マスターとお話が好きな方は、きっとお気に召される場所だと思います。
日本のワビサビ、日本の良き文化が垣間見える場所です。歴史好きの方もおはなしがはずむとおもいます。
味についても、素朴な味に塩や醤油だけでなく、元来日本に伝わるものを使って提供されています。

奈良県内にある、本格的な鮨屋です。大将も気さくな方で、お店の雰囲気は最高です。コースで15000円になりますが、コスパは最高です。季節が変われば、旬の物が出てくるのでシーズンに一回は来店したいです。大将の目利きに惚れました。ホンマご地租様でした。

This is an authentic sushi restaurant located in Nara Prefecture. The owner is friendly and the atmosphere of the shop is great. The course costs 15,000 yen, but the cost performance is the best. As the seasons change, new items become available, so I like to visit the store at least once a season. I fell in love with the general's discernment. It was a real land tax.

料理屋で修行してきた川島大将は大病を患い、見事に復活。
3年前に鮨屋をオープンし日々研究を重ね、ついに2022年奈良県版ミシュランで一つ星を獲得するというなんともドラマチックなストーリー。客あしらいも流石で温かくも居心地の空間がある。

赤酢、塩、きび砂糖を使用し硬めに炊かれたシャリにコクを持たせ、関西に合わせてやや甘めに味付けされている。

魚は養殖物ではなく天然に拘り、適正期間寝かせることによる旨味の増幅、タネに対しての仕事とカウンターの鮨屋が少ない奈良県においてもこの様な手の込んだ本格的な握り鮨がいただける事を嬉しく思います。

にしても握りは関西で馴染みの薄い小肌からスタートしたのには驚いた。江戸前の華である小肌をトップバッター据えるということに意識の高さを感じずにはいられない。

鮪、雲丹などの王道もラインナップを飾る一方、味噌チーズなどのつまみなどでも奈良という土地を感じさせる。酒も奈良に限らず全国の銘柄をバランス良く置き、県内、県外どちらの人も楽しめる様になっている。
そうか、まだ3年。ここからさらに奈良を代表する唯一無二の鮨屋になっていくことだと思います。

The sushi rice is cooked hard using red vinegar, salt, and cane sugar to give it a rich flavor, and is seasoned slightly sweetly to match the Kansai region.

The fish is natural rather than farmed, the flavor is amplified by aging the fish for an appropriate period of time, and even in Nara Prefecture, where there are few sushi restaurants with counters, we are able to offer elaborate and authentic nigiri sushi. I am very happy.

However, I was surprised that the nigiri started from the small skin, which is not familiar in the Kansai region. I can't help but feel that there is a high level of awareness in choosing Kohada, the flower of the Edomae era, as the top batter.

While classic dishes such as tuna and sea urchin adorn the lineup, snacks such as miso cheese also evoke a sense of Nara. The sake selection is well-balanced with brands from all over the country, not just Nara, so people from both within and outside the prefecture can enjoy it.
Yeah, it's only been 3 years. From here, I think we will continue to become the one and only sushi restaurant that represents Nara.

カウンターで頂きました。隅々まで綺麗にされているお店でした。大将の料理へのこだわりがお店のその雰囲気から分かりました。
コースになっていたのでこちらは出されるお料理を頂きます。料理の説明を受けながら頂いていきます。魚の種類により冷蔵庫で旨味が増すまで調整されているようです。ネタの一つ一つがこだわりの状態で出されていました。
大将の人柄もよく、リラックスして食べられるお店だと思います。ごちそうさまでした、ありがとうございます^ ^

I got it at the counter. It was a shop that was kept clean in every corner. I could tell from the restaurant's atmosphere that the owner was particular about his food.
