本日は新富町の美幸さんを訪問してきました。
名店はしもとさんのお鮨を10,000円でいただけるので、
しばらくは毎月訪問するルーティーンとさせていただきました(＞人＜;)

日本橋蛎殻町にある名店「すぎた」で12年間修行された橋本裕幸さんが、
31歳で独立して2014年12月に新富町に「鮨はしもと」をオープン。
2019年8月に同じ新富町のお店に移転。

その跡地に2022年6月2日に「鮨はしもと」の二番手である紺野隆さんが、
「鮨 美幸」としてお店を再オープンされたそうです。

紺野さんは久兵衛、銀座いわでも修行経験があるそうです。
久兵衛ということは神楽の望月大将の先輩にあたるのかと(・・?)
と思っていたら望月大将の後輩でした！！
望月さんのリール動画と紺野さんの証言で発覚しました！！
久兵衛さん繋がり恐るべし(　ﾟдﾟ)

「鮨 美幸」の由来は、
橋本裕幸さんのご両親のお名前から一文字いただいて命名されたそうです。

ランチはお鮨のみコースで10,000円。
ディナーはおつまみがついて22,000円。
共に税込でサービス料なし。

東京メトロ有楽町線の新富町駅で降車してお店に向かいます。
お店の前で待っていると近藤さんが暖簾を出してくれました。

お店に入ると紺野さんが丁寧に出迎えてくれました。
本日も満席ですね。これからもっと人気が出てくると思います！！

シャリ

ミツカンの特注酢にヨコ井の與兵衛をブレンドしているそうで、
ほんのり香る赤酢の塩梅がいいですね。
米は3種類の米をブレンドしておりモッチリした食感で甘みがあり、
少し強めの塩気が米の甘さを引き立てます！！

ガリ

ほんのりピンク色で色気のあるガリです。
甘口ですがしつこくなく最後にピリッと辛味がきます。
美味しくて本日は3回お代わりさせていただきました！！

コハダ

二枚漬けでたっぷりいただけました！！
旨味と酸味がたまらんです！！
やっぱり美幸さんのコハダはうんめえです！！

カンパチ

なんと20キロのカンパチを2週間寝かせあり、
見るからにしっとりして色気たっぷりエロエロです(//∇//)
大きめに切っつけて下を畳んで握ってくれました！！
これがネットリして脂が乗ってうんめえです！！
先月と同じくメッチャうまいカンパチです(๑˃̵ᴗ˂̵)

ブリ

こちらもでっかいですね！！
これもとろける旨味がたまらんです！！
脂も乗って最高にうまいっす(≧∀≦)

赤身

青森県は三厩の釣りのマグロだそうです。
アッサリした旨味がいいですね！！
釣りなのえムチムチした歯応えがたまらんです！！

ホッキガイ

今日もでっかいホッキガイです！！
プリプリで噛むほどに甘みが溢れます！！
貝の香りも最高です！！

中トロ

こちらは旨味が濃厚でたまらんです！！
釣りなので見た目がすごく美しいです。

肉厚プリプリでうんまいです！！
あたりネギの香りもステキですね。

サワラ

漬けにしてから皮目を炙ります。
トロトロな脂がたっぷりで最高です！！
漬けにしてあるので旨味が力強いですね。

プリプリで歯応えがあってあんまいです！！
スダチの香りもいいですね。

煮詰めは少しでアナゴの旨味を存分に楽しめます。

ネギトロをたっぷり巻いてくれました。
脂の旨味と長ネギの歯応えが最高です！！
海苔の歯応えと香りもいいですね！！

本日もシジミのお吸い物でした。
じっくり染み渡る美味しさにほっこり癒されます(^ ^)

ここで一通りと告げられ、
本日の追加分はキンメダイ、白子、スミイカ、
ハマグリ、メジマグロ、バフンウニ、巻物だったので、
今日は白子とメジマグロを注文しました( ◠‿◠ )

白子

醤油を塗ってからじっくり炙ります。
炙っている最中にポップコーンよろしくポンポン弾けておりました…
これが炙っているので香ばしくていいい香りです！！
すごく熱々トロトロうんめえです！！

メジマグロ

大きなシャリをすっぽり覆うくらい大きいです！！
口の中いっぱいに濃厚な旨味が溢れます！！
このメジマグロもうんめえです！！

本日もクオリティが高くて大きいネタに大満足です！！
本当に10,000円とは思えないコースです(๑˃̵ᴗ˂̵)

特にコハダとカンパチが最高に美味しかったです！！
追加で注文した熱々の白子にウットリしました(//∇//)

そしてやはり美幸さんのシャリは美味しいです！！
赤酢は控えめでモッチリしたお米から噛むほどに甘みが溢れます！！
なんと3種類のお米をブレンドしているそうです！！
特にマグロとの相性が最高ですd(^_^o)

日本酒もワインもどれも美味しかったです！！
本日は近藤さんおすすめのワインがメッチャ美味しかったです！！

Today I visited Miyuki in Shintomi Town.

Hiroyuki Hashimoto, who trained for 12 years at the famous restaurant "Sugita" in Kakigaracho, Nihonbashi,
At the age of 31, he became independent and opened "Sushi Hashimoto" in Shintomicho in December 2014.
In August 2019, we moved to the same store in Shintomicho.

On June 2, 2022, Mr. Takashi Konno, the second chef of “Sushi Hashimoto”, will be located on the site.
It seems that the restaurant has been reopened as ``Sushi Miyuki''.

It seems that Mr. Konno has experience training at Kyubei and Ginza Iwa.
I wonder if Kyubei is a senior to General Mochizuki of Kagura (...?)
I thought he was General Mochizuki's junior! !
It was discovered through Mochizuki's reel video and Konno's testimony! !
Kyubei-san is definitely connected (　ﾟдﾟ)

The origin of “Sushi Miyuki” is
It was named after one letter from Hiroyuki Hashimoto's parents' names.

Lunch is 10,000 yen for a sushi only course.
Dinner is 22,000 yen including snacks.
Both include tax and no service charge.

Get off at Shintomicho Station on the Tokyo Metro Yurakucho Line and head to the store.
As I was waiting in front of the store, Mr. Kondo brought out a noren curtain.

When I entered the store, Mr. Konno greeted me politely.
It's fully booked today as well. I think it will become more popular from now on! !

It seems that Yokoi's Yobei is blended with Mizkan's custom vinegar.
I like the slightly fragrant red vinegar seasoning.
The rice is a blend of three types of rice, and has a chewy texture and sweetness.
The slightly salty taste brings out the sweetness of the rice! !

Gari

It is a slightly pink and sexy garri.
It's sweet, but not overpowering, with a tangy spiciness at the end.
It was so delicious that I had to refill it 3 times today! !

Kohada

I had plenty of pickles! !

Amberjack
