１月下旬、お墓参りのついでで家族でお昼に寄りました。
季節的に蟹をメインにしたコースがあったので、京都に来たんだし、春に就職した子供の就職祝いもしてなかったし、たまには贅沢もいいかということで選んでみましたが、結論としては大正解でした。
素人の自分が語るのはおこがましいけど、最初の一口で感じた衝撃は、外食で許されるギリギリの味の薄さ。「ええっ、こんなに薄い味付けなのに、なんておいしいんだ」。ネタばれで申し訳ないけど、この最初の一口の衝撃は、あれから１ヶ月経っても忘れられない。
食事が進むにつれ薄い味付けに馴染んでくると、最後まで延々と美味しいお料理が続きます。蟹も当たり前ですが、美味でした。
食事は大きなカウンターのあるお部屋で、お庭には楓の木もあって特に紅葉の季節は素晴らしいようです。個人的には、新緑の楓も自分は好きですが。
大将は、銀座でやっていたけど京都に戻ってこられて、でも開業したらすぐにコロナで大変だったとか、気さくな感じで、時間的に手が空いていたのか道路まで出て見送ってもらいました。
濃い味が好きな方には向かないかもですが、自分達にはすごくあってました。また京都に行くことがあれば行ってみたいお店です。

In late January, my family and I stopped by for lunch after visiting a grave.
There was a seasonal course that featured crab as the main dish, so I chose it because I came to Kyoto and I wasn't celebrating my son's job in the spring, so I thought it would be nice to have a splurge once in a while, and in the end it was a great choice.
It may be presumptuous of me to say this as an amateur, but the shock I felt at the first bite was that the taste was just as weak as can be tolerated when eating out. "Wow, it's so delicious even though it has such a light seasoning." Sorry for the spoiler, but I still can't forget the shock of that first bite, even a month later.
As the meal progresses, you get used to the light seasoning, and the delicious dishes continue until the end. Of course the crab was also delicious.
Meals are served in a room with a large counter, and there is a maple tree in the garden, which is especially beautiful during the fall foliage season. Personally, I also like fresh green maple.
The general manager was working in Ginza, but came back to Kyoto, but soon after opening, it was difficult due to the coronavirus.He was friendly, and perhaps because he had free time, he came out to the street to see me off.
It might not be suitable for people who like strong flavors, but it was perfect for us. This is a shop I would like to visit if I ever go to Kyoto again.

味、食材、サービス、お値段、窓から見えるお庭、どれも素晴らしかったです！
人に教えたいような、あまり知られて欲しくないような（笑）、そんな気持ちになるくらい素敵なお店でした。
場所が繁華街から離れているので、タクシー移動になっちゃうのがやや面倒かな、と思いますが、逆にそこが隠れ家的であり良くもあります。

また京都に行った時には是非再訪したいです。

It was such a wonderful shop that I felt like I wanted to tell people about it, but I didn't want them to know much about it (lol).
Since the location is far from the downtown area, I think it would be a bit troublesome to have to take a taxi, but on the other hand, it's a hidden gem and a good thing.

I would definitely like to visit again when I go to Kyoto again.

ひっそりと佇んでいます
周りの殆どが女子大の敷地なので
夜の静寂が更に雰囲気を高めてくれます

この日は車での訪問
せっかくなので以前から行きたかった
京都国立博物館の京の国宝展を観に行ってから伺わせていただきましたので頭の中は✨日本の美✨一色
その余韻に浸りながら…こんなに素敵なお店で
夕食をいただけて本当に幸せな一日になりました

「これを見せたかったんだ」と仰る主催者様が
ハウルのように思えてしまったのは私だけでしょうか

樽の中で元気に泳いでいた稚鮎
塩は極少量で鮎本来の味を楽しむスタイル
蓼酢もありましたが、そのままパクリ
ゆっくり丁寧に丁寧に形にも拘って
焼き上げてくださった鮎達は
まるで泳いでいるかのような形を表現した
芸術品とも言えます
2尾いただけたので2尾目は蓼酢で爽やかに♡

私は酢の物大好きなので
コレくらいキリリと酢が立っていても無問題ですが
苦手な方にはもしかしたら強いかもしれません

The nearby Toyokoku Mausoleum parking lot is also available for general use.
You can park there (for a fee)

大将は「美山荘」ご出身とのことです

日本家屋を改装し、玄関から入って靴を脱いで上がるため、家に帰ったような落ち着いた気持ちになります
カウンター10席とのことですが、案内されたお部屋が3席のカウンターだったためまた別のお部屋に席があるのだと思います

カウンター席から調理場で作業される大将のさらに奥には、美しい紅葉した中庭が見えました

コースの18,000円と25,000円はお料理に使う食材が変わるとのことで、品数はそんなに変わらないそうです

お出汁が香り高くトッピングのウニも美味しかったです

セイコ蟹（北陸では香箱カニ）です
程よい塩加減でゆでられており、スダチを絞るのがたまりません

◇八寸
これが一番の楽しみでした
煮揚げした海老芋やもろこ、京都に行ったら絶対食べたいサバの棒寿司に自家製のカラスミなどどれも美味しかったです
松に刺さったむかごや銀杏も可愛らしかったです

