As a customer/ food lover, who has dined in many countries and experiences with fine dining, this particular experience is not up to my standard.

Due to my very recent visit, I have made a reservation for a dinner menu for two, and we were arranged in a private room.
At first, couple of dishes was served in a regular pace, then we waited 20+ mins in the middle of the course for the next dish to arrive, there was no communication anyhow of when the next dish arrives as the waiter opened the door, clear the table and left.
Then, so after the next dish finally came and finally to the main course. I was shocked when I saw the main course, it was only two pieces of Mackerel aside with bowl of rice, miso soup and some pickles.
It was two pieces of mackerel filled with fish bones!
Personally, I believe with Michelin one star, they could be more considerate of the food itself, I came here for the fully prepared meal and not to pick fish bones for the main course after I have sat for 2hrs at that point, let alone the portion size.
I came to the restaurant because restaurant newly opened and have just got their one star, but I’m very disappointed to say it did not meet my expectation and I can only speak for what I have experienced.

Just want to add, I’m fine with some fish that has some fish bones in it, but certainly not what you see in the photo that were thin and small.

Thank you Chef Matsumoto-san for preparing a very memorable birthday lunch. Every dish was well thought out from taste to display. Ingredients were fresh and portions were hearty. Service was thoughtful and friendly.  Very special place and big thumbs up!

京都北の住宅街にある小さなカウンター割烹。囲炉裏を使った薪火調理が映えるし食材もいきなり伊勢海老でダイナミック、かつ大半の料理を目の前で仕上げていき魅せる技術を知っており世界屈指のプレゼン力。

料理自体はシンプルながら裏には最上級の食材と卓越した技術があることを感じる皿ばかり。少し全体的に味が濃い目な気がしたが当日はお酒持ち込みの常連さんが多かったので意図的かも。もう一度行って確かめたい。

A small counter kappo restaurant located in a residential area in northern Kyoto. His wood-fired cooking in an irori hearth stands out, and the ingredients are dynamic, including spiny lobster. He knows how to make most of the dishes right in front of your eyes, and has one of the best presentation skills in the world.

Although the dishes themselves are simple, you can feel that behind the scenes there are top quality ingredients and outstanding techniques. I felt that the overall flavor was a bit strong, but on that day there were many regulars who brought their own alcohol, so that may have been intentional. I want to go there again and check it out.

和久傳で長年料理長を務めた松本進也氏が独立して開いたお店。あっという間に予約困難に。
お料理、お酒、器、しつらえ、いずれも素晴らしく、言うことありません。また、お料理のボリュームもかなりたっぷりです。最初から最後まで満足度が高いと思います。
こちらの最大の見せ場は、カウンター奥にある焼き場でしょう。串に刺した食材を囲炉裏のように縦に並べ、炭火で一気に焼き上げます。お魚ももちろん、たいてい炭焼きのお肉も供されます。
夜は本当にお腹いっぱいになるので、少し量が控えめの昼でも良いのですが、昼の場合も3時間近くかかるので、そこは注意が必要かも。昼は12時、夜は18時の一斉スタートです。

This restaurant was opened independently by Shinya Matsumoto, who served as the head chef at Wakuden for many years. Reservations quickly become difficult.
The food, alcohol, tableware, and preparation were all wonderful, and I have nothing to say. Also, the amount of food is quite generous. I think you will be very satisfied from beginning to end.
The biggest highlight here is probably the grilling area behind the counter. The ingredients are placed on skewers vertically like a hearth and grilled all at once over charcoal. Of course, fish is served, but charcoal-grilled meat is also often served.
It really fills you up at night, so you can eat a little less in the daytime, but it takes about 3 hours to eat it in the daytime, so you may need to be careful about that. The daytime starts at 12:00 and the evening starts at 18:00.
