 by chef Diego Guerrero holds two Michelin stars and a Green Star for sustainability, driven by product quality and zero-waste thinking, with playful, technically precise cooking in an intimate open-kitchen setting. Guerrero often steps out during service to present dishes himself, which adds a rare sense of connection to the meal.

Set inside a private members' club above Calle Alcalá, 

 pairs two-Michelin-star cooking with one of Madrid's most dramatic interiors, delivering technically inventive cuisine (the caviar doughnut has become legendary) in a Bond-film setting. The elaborate tasting menu changes with the seasons and consistently delivers some of the city's most visually striking plates.

 is a one-Michelin-star argument for why French-influenced fine dining will never go out of style, with precise, flavour-first cooking, an exceptional wine list, and service that's warm without being stiff. The lobster tail in spiced broth and white truffle pasta are the kind of dishes people come back for.

The first Spanish restaurant ever to earn three Michelin stars,

Set in one of Madrid's most beautiful historic buildings near Plaza de España, 

 serves a Michelin-starred tasting menu blending classical Spanish technique with Mediterranean influence, with the bacalao and the wine pairings standing out as highlights. Dishes are often prepared tableside, which adds a theatrical layer to an already special room.

📍 C. de Ferraz, 2 — Moncloa | ⭐ Michelin

Chef Javi Estévez has built a Michelin-starred restaurant entirely around offal, turning pig's tail, bull's heart, and callos into something genuinely brilliant through modern technique and precise cooking. 

 is the most interesting meal in Madrid at its price point, and proof that the most memorable dining experiences don't always come from the most expected ingredients.

📍 Calle de Modesto Lafuente, 82 — Chamberí | ⭐ Michelin

An intimate counter restaurant inside the Hyatt Regency Hesperia, 

 by Dani García is built around fire and smoke, offering a 14-course omakase that fuses Japanese and Spanish influences with an open wood-burning hearth at its centre. Just six counter seats and two small tables make every service feel rare, and the seafood-forward menu is among the most consistently praised in the city.

Chef Rodrigo de la Calle's one-star, Green Star restaurant
