Was super excited for this experience…… the food let us down. It just was poor. They were trying so hard to create something that was different and respective to the earth and eye opening. Instead we had 14 of 16 plates that were just downright weird and lacked true flavor. Sure the origin of each plate was unique and captivating but the taste was poor. Wine selection as well was different and interesting but lacked true quality that you would expect at this level. We really did our best to stay at the table and try each dish. We wanted to love this meal but the food was far from special. We will say that the service was compassionate, detailed, and of high quality. We won’t say don’t go, but don’t go with expectations of an incredible meal. Go with expectations that the kitchen will try but they will fall short.

Where to even begin with this review.
From the start we were greeted by name at the entrance and escorted to our table. Service was impeccable throughout and anticipated every need.
As for the food, the dishes outdid each other and each was unique. These dishes provided unusual flavours, presentations or ways of eating and left me impressed. From being served in a bowl of ice, to being sipped from a planted tomato plant, to lobster being cut out of seaweed.
We got to enjoy both the wine and juice pairings and both complimented the dishes well, although I preferred the wine pairing and strongly suggest it if you drink alcohol.

The wine pairings were a bit scarce, making it hard to fully relax and enjoy the experience. I found myself worrying about running out of wine before the next course arrived, which took away from the overall enjoyment of the meal. Additionally, the wine list was very limited, and there were no cocktails available.

Good food and excellent presentation. They explained the origins of the ingredients and the creation of each dish very well.

The wine pairing was very well curated.  Can't say the same for the juice pairing, my husband did not enjoy his as much.

Points off for the atmosphere. The view that we had was that of people sweating and doing their reps - yes, we were facing an open-air gym.

The meal was exceptional however with much consideration I can’t help but be disappointed in the wine service. Six two ounce pairings for the amount of courses was insufficient. Many of the courses we were expected to save the pairings for three courses. I never felt like I fully enjoyed the wine pairings because I was too worried about saving a little for the next course. This was a problem right from the start as the welcome sparkling was meant to carry the guest through three courses. Furthermore, not a single attempt was made to refill glasses during any of the courses. A restaurant of this caliber should budget this kind of service. Many restaurants actually bring out additional wines as part of service. If Boragó can’t budget these kinds of acts of service into their overall service, I would recommend they choose less expensive wines for pairings or offering the guest a chance to buy bottles during service. Which leads to my next point, the price of the wine pairings is equal to buying 2 bottles from their list, which I only found out at the end during dessert service. I find it in poor form not to offer a late harvest or fortified wine as part of wine pairings at a restaurant of this caliber. For such precision in the meal preparation I found it surprising how uninspiring the wine service was to be. The takeaway menu was nice but again as someone who dines at many high caliber restaurants I found the parting lack luster and almost offensive after spending 1,400 usd. Anyone use to fine dining will be disappointed as several guest wore jeans and they even put a stool out for one table to place their backpack.

Inte lika trevligt läge eller rum som den tidigare platsen. Cavernous, bullriga och inte “smart casual” som annonseras men faktiskt hade människor där i shorts och t-shirts. Servicen var mycket bra och maten var innovativ men en besvikelse. Massor av blad, ganska bitter och salt. Definitivt inte så bra som det brukade vara och vi hade ett barn vid ett bord bredvid oss som hamnade på golvet och krävde uppmärksamhet. Dessutom skrek alla kockar av någon anledning när en tallrik var klar. Bisarrt. För priset, en besvikelse rum och mat. Sannolikt inte kommer tillbaka. Gav en hög tre stjärnor eftersom servicen var fantastisk men maten höll inte måttet.

