A gem! The former monastic stable block has been handsomely restored, the decor arresting and contemporary.  The food is imaginative and the wine pairing excellent and innovative.  The chef flirts with the range of flavours and brings out the best from the excellent ingredients which are what brought him to Pamiers 18 years ago. The husband and wife team  bring together the highest standards . I will be back this week! Truly, as the Michelin phrase has it, this is worth the detour. Probably a pilgrimage of its own, actually.

Called in for lunch yesterday. We didn't have a booking but were found a table and made to feel welcome.
Fantastic delicious food, friendly and efficient service.
