Honestly, it was the worst meal I had in Madrid. I’ve eating at Michelin star restaurants before and this had the worst service and food I’ve had. From the moment we walked in, the greeting was lukewarm and we waited for around 10 minutes from the moment we sat down to getting service. The food was disappointing to say the least. One of the dishes was a slice of beef seasoned with just salt… like yes it was cooked perfectly but I don’t see how this is of caliber of 2 stars.

As a 2-star Michelin restaurant, DSTAgE truly lived up to its reputation, taking us on a flavorful journey around the world. The creativity and ambition of chef Diego Guerrero were evident in each dish, with many telling a story through evolving flavors, historical influences, and groundbreaking techniques like maturation, fermentation, and enzymatic cooking.

Our tasting menu included standout dishes like the 7-day Lubina, Lasagna de Anchoa, Pichón Koji, and a mind-blowing Mochi de Cebada, all paired with El Enemigo 2019. The balance between vegetarian dishes and those featuring meat or fish was impressive, with every ingredient feeling essential.

The service was impeccable, and each dish felt like a party in our mouths—beautifully perfected and almost magical in presentation. It was truly the highlight of our trip and the perfect anniversary dinner. If you’re in Madrid, DSTAgE is a must-visit!

Great experiences! Just WOW. Had 16 courses menu with a wine pairing for too. Molecular kitchen can seem to be small portions but at the end of the dinner I was so full! Different varieties of different tastes combinations… must try this 2 stars Michelin star restaurant when in Madrid.

I could write a novel about our experience at DSTAgE. Truly a special experience, elevated by well trained and exuberant staff!

A couple notes worth mentioning. 20+ courses isn’t quick! It’s a 4-5 hour experience, this was a surprise to me but absolutely not an issue.

Of the 20+ courses, I didn’t enjoy all of them from a flavor perspective. Many dishes are fairly “hardcore”, with examples like tuna heart coming to mind. That said, they were all an absolute joy to try! As a self proclaimed “home chef”, quite literally zero of the dishes were things I could even dream up creating much less actually acquire the ingredients to create.

Highly recommend the wine pairings as you will try some wines that you truly cannot get outside of DSTAgE. Vineyards producing 700 or 2500 bottles a year where DSTAgE acquires most if not all of them. Was very happy to see orange wine and kombucha as part of the 10 or so wine pairings.

They even have their own private salt supplier that makes a small amount of finishing salt just for DSTAgE, and believe it or not… you can tell!

Favorite dish, and most surprising as it isn’t something I would ever seek out, the tongue! Just wow!
