去年の7月に永田町の「CHIUnE (チウネ)」さんを訪問してきました。
前からすごく気になっていたお店でしたが、
お料理のコースだけで55000円とすごいお値段で、
しかもOMAKASEからの予約が難しかったので訪問できない状態でした…
しかし、知り合いにご一緒にどうですかとお誘いをいただいたので二つ返事でOKしました(๑˃̵ᴗ˂̵)

初回訪問なのでちょいと調べてみました_φ(･_･

:古田 諭史シェフの経歴

1984年5月12日 岐阜生まれ。
父親が「開化亭」というカウンターの中華料理を営んでおり、
古田シェフは小学4年生から高校までアルバイトをしながら、
父親の姿に憧れて自身も料理人なる決意をした。
高校卒業後に東京の辻調理師専門学校に入学。
卒業後はイタリアンのお店に働いていたが、
2年後にフランス料理の世界に入った。
束縛されず自分の料理をやりたい気持ちがあり、
2009年2月24歳の時に岐阜市にて「Satoshi.F 」開業した。
しかし個室でタバコを吸おうとした客を注意したところ、
「こんな店2度と来るか！！俺の周りにも言うからな！！」と言われ、
岐阜のお客さんが来なくなってしまった。
岐阜以外から客を呼ぶにはどうすればよいか悩みながら、
どんどんシンプルに削ぎ落とすスタイルを確立させ、
28歳から29歳の時にようやくお店が回りだした。
岐阜で一通りやり切ってもっと色々な食材を使いたい想いがあり、
2016年12月に屋号をCHIUnEと改め東京・東銀座に移転した。
2021年8月には広尾に移転し、さらに2024年4月に永田町に移転した。

お店で大切にしていること

一番大切にしているは自分が美味しいと思う料理を、
美味しい状態でお客様に届けること。
これを徹頭徹尾作れるような環境にするため、
席は8席のみとし一斉スタートにしている。
また、常に清潔を意識して厨房や店内の掃除を徹底している。
営業時にも1回転目の後には必ず掃除を徹底しており、
2回転目のお客様に香りを残さないよう一度クリーンにしている。

店名の由来は自身のルーツである岐阜の方言で「棚田」を意味する「千畝(ちうね)」。
訪れる人の脳裏に残るようにという思いを込め、nだけを小文字にしたそうです。

有楽町線の永田町駅で降車してお店に向かいます。
歩いて5分ほどで到着です。

お店に入ると長い廊下があり奥には待ち合いスペースもありました。
中に入るとスタッフさんが丁寧に出迎えてくれました。

カウンターに座って古田シェフに挨拶させていただきました。
すごく物腰が柔らかくて笑顔がステキでした（╹◡╹）♡

本日はせっかくなのでペアリングをお願いしました。
なんと25000円です…これで合計80000円になりました(　ﾟдﾟ)
最初はシャンパンからですが、これがのっけからすごい！！
酸味、旨味、香りが最高です！！
この後も白ワインや赤ワインをいただきました！！

さあさあお任せコースのスタートです！！
究極の引き算の料理の実力とやらを見せていただきましょう！！

岐阜県郡上市和良川の鮎のスープ

熱々で鮎の濃厚な旨味と苦味が凝縮されております！！
決してしつこくなく純粋な鮎の旨味が身体に染み込んでいきます！！
ペアリングの黒ビールの苦味がまたよく合いますd(￣ ￣)

つぶ貝とビーフン

ビーフンはモチモチでつぶ貝はプリプリで食感が楽しいです！！
すごく優しい味で身体の毒が浄化されるような気分になりました！！
つぶ貝をビーフンと同じ細さに切る技術もすごいです(　ﾟдﾟ)

賀茂茄子

賀茂茄子をシンプルに焼いた一皿です。
周り焦げるまで火入れしており中はトロトロです！！
外は香ばしく中は熱々であんまいです！！
シンプルながら素材の味を存分に味わえる一皿です(//∇//)

ここでおしぼりを変えてくれました。
こういう気遣いもステキです！！

アオリイカのフリット

アオリイカは肉厚でモチモチで優しい旨味に癒されます。
フルーツトマトと毛蟹の冷製ソースがまたよく合います！！
フルーツトマトは甘くて毛蟹は優しい旨味でウットリします( ◠‿◠ )

チョリソー、茄子のピュレソースとオリーブオイル

薄く刻んだ生のマッシュルームの香りがすごいです！！
下手なトリュフより香りがステキです！！
チョリソーは肉肉しい歯応えと旨味が力強いです。
優しいナスのソースとピッタリでした(๑˃̵ᴗ˂̵)

