Excellent service! Just had the 7 course degustation menu, some hits and misses as with everything with personal preference.

Would have loved more Char on the squid, beets were too teeth cloying.

Would have also preferred have more tart/freshness/crisp in this mostly soft/tender/mushy affair. It’s definitely very nice to see how Asian ingredients and flavours are blended so seamlessly in their otherwise very western menu.

More people should dine here, although surrounded by the never ending rows of local delights.

I'll start with what I did like at ULV that I gave them the stars for: the beef tartare with the house made crisps was wonderful. The crisps were light and crunchy and the beef tartare flavorful. The combination was an absolute treat. The Bergamot and grapefruit dessert was excellent. The hazelnut sauce on the pasta was unique and I enjoyed the roasted nut flavor and creaminess. The sourdough bread was good sourdough bread but I think that's par for the course or it ought to be anyway.

The service was lovely and attentive but the wait staff definitely seemed to be getting impatient with us towards the end - I did ask for my dessert to be changed. To be fair I asked at the beginning of the meal if the dark chocolate dessert would be very bitter and I was assured it wouldn't be, except it was. They were nice enough about changing it but made the decision on my behalf to take out the icy granita from the replacement dessert because I said I was feeling cold. While thoughtful, I would have appreciated it if they had asked me before making the decision for me. I asked to have it, politely while apologizing profusely for the inconvenience, and they gave it to me but also seemed very frustrated.

Every thing else we ate though was unimpressive and disappointing. The broth was barely lukewarm and tasted like the store bought chicken broth that comes in a bottle. The charcoal grilled squid tasted bland and the dehydrated beetroot and kombhu were barely there. It tasted so unidimensional, it was an effort to finish it. The veal sweetbread was unappetizing - the meat was chewy and  the sauce sounded good on paper but didn't deliver on the varied elements of taste that it promised. And the pork main course was BORING! The "charcoal" Kombu was sweet and didn't really go well with the rest of the flavors but was also impossible to combine with the meat and the green beans - I should have asked for a spoon to combine the meat, the beans and the seaweed Kombu sheets...after cutting up the meat with the fork and knife that was given - honestly too arduous an endeavor for a very insipid main.

I see the pictures of the menu items posted by the people who have rated this place well and they look far more interesting than what we had  and I would hope tasted better.

I might go back to try the items on their a la carte menu.

What the cooking lacks in creativity, structure or craftsmanship, it makes up with bold, well-blended flavors.  The wagyu rib entree is exceptionally good (and refreshingly big!).  Friendly, ultra fast service.    Setting is a bit spartan and not that comfortable but the food makes up for it

Convenient online booking app. Friendly service. We ordered 4 cocktails, 5 apps, and the truffle pasta (secret menu) which came out to be around 5000ntd. The whiskey corn kombucha and beef tongue were my favourite.