Frasen bröd och cirkus kommer från antikens Rom, där härskare distraherade människor med skådespel och matrester. En perfekt beskrivning av hur Borago fungerar. Vi är inte emot avsmakningsmenyer, extravagant tallrik eller Michelin - nivå middag, vi har haft massor. Men Borago tar teateröverskottet till en absurd nivå utan smak eller substans som rättfärdigar det. Nästan varje rätt krävde en förklaring av vad som faktiskt var ätbart. Blad, kvistar, skum, öga - fånga på tallriken, men vad som än VAR ätbart var platt och glömsk i smaken. Även vin Servicen föll isär; sommelieren kunde inte hålla jämna steg bara förvärra förvirringen. För den här cirkusen betalade vi 1 000 dollar . Senare den kvällen hade jag mitt livs dyraste diarré. Normalt skickar jag bara recensioner på de platser som vi verkligen har haft. Men med tanke på det höga priset punkt och Top 50 betyg av Boragó i Santiago, har jag granskat som vi var tyvärr lite besviken med vår erfarenhet. Jag provade den vanliga menyn - som jag njöt av (gillade inte älskade) . Med det sagt, desserterna var lite av en besvikelse - svampglass är aldrig en bra idé. Min man gjorde icke - skaldjur / fisk version som han inte äter skaldjur och det var bokstavligen en svamprätt efter den andra. Svampglassdesserten var när han hade humorfel. Han gillar inte svamp... Han klargjorde detta för servrarna efter 2 på varandra följande svampbaserade kurser och de tyckte det var lämpligt att göra ett stående skämt av alla svamprätter som följde snarare än att försöka rätta till problemet. Jag uppskattar Mapuchekulturens inflytande på Boragó-menyn, men vi tyckte att bristen på mångfald - när det gäller svampar - var förvånande. Vid denna höga prisnivå förväntade jag mig bättre - och mer mångfald i den vegetariska menyn - inte bara den ena svampbaserade rätten efter den andra. För en sådan högt rankade restaurang, vår erfarenhet var lite av en besvikelse. Jag matade tillbaka detta till restaurangen innan jag gjorde denna översyn - eftersom jag ville ge dem en möjlighet att svara - men det gjorde de inte. En helt otrolig kurs ut erfarenhet. Jag gillar inte kreativa fine dining-grejer eftersom det inte är tillgängligt. Så var inte fallet här. Så många banor, mest läckra och de som inte var det kunde man rally uppskatta. Och det fanns ingen irriterande Franska biljett, det var allt Chile tema. Rekommenderar också starkt juiceparningen. Så otroligt unik och utsökt.

Det är ett visuellt och doftande skådespel lika mycket som en smakupplevelse. Många av Boragós banor är medvetet lätta och fräscha. Dock inte säker på om äta många av de råa blommorna är min grej. En eller två rätter kändes mer konceptuellt intressanta än direkt läckra. Men höjdpunkterna var långt större än botten. Servicen var uppmärksam. Det kändes dock lite som ett ”transportband”. Innan vi fick lätta oss till våra platser började de rulla ut disk efter disk. Kockar kom ut för att presentera dig med rätterna och förklarade dem men innan du kunde ställa frågor ville de redan rusa tillbaka till köket. Det kändes inte som om de bryr sig alls. De glömde också att visa oss fiskstjärten för att demonstrera torkning/åldringsprocessen för att intensifiera fiskskålen. En av kockarna blev till och med distraherad när han förklarade rätten och tittade någon annanstans i matsalen. Chef Guzman var där men alla av dem swooning över till en vip bord ser ut som med även all kökspersonal fortsatte att titta på vip bordet hela tiden. Det var inte subtilt. 🤣. Atmosfären är elegant och modern, i linje med restaurangens framåttänkande kök. Matsalen har ett öppet kök och minimalistisk inredning som sätter strålkastarljuset på maten. I slutet av måltiden ”merförsäljning” genom att erbjuda några unika aperitifval. De har också varor att köpa i lobbyn checka in område. Det fick mig att känna mig lite för kommersialiserad - med transportbandsservicen som beskrivits tidigare. Som gastronomisk resenär kunde jag inte låta bli att jämföra min middag på Boragó med en nyligen måltid på Central i Lima. Både Boragó och Central firar sitt lands inhemska råvaror med glöd och skapar genomarbetade avsmakningsmenyer som berättar en historia om land och kultur. Ändå kändes de två upplevelserna olika i förhållningssätt. Boragó framstod som mer experimentell och vågad. Dess rätter knuffade min gom ut ur sin komfortzon ibland – vissa smakkombinationer var ovanliga, till och med ”konstiga” i konsistens eller smak. Central förtrollade mig med en raffinerad sammanhållning, Boragó imponerade mig med sin vildmark och nyckfull. Det var en tanke - provocerande matäventyr. om du uppskattar en avant - garde inställning till att visa upp terroir, kommer du att förstå vad som händer här.