コンソメスープ

蓋を開けるとサマートリュフの香りがブワッと広がります！！
コンソメはしっかりした旨味がありますがどこか優しいです。
一口飲むごとに五臓六腑に染み渡ります( ´ ▽ ` )

スズキの天ぷら

スズキは肉厚で脂が乗っておりますね！！
外はサクッと中はトロトロです！！
酢橘と蛤のソースがまた優しくて癒されます。
このソースはパンでソーセして全部いただきたかったです(● ˃̶͈̀ロ˂̶͈́)੭ꠥ⁾⁾

原木椎茸、卵黄、じゃがいもソース

古田シェフのスペシャリテのようです。
卵黄はすごく濃厚でジャガイモは香ばしくて甘いです！！
またこのシイタケが旨味と香りの余韻が長く、
優しい味がいつまでも口の中を満たしてくれました（╹◡╹）♡

鴨の炭火焼き

分厚いのですがすごく柔らかくてスッとナイフが通ります！！
中はすごくジューシーで優しい旨味と香りがステキです！！
ソースは赤酢、味醂、赤ワインなどが入っており、
濃厚ながらスッキリしていてカボチャの甘さとピッタリでした！！
こんな鴨料理は初めてです(￣◇￣;)

天城黒豚のマリネの炭火焼き

バラ肉を10日間漬け込んでいるので旨味がすんげえです！！
柔らかくて香りもいいですね。
これどんな調味料が入っているのでしょうか？
ちょっと市販の焼肉のタレっぽい感じもあります。
味は濃いめですがペロッと食べてしまいましたd(^_^o)

ここでまたおしぼりを変えてくれました。
さすがのサービスですねd(￣ ￣)

渡り蟹の素麺

餡かけで熱々です！！出汁が優しくて本当に癒されます！！
渡り蟹は身だけを使っているので優しい甘さがステキです。
これも身体に染み渡る美味しさです( ´ ▽ ` )

紹興酒アイス

紹興酒がほんのり香って最高ですね！！
甘みと風味は控えめでスッキリいただけました。

白茶

スッキリした香りと苦味が心地よかったです。
2杯ほどお代わりさせていただきました。

衝撃的な美味しさでした！！
正直ここまで感動するとは思っていなかったです(　ﾟдﾟ)
フレンチと日本料理を組み合わせたような、
どのジャンルにも当てはまらない料理でした（╹◡╹）♡

どの料理も素材の味を引き出していて、
すごく優しくて身体が喜ぶような味でした。

:Chef Satoshi Furuta's career history

Born May 12, 1984 in Gifu.
My father runs a counter Chinese restaurant called ``Kaikatei.''
Chef Furuta worked part-time from the 4th grade of elementary school to high school.
Admiring the image of his father, he decided to become a chef himself.
After graduating from high school, he entered Tsuji Culinary Arts College in Tokyo.
After graduating, I worked at an Italian restaurant,
Two years later he entered the world of French cuisine.
I have a desire to cook my own food without being constrained,
In February 2009, at the age of 24, he opened "Satoshi.F" in Gifu City.
However, when I warned a customer who tried to smoke in a private room,
"Are you going to come to a store like this again?! I'll tell everyone around me!!" he said.
Customers from Gifu stopped coming.
While wondering what to do to attract customers from outside Gifu,
Establishing a style that keeps it simple and stripped down,
When I was 28 to 29 years old, the store finally started to open.
I wanted to go all the way in Gifu and use more variety of ingredients.
In December 2016, the store name was changed to CHIUnE and moved to Higashi Ginza, Tokyo.
In August 2021, it moved to Hiroo, and in April 2024, it moved to Nagatacho.

What we value at our store

What I value most is cooking food that I think is delicious.
Deliver to customers in a delicious condition.
In order to create an environment where this can be done thoroughly,
There are only 8 seats available and the races start all at once.
In addition, we are always conscious of cleanliness and thoroughly clean the kitchen and store.
Even during business hours, we always thoroughly clean after the first rotation.
The products are cleaned once so that no scent remains for the second customers.

The origin of the store's name is ``Chiune'', which means ``rice terrace'' in the dialect of Gifu, where he has roots.
In order to leave a lasting impression on the minds of those who visit, they decided to make only the n letter lowercase.

Get off at Nagatacho Station on the Yurakucho Line and head to the store.
You can arrive in about 5 minutes on foot.

When you enter the store, there is a long hallway and a waiting area at the back.

I sat at the counter and greeted Chef Furuta.

The pork belly is marinated for 10 days, so the flavor is amazing! !
It's soft and smells nice.
What kind of seasoning does this contain?
