2022年6月に伺いました。
今更ながら備忘録です。

ランチでいただきました ！
どれも素材の良さと丁寧な調理が際立つ絶品揃いでした。
・先付：胡麻豆腐は、優しい胡麻の風味とジュレが絶妙なバランス。
・煮物椀：スズキともずくのおすましは、鰹だしとスズキの旨味が引き立つ一品。
・お造り：明石のアマガレイは、弾力と甘みが秀逸。
・焼物：鮎の姿焼きは、そのままでも美味しく、たでおろしで爽やかな変化を楽しめます。
・揚げ物：トウモロコシの揚げ物はサクサク食感で甘みが際立つ逸品。
・炊き合わせ：丸茄子の味噌田楽は、甘みとマイルドな味噌が抜群の相性。
・ご飯：土鍋炊きたてご飯にちりめん山椒、ぬか漬け、お味噌汁がほっこり安らぐ味わい。

I had it for lunch!
All of the dishes were exquisite, with quality ingredients and careful preparation.
・Appetizer: Sesame tofu has a perfect balance of gentle sesame flavor and jelly.
・Simmered dish: Sea bass and tomozuku osumashi is a dish that brings out the flavor of the bonito stock and sea bass.
・Sashimi: Akashi flounder has excellent elasticity and sweetness.
- Grilled Ayu: Grilled sweetfish is delicious as is, and you can enjoy a refreshing change by grating it.
・Fried food: Fried corn is a special dish with a crispy texture and outstanding sweetness.
- Stir-cooked dish: Miso Dengaku with round eggplants is a perfect combination of sweetness and mild miso.
・Rice: Freshly cooked rice in an earthenware pot, chirimen sansho, rice bran pickles, and miso soup have a soothing and soothing taste.
・Sweetness: The sansho ice cream had a surprising taste, and the refreshing sweetness of the sansho pepper was fresh.

I enjoyed the harmony of each dish with the bowl and was very satisfied!

飛鳥観光を兼ねてミシュラン一つ星ランチを堪能しました♪

◎内装
季節のお花が飾られた洗練された空間です✨(お花は大将が摘んできたのだとか！)
広々としたカウンター席が、落ち着きます。
大将が料理を作っているのを眺めながら食事を楽むことができました。
記念日、会食、奈良観光で大和食材を活かした高級ランチが食べたい時などにオススメです☺️

京野菜しかり関西の食材は味に深みがあり、大好きです🥹❤️

1品に使う食材は2つ程度に留めているそうです。
そうとは思えないほど味に深みがあるので、どんなに修行を積まれたのだろう…と大将に尊敬です✨
例えば、魚を焼く時は、油を一切使わず魚自身に含まれる脂でじっくり時間をかけて焼くんだとか💡
素揚げしたようなカリッと食感で、びっくりしました！❤
（こういう話を大将とできるのも贅沢な時間って感じで嬉しかったです☺️）

土鍋で炊き上げたご飯は、佃煮と一緒にいただきます。
お代わりOKなので、たくさん食べちゃいました←
白米ってこんなに美味しいんだなと感動し、日本人でよかったと思いました✌️

東京で食べたら確実に1万円を越えるだろうという繊細で丁寧な日本料理！
奈良旅行に行く際に、またお邪魔したいです♪

※コースのボリュームは、たくさん食べる方には物足りなさを感じるかもしれません💦
とはいえ、観光をするのであれば、おなか一杯になりすぎても大変なので、ちょうど良いかなって感じです🙆‍♀️

◎Interior
It's a sophisticated space decorated with seasonal flowers ✨ (They say the flowers were picked by the owner!)
The spacious counter seats are relaxing.
I was able to enjoy my meal while watching the chef prepare the food.
Recommended for anniversaries, dinner parties, and when you want to enjoy a high-quality lunch made with Yamato ingredients while sightseeing in Nara ☺️

◎Cooking
Japanese cuisine that makes use of Yamato ingredients✨
Kyoto Yasai Shikari Kansai ingredients have a deep flavor and I love them 🥹❤️

It seems that only two ingredients are used for each dish.
The flavor is so deep that it's hard to believe, so I have a lot of respect for the chef.
For example, when grilling fish, they don't use any oil at all, instead cooking it slowly using the fat contained in the fish itself💡
I was surprised at how crunchy the texture was, just like it was fried! ❤
(It felt like a luxurious time to be able to talk like this with the general, so I was happy ☺️)

Rice cooked in a clay pot is served with tsukudani.
Refills are OK, so I ate a lot ←
I was impressed by how delicious white rice was and was glad I was Japanese ✌️

Delicate and careful Japanese cuisine that would definitely cost over 10,000 yen if you tried it in Tokyo!
I would like to visit you again when I go on a trip to Nara♪

*The volume of the course may be unsatisfactory for those who eat a lot💦
However, if you're going sightseeing, it's hard to get too full, so I think it's just right 🙆‍♀️

2024/3/28に誘っていただいてランチタイムに伺いました。
白木のカウンターに10席のみ。
あちこちのあしらいが洗練されていて
『THE・日本料理店』という感じ。
お料理も一品一品が季節に合わせて凝っていて
出汁・素材の味が活きていてとても美味しいし
〆のご飯なんておかわりしてしまった(笑)
それぞれお料理に合った器も素敵でした。
大将が気さくな方でお話も穏やかで
また是非行ってみたいです。
(飲めるのが私一人だったので)
ワインを一人で1本飲んだのですが、
とても忙しいのに、飲むタイミングを見て
お弟子さんがサーブして下さって
(えっ！そんな事までしてくださるの？)と
感動しました。

知人の飲食店オーナー兼料理人の方に連れて来てもらう。
桜井市には、なかなか来ることが無いので、新たな店を知るのは助かります(-人-)

店構えからは、目がけて来ないと行くことは無い感じ。
お店は、カウンター席のみ。

店主は、穏やかそうな感じで、ユーモアもあり。

料理は、どれも手の込んだ感じなのだが、一緒に行った方と話しながらで、味を確かめ楽しみながら食べれず記憶に残らずで😥
また自分で予約して、再挑戦しようと思う☝️

料理の中で、『さえずり』
クジラの舌が出てきたのだが、最初何の肉なのか分からず、
歯ごたえのある、ベーコン!?
味付けなのか、旨味!?甘み!?あるけど気にせず食べてたら、店主が自分の舌を指差して、
『さえずり』ですと😳
私は、『さえずり』を知らなくて、ﾎﾟｶ~ﾝとしつつスマホで調べると鯨の舌でしたf(^_^;
もっと、味わって食べれば良かったと後悔しつつ話しの種になりました。

また、必ず来ようと思うが、さて誰と行こうかな(-人-;)

All of the dishes were elaborate, but I didn't remember them because I couldn't enjoy them while talking with the people I was with and trying out the flavors.😥
I think I'll make a reservation myself and try again ☝️

A whale tongue came out, but at first I didn't know what kind of meat it was.
Chewy bacon!?
Is it the seasoning? Umami!? Sweetness!? It's there, but as I was eating without worrying about it, the owner pointed at my tongue and said,
“Twitter”😳
I didn't know what "twitter" was, so I looked it up on my smartphone and found it was a whale's tongue f(^_^;
It became a topic of discussion, regretting that I should have tasted it more.
