Das war ein gelungener Abend im Ahlmanns: sehr aufmerksames, freundliches und kompetentes Personal und tolle Speisen, die so schön präsentiert wurden, dass man sie kaum zerstören mochte. Das Essen war wirklich eine Klasse für sich! Ich finde, dass die Fotos für sich sprechen. Besonders hervorzuheben: neben der tollen Weinbegleitung gab es auch eine alkoholfreie Variante, die passend zu den Gängen angeboten wurde (für mich ein zusätzliches Highlight!). Insgesamt ein stimmiges Konzept und mit Sicherheit die schönste Möglichkeit in Kiel gut zu essen.

It was a successful evening at Ahlmanns: very attentive, friendly and competent staff and great food that was presented so beautifully that you hardly wanted to destroy it. The food was really in a class of its own! I think the photos speak for themselves. Particularly noteworthy: in addition to the great wine accompaniment, there was also an alcohol-free version that was offered to match the courses (an additional highlight for me!). Overall, a harmonious concept and certainly the best way to eat well in Kiel.

Ausgezeichnete Gourmet-Küche für den Einstieg und jeden Tag mit sehr sympathischem Team!

Wir hatten einen super Abend im Ahlmanns. Das Lokal ist modern schlicht mit Auge fürs Detail eingerichtet und sehr gemütlich.
Absolut hervorzuheben ist das tolle Team, welches eine gleichberechtigte Struktur verkörpert. Nicht nur ist das ganze Team präsent am Gast, der Chefkoch ist sich auch nicht zu schade einmal das Tablett für seine Kollegen zu halten, damit diese den Gang annoncieren können. Insgesamt ist das Team sehr jung, lässt aber dennoch keinerlei Professionalität vermissen und stellt sich sehr gut auf die Gäste ein. Hier haben wir uns direkt zuhause gefühlt.
Die Gerichte sind bodenständig und verkörpern Gourmet-Küche ohne abgehobene Attitüde. Es werden grundsätzlich gelernte Geschmäcker, wie "Birne, Bohne, Speck" zeitgemäß interpretiert und perfekt auf den Punkt gebracht. Der geübte Gourmet mag kulinarische Ausrufezeichen vermissen, Ziel scheint im Ahlmanns eher bodenständige Kulinarik perfekt darzubieten und so auf ein neues Level zu heben. Dies macht es aus meiner Sicht ideal als "Einstiegs-Gourmettempel" und als regelmäßiges Erlebnis. Die Gerichte sind unkompliziert zu verstehen und dürften nahezu jeden abholen können.
Gleichzeitig sind die Gerichte pointiert genug, um ein bleibendes Geschmackserlebnis zu produzieren. Auch 1,5 Wochen nach meinem Besuch ist mir etwa der Seeteufel im Pancetta mit Birne und Speck noch voll präsent. Auch der Grüne Apfel mit Süßholz-Creme liegt noch auf der Zunge. Andere Gerichte, wie die Steinpilze auf Spinatwaffel mit Ziegenkäse, bleiben bei mir weniger mit facettenreichem Geschmacksbild als mehr als wohlige Umami-Gesamtheit in Erinnerung.
Die Getränkebegleitung zu sehr fairen Preisen (ca. 10€ pro 0,1l Glas) wird Gang-weise empfohlen und beinhaltet neben einer alkoholischen Empfehlung stets auch eine alkoholfreie, meist selbst komponierte, Variante. Dabei ist die, regelmäßig auf Teebasis arrangierte, alkoholfreie Variante eine gleichwertige Wahl und wird mit viel Herzblut ausgewählt und hergestellt.

Ich möchte mich noch einmal für den rundum gelungenen Abend bedanken, an den ich noch viele Male gerne zurückdenken werde. Macht bitte genau so weiter und behaltet eure Bodenständigkeit, Bescheidenheit ("nur Blumenkohl") und Freude am Beruf, um die Gourmet-Küche auch weiter greifbar und für jeden als wertvolles Erlebnis wahrnehmbar zu gestalten.

Excellent gourmet cuisine for starters and every day with a very friendly team!

We had a great evening at Ahlmanns. The restaurant is furnished in a modern, simple manner with an eye for detail and is very cozy.
What is absolutely worth highlighting is the great team, which embodies an equal structure. Not only is the entire team present with the guest, the head chef is also not above holding the tray for his colleagues so that they can announce the course. Overall, the team is very young, but does not lack any professionalism and adapts very well to the guests. We felt right at home here.
The dishes are down-to-earth and embody gourmet cuisine without any aloof attitude. Learned flavors such as “pear, bean, bacon” are interpreted in a contemporary way and perfectly brought to the point. The experienced gourmet may miss culinary exclamation marks, but the goal at Ahlmanns seems to be to perfectly present more down-to-earth cuisine and thus take it to a new level. In my opinion, this makes it ideal as an “introductory gourmet temple” and as a regular experience. The dishes are easy to understand and should be suitable for almost everyone.
At the same time, the dishes are spicy enough to create a lasting taste experience. Even 1.5 weeks after my visit, the monkfish in pancetta with pear and bacon is still fully present in my mind. The green apple with licorice cream is also still on the tongue. Other dishes, such as the porcini mushrooms on a spinach waffle with goat cheese, remain in my memory less as a multi-faceted taste and more as a pleasant umami whole.
The beverage accompaniment at very fair prices (approx. 10€ per 0.1l glass) is recommended per course and, in addition to an alcoholic recommendation, always also includes a non-alcoholic, usually self-composed, version. The alcohol-free version, which is regularly made with a tea base, is an equally good choice and is selected and produced with a lot of passion.

I would like to thank you again for the thoroughly successful evening, which I will look back on many times. Please continue in the same way and keep your down-to-earth attitude, modesty ("only cauliflower") and joy in your job in order to continue to make gourmet cuisine tangible and a valuable experience for everyone.
