奈良県内にある、本格的な鮨屋です。大将も気さくな方で、お店の雰囲気は最高です。コースで15000円になりますが、コスパは最高です。季節が変われば、旬の物が出てくるのでシーズンに一回は来店したいです。大将の目利きに惚れました。ホンマご地租様でした。

This is an authentic sushi restaurant located in Nara Prefecture. The owner is friendly and the atmosphere of the shop is great. The course costs 15,000 yen, but the cost performance is the best. As the seasons change, new items become available, so I like to visit the store at least once a season. I fell in love with the general's discernment. It was a real land tax.

料理屋で修行してきた川島大将は大病を患い、見事に復活。
3年前に鮨屋をオープンし日々研究を重ね、ついに2022年奈良県版ミシュランで一つ星を獲得するというなんともドラマチックなストーリー。客あしらいも流石で温かくも居心地の空間がある。

赤酢、塩、きび砂糖を使用し硬めに炊かれたシャリにコクを持たせ、関西に合わせてやや甘めに味付けされている。

魚は養殖物ではなく天然に拘り、適正期間寝かせることによる旨味の増幅、タネに対しての仕事とカウンターの鮨屋が少ない奈良県においてもこの様な手の込んだ本格的な握り鮨がいただける事を嬉しく思います。

にしても握りは関西で馴染みの薄い小肌からスタートしたのには驚いた。江戸前の華である小肌をトップバッター据えるということに意識の高さを感じずにはいられない。

鮪、雲丹などの王道もラインナップを飾る一方、味噌チーズなどのつまみなどでも奈良という土地を感じさせる。酒も奈良に限らず全国の銘柄をバランス良く置き、県内、県外どちらの人も楽しめる様になっている。
そうか、まだ3年。ここからさらに奈良を代表する唯一無二の鮨屋になっていくことだと思います。

カウンターで頂きました。隅々まで綺麗にされているお店でした。大将の料理へのこだわりがお店のその雰囲気から分かりました。
コースになっていたのでこちらは出されるお料理を頂きます。料理の説明を受けながら頂いていきます。魚の種類により冷蔵庫で旨味が増すまで調整されているようです。ネタの一つ一つがこだわりの状態で出されていました。
大将の人柄もよく、リラックスして食べられるお店だと思います。ごちそうさまでした、ありがとうございます^ ^
