オーナーの中尾雄三氏は、長崎出身。
北陸や京都の旅館、祇園の割烹で腕を磨き、2016年に独立。フランス人画家のミレーにちなむ店名には、「実」りある食材を、「伶」人のように仕事をするという想いが込められているそうです。

「実伶」の魅力は、なんといってもその料理の繊細さ。
アラカルトで好きなものを選べるというスタイルも嬉しいところ。
メニューも豊富で、何を選ぼうか迷う時間すら楽しい！！
季節の食材を使った一品料理がたくさん！
何を食べても抜群に美味しく、素材の良さを最大限に引き出しているのが分かります。
一つひとつの料理が丁寧で繊細。
技術とセンスには脱帽です。

また、お会計も1人2万円台と、そのクオリティを考えると非常にリーズナブル。
超予約困難店にも引けを取らないのに、素晴らしいコスパ！！

アラカルトということもあって、かなり調理でお忙しそうでしたが、それでも合間にドリンクを気にかけてくれたり、話しかけてもらえるホスピタリティは流石です。

期待が大き過ぎました。
5時間蒸したという蒸し鮑がとても美味しかったのですが、
どの皿もポーションが小さめで、蒸し鮑の他は強烈な印象に残るものはあまりありませんでした。
鱧の落としを注文したところ、2切れだけ出てきてかなりびっくりしました。

スタッフは常連客と大声で話てばかりなので、放置が好きなタイプのお客様には良いでしょう。

客単価2万円の店のサービスとしてはかなり疑問が残りました。

今日は、京都が誇る料理屋「実伶（みれい）」に。季節の食材をあらゆるメニューに仕上げ、その数40以上。その全部が美味い…なんてことがあるんです、本当に。

入店時間や人数に関わらず、全てアラカルトで提供してくれて、小さなワガママも聞いてくれる。美味しくてつい笑、どんどん追加してしまうのだけど、提供時間の間が空き過ぎることもない。並大抵の仕込みや手際ではないのです。（ということが判る人だけが通えば良い。）

ここは料亭でも割烹でも、ましてや居酒屋でもない。これぞ「料理屋」と呼ぶべきストロング・スタイル。

そして、（値段のことを語るのは野暮ですが）あれだけ良い旬の食材と、それを活かした料理を提供しているにも関わらず、リーズナブル。近年ナゾに高騰する京都の料亭に行くお値段で、実伶さんに2回は行けちゃいます。

一人でも、デートでも、夫婦でも、会食でも。美味しいもの好きな方と行くには天国ですね。予約は少々取りにくいかも知れませんが、皆さんも機会があれば是非。

初めての訪問なのでコースにしましたが、ほとんどの方がアラカルトで楽しまれているようでした。白木のカウンター越しに目の前で次々にいろいろの料理が出来上がるのは見ていて楽しいですし、みんな食べたくなってしまいます。

お料理はいずれも納得のいくものでしたが、特に印象に残ったのは先付のよもぎ豆腐、このわたと一緒にいただくマグロ、黒鮑の酢の物など。季節の蟹も良い香り。とてもバランス良く、お値段も納得でしたが、次回はアラカルトでいろいろ迷ってみたいと思います。

若い大将をはじめ、お店のかたがもいい感じです。器も綺麗でした。

The seasonal crab also smells good. It was very well-balanced and the price was reasonable, but next time I'd like to try a la carte.

The staff of the shop, including the young manager, are also nice. The utensils were also beautiful.
