It’s been seven or eight years since my last visit to RAW, back when the chef was still exploring ways to incorporate Taiwanese ingredients into the dishes. This time, I experienced the culmination of years of growth, drawing from his journey both in Singapore and his decade-long dedication to Taiwan’s culinary scene.

Every course at RAW is thoughtfully crafted, each dish carrying deep significance and a story behind it. The dishes are not only beautifully presented but also meaningful, reflecting the chef’s personal evolution and his connection to Taiwan’s unique flavors.

The result is an exceptional dining experience, where each plate feels like a tribute to Taiwan, infused with global techniques and perspectives. It’s a place where art and flavor meet, and each visit leaves you with a renewed appreciation for the journey behind the food.

A cut above the rest. Near-perfect dining experience that engaged all our five senses.

From what we ate (source/choice/preparation/pairings of ingredients); how we ate (hands/gloves/tweezer/designer-knives, etc); when each dish was presented (timing was just right); where we ate (table/gallery); and who served us (impeccable service, not just professional but personalised and sincere, also very knowledgeable), everything was well beyond expectations.

There was not a single boring moment. 4 hours passed quickly. When RAW is no more, hopefully there will be more of such to take its place. Looking forward.

I’m honestly so sad to hear that this restaurant is shutting down by the end of the year to become a school… Raw is what I’ve always imagined a michelin star restaurant to be: gorgeous interiors, unique food, and an equally ambitious and contemporary way to introduce your meals for you.

Raw has definitely been my favorite dining experience to date -the waiters are super knowledgeable with the dishes, and are able to introduce them in english and chinese! The whole dining experience took about 3 hours, but even my impatient dad (who usually limits his meals to an hour max) happily sat through the meal.

The food they serve always have some sort of theme that binds them together, and it’s always fun to see what they choose for the season. This last one was about the chef’s memories and culinary journey to commemorate the end of Raw… which was bittersweet but delicious.

I hope they plan to reopen another restaurant soon! Raw will always have a special place in my heart, and I was so lucky to have my birthday meal there!

Truly a unique experience. It was their 10 year anniversary special menu. Too many pictures to share them all. Elle was a great waitress/host who walked us through pretty much all our dishes.

Jag tror att den unga kocken Huang Yi Lun är morgondagens lysande stjärna, som förtjänade att ha en 3-stjärnig ära. Vi har varit på alla de tre stjärnorna och tvåstjärniga restaurangerna i större San Francisco och Tokyo. Vår favoritrestaurang och kock var för närvarande Benu av Corey Lee. Men inte längre. Efter att ha försökt och misslyckats med att säkra en bokning 2017 när jag senast besökte Taipei lyckades jag äntligen göra en bokning för mars och var så glad att vi kunde gå. Detta är haute cuisine där uppe med det bästa! Vi hade turen att äta på en kväll när den speciella ingrediensen var svart tryffel, och när amuse bouche av wagyu yakitori, foie gras och rakad svart tryffel kom, visste jag att vi var med en god natt! Dyrt för Taiwan, men inte dyrt jämfört med restauranger av samma kvalitet runt om i världen. Om du kan säkra en bokning gör du det bara. Skulle inte rekommendera vinparing men - de minsta servings av vin som jag någonsin har fått och trots kvaliteten på vinerna det var inte bra valuta för pengarna.

Vi har hört bra recensioner om denna restaurang från vänner och äntligen haft en chans att prova under vårt senaste besök i Taipei. Det var en underbar middagsupplevelse från kreativiteten hos varje rätter, inredning och bra service. En av servitörerna informerade oss om att deras meny ändras säsongsmässigt och upprepar inte.

Trots att jag bor i San Francisco-området hade jag hört talas om Raw, som tilldelades en stjärna i Michelin Guide 2018 för Taipei. I veckan fick jag äntligen en chans att prova det. Detta är en av de bästa restaurangerna jag har upplevt i år. Användningen av lokala ingredienser i fransk stil kök är sublim och dess presentation är visuellt fantastisk. Parningarna av fransk vin slog alla rätt anteckningar. Tjänsten är oklanderlig och träet dekorerar också en fest för ögonen. Raw förtjänar mer än en enda Michelin-stjärna, och jag förutspår att den kommer att få en annan i den inte-för-avlägsna framtiden. Detta är ett måste - försök ska du komma till Taipei.

Vi hade provat Andre Chiang's restaurang i Singapore och njöt ordentligt av hans mat och ville prova råa. Vi hoppades att se honom igen vid råa, men fick veta han ägnar större delen av sin tid i Singapore och var inte för närvarande på råa. En mycket udda sak som inträffade var att restaurangen öppnar vid 6:00 och vi kom före 6:00, men de inte gav oss möjlighet att ange restaurangen fram till ca 6 : 05:00. De tog också betalt $ 150 NT till bröd (vilket är bra, men inte säker på om det var nödvändigt) . Vi tog med vår mycket väl - uppfostrade 8 år - gamla son för att äta middag och han åt samma banor vi åt. Han inte är ett stort kulinariskt äventyrlige, men njöt ordentligt av maten och åt nästan allt. Han var den enda barn finns och den restaurang (och Oliver) var mycket vänlig att honom. Maten var nyskapande och bra. De har en kreativ "spin på pasta och på en kyckling och ris maträtt. Vi skulle älska att komma tillbaka en annan säsong för se annat är på menyn. De kan göra via kosten boende och servitören kontrollerade alla av restriktionerna i början av de måltiden. En annan rekommendation till restaurangen - - alla rätter av samma kurs måste presenteras för varje person gör vid SAMMA GÅNG. Samma kursen skulle tjänas ganska sporadiskt. Detta är inte betyg för maten. Måste säga deras hungrig marknadsföring är ganska framgångsrik. Den online bokning system är ett skämt. Det sade vi kommer att få ett svar inom 48 timmar. Men, fick inget. I bekräftelsen kom efter en vecka. Fick inte kontrollerade e-ständigt eftersom jag trodde det var inga tabell finns tillgänglig. Därmed Missade sin deposition tidsfristen, och den bord var borta. Använt 5 e-postkonto (mitt och min man's) för att boka reservation, men bara fick ett svar. Tror de valde e-att svara? Har ätit på många Michelin restauranger i U. S. / Asien/ Europa. Aldrig upplevt detta slags hemskt bokningsupplevelse. Det finns så många trevlig restaurang i världen. Definitivt inte värt de tid av att förspilla.

Tyvärr kan jag inte berätta mycket om maten som serveras på råa. . . Eftersom min fru och jag var avvisade men våra bokning var bekräftad av e - post! ! Eftersom de flesta av er redan har prövat, online bokning systemet fungerar inte sviker dig se de tillgängliga datum så man måste ta gissa i mörkret. Det är irriterande och bara som syfter är att tillverka exklusivitet, I hate this känslan av att ha att be om att få välkomna men min fru ville verkligen försöka denna restaurang. . .