◇刺身
本まぐろ、氷見ぶりに鯛（たぶん）
どれも一番刺身が美味しく感じる温度でした
文句なしのお刺身です、特に氷見ぶりはシーズンになったら一度は食べたいと思っていたので嬉しかったです

醤油も出てきますが、個人的には本マグロも氷見ぶりも、塩×ワサビ×スダチで食べるのが好みでした

◇椀物
昆布や魚介を感じる出汁がとても美味しいです
柚子の香りもいいアクセントでほっこりします
出汁を吸った大根に、甘鯛（←たぶん）の甘みある身が美味しかったです

◇焼き物
幽庵焼きです
スダチでさっぱり美味しく頂きました

◇煮物
使用するお出汁が美味しいのは言うまでもありません
蓮根の蓮蒸を揚げた一品が美味しかったです

◇ご飯（お漬物、いくら、なめこ赤出汁、ちりめん山椒）
「セリの炊き込みご飯」セリの香りが良いです、ちりめん山椒と共に香り高く頂きました

「セイコ蟹と炊き込みご飯」人数分のカニが入っており、テンションが上がります、こちらはいくらと共に頂きました

お米は炊き立ては若干柔らかいですが、時間がたつと固めに炊かれていることが分かり、お米自体の甘みも強いことが分かります

◇水菓子とお抹茶
とても大きな柿です、熟し具合も最高でした

お汁粉は粒入りで、炭で焼いたお餅が入っています、甘さも柿に負けないぐらいですが程よくお抹茶とよく合いました

お抹茶は大将が頃合いを見て点てて下さいます

【感想】
店内やテーブルは白で統一されており、明るく清潔で居心地のいい空間でした
靴を脱ぐということもあり、ずっとお店にいたくなるような空間でした

大将と女将さんとも観光のことや、気になるお料理の調理法までお話下さりとても楽しかったです

また時期を変えて伺いたいと思いました
全て美味しかったです

You can enjoy simple and carefully prepared straight Japanese food.
The general is said to be from Miyamasou.

The Japanese house has been renovated, and you enter through the front door and take off your shoes before going up, so you will feel as calm as coming home.
It says there are 10 seats at the counter, but the room I was shown to was a counter with 3 seats, so I think there are seats in another room.

From my seat at the counter, I could see the courtyard with beautiful autumn leaves beyond the chef working in the kitchen.

For the 18,000 yen and 25,000 yen courses, the ingredients used for the dishes will change, but the number of dishes will not change that much.

A yuzu container contains dashi bean paste, milt, sea urchin, and green vegetables.
The soup stock was fragrant and the sea urchin topping was delicious.

◇Crab side
Seiko crab (Kobako crab in Hokuriku)
Boiled with just the right amount of salt, you won't be able to resist squeezing the sudachi.

◇Hassun
This was the most fun
Everything was delicious, including the boiled and fried shrimp and moroko, the mackerel stick sushi that you must try when you go to Kyoto, and the homemade mullet roe.
The Mukago and Ginkgo trees stuck in the pine trees were also cute.

◇Sashimi
Bluefin tuna, sea bream for the first time in Himi (probably)
All of them were at a temperature that made the sashimi taste the most delicious.
The sashimi was perfect, and I was especially happy because I had always wanted to eat Himiburi at least once when it was in season.

Soy sauce is also served, but I personally prefer to eat bluefin tuna and Himiburi with salt, wasabi, and sudachi.

◇Rice bowl
The soup stock is very delicious with hints of kelp and seafood.
The scent of yuzu is a nice accent and makes you feel warm.
The sweet flesh of the sweet sea bream (←maybe) was delicious with the daikon radish soaked in the soup stock.

It's Yuan-yaki
It was refreshing and delicious with Sudachi.

◇Simmered food
It goes without saying that the soup stock we use is delicious.
The fried lotus root dish was delicious.

◇Rice (pickles, salmon roe, nameko red soup, chirimen sansho)
``Rice cooked with Japanese parsley'' The aroma of Japanese Japanese parsley is very good.It was served with chirimen and Japanese pepper.

``Seiko crab and cooked rice'' Contains crab for the number of people, which will get you excited.I had this with salmon roe.

The rice is a little soft when freshly cooked, but as time passes, it becomes firmer and the rice itself becomes more sweet.

◇Mizu sweets and matcha
It's a very large persimmon, and it was perfectly ripe.

The shiruko comes in grains and contains charcoal-grilled mochi.It was as sweet as a persimmon, but went well with the matcha.

The chef will prepare the matcha at the appropriate time.

The interior and tables were unified in white, creating a bright, clean, and comfortable space.
It was a space that made you want to stay in the store forever, as you had to take off your shoes.

I had a lot of fun talking to the owner and landlady about sightseeing and how to prepare the dishes that I was interested in.

I would like to visit again at a different time.