Den mest otroliga kulinariska upplevelsen i mitt liv! Maten ingredienser, presentation, service och personal sätter på en fantastisk show. En anmärkningsvärd kväll!

En av de bästa måltiderna någonsin. Maten var utsökt, kreativ och mycket lokal och fräsch. Den visuella presentationen var over the top - nästan mer konst än mat - men smakade fantastiskt. Servicen var oklanderlig och vinerna var utsökta och unika. Mycket förtjänt av sina topp 50 restauranger betyg och från mina erfarenheter, lätt topp 10 .

Detta var mitt 3: e besök i Borago och återigen, jag var förvånad över presentationen, kvaliteten, smaken och servicen. Hur denna restaurang inte har flera Michelinstjärnor är vansinnigt. Denna restaurang berör allt som bör krävas av Michelin.

Detta är en av de få restauranger jag varit på där jag fann mig själv leende och även skrattar (på ett bra sätt! ) med några av de uppfinningsrika kurserna. Jag var orolig att det skulle bli mer utseende än smak men maten i mitt tycke smakade faktiskt utmärkt. De är också mycket tillmötesgående av preferenser - de nådde ut av WhatsApp veckan innan min bokning och subbed ut en kurs jag hade känt mig iffy om baserat på översyn bilder (på grund av min personliga smak) .

Obwohl ich schon in mehreren Sternerestaurants gewesen bin, habe ich mich hier besonders wohlgefühlt. Das Ambiente war entspannt und ungezwungen, trotz des hohen Niveaus. Es gab viele feine Details, die an die Sternegastronomie erinnern, aber es war dennoch alles angenehm locker. Besonders für Leute, die noch keine Erfahrung mit gehobener Küche haben, ist dieses Restaurant perfekt – man wird gut an die Hand genommen und durch den Abend begleitet.

Das Menü mit 17 Gängen war einfach klasse! Jeder Gang war ein kleines Kunstwerk, und man hat gemerkt, wie viel Herzblut dahintersteckt. Ich habe mich für die alkoholfreie Getränkebegleitung entschieden und war begeistert, wie gut sie zu den Gerichten gepasst hat. Das war eine echte Überraschung, weil ich finde, dass jeder einfach eine Flasche Wein aufmachen kann, aber hier wurde wirklich etwas Besonderes geboten.

Die Erklärungen zu den Gerichten und den verwendeten Produkten waren super interessant und haben das Erlebnis noch intensiver gemacht.

Am Ende des Abends wollte ich mir am liebsten gar nicht die Zähne putzen, um den Geschmack so lange wie möglich im Mund zu behalten. Es war fast schon traurig zu wissen, dass das Frühstück die nächste Mahlzeit sein würde.

Insgesamt ein tolles Erlebnis, und ich freue mich schon darauf, wiederzukommen!

I had the pleasure of eating at this seafood restaurant in Sweden and it was an experience I won't soon forget. The fact that the restaurant has already received a star after just ten months is really impressive and absolutely deserved.

Although I have already been to several starred restaurants, I felt particularly comfortable here. The atmosphere was relaxed and informal, despite the high standard. There were many fine details reminiscent of star-rated gastronomy, but everything was still pleasantly relaxed. This restaurant is particularly perfect for people who have no experience with fine dining - you will be taken by the hand and accompanied throughout the evening.

The 17-course menu was simply great! Every course was a little work of art, and you could tell how much passion went into it. I chose the non-alcoholic drink accompaniment and was amazed at how well it went with the dishes. This was a real surprise because I think anyone can just open a bottle of wine, but this really was something special.

The explanations of the dishes and the products used were super interesting and made the experience even more intense.

At the end of the evening I wanted to avoid brushing my teeth so I could keep the taste in my mouth as long as possible. It was almost sad to know that breakfast would be the next meal.

Overall, a great experience and I look forward to coming back!
