I wished we had a great experience from the checkin but it wasn’t as I expected. I chose this hotel due to its history but was very disappointed when I wasn’t offered a tour or anything special from the staff. It was a very cold checkin and we weren’t even told our room number until we asked. The room was small and cute but hot and the ac/heating unit did not work. The breakfast buffet was very nice and Carmen and Lourdes made it even better. They  kindly offered a tour of the hotel and made our mornings in the hotel very pleasant. The area of the hotel was great. Lots of restaurants and the cannon at 12 noon made it even better.
