We are commenting based on the standard of Michelin 1 star caliber -

Service: the waiter asked us what we would like to drink. We said red wine and he just brought over a bottle without asking what we preferred. The explanation on the wine was vague and when we wanted to chat further about wine. He just said you can look at the bottle and left. It's odd that he left the bottle that would be served to other table with us and later just grabbed it without saying anything.
The waitress that brought us the food was not properly trained on setting up for each course.

Food: no flavor and bland. The chef tried to be creative but we thought multiple courses were served without tasting. There are multiple ingredients being mixed together but clashed instead of blending in.

It's definitely not the same level of Michelin 1 star that we experienced. A big disappointment on both food and service.

Went for lunch and chose the Nature menu.  The entire experience was superb and I recommend it without hesitation.

They were able to accommodate both gluten and lactose intolerances easily and I feel allowed for additional experimentation and creativity to come out as a result.

It is hard to pick any one course so I won't as they were all delicious. That said, even the in between moments were highlights, one being the ground up coffee granita; It has stuck with me: it was unique, flavorful, but also a wonderful palate cleanser between the main courses and dessert.

The service was great and while the atmosphere was less lively for lunch, it felt more intimate and as though we were lunching with a bunch of friends catching up.

Expectations are always high at a Michelin-starred restaurant and Saisons served a five-course "blind" menu that we thoroughly enjoyed. While most dishes - all well prepared - were quite traditional, the anchovies-studded fregola bowl provided a special pleasure.
The service is friendly and unstuffy, and we very much appreciated the work of the sommelier who found us great wine pairings with the various dishes. Note: please expand your selection of craft beers.

The food was good but lacked a bit of flavor compared to the efforts of other Michelin-starred restaurants I've been to. Also, no one explained the prices of the wines by the glass; we were served two glasses without being asked about our preferences or informed about the prices (we thought it was just a nice gesture). While the sommelier was excellent, he served us wines we didn't even order. The bathroom had ashes, smelled of cigarettes, and had no towels to dry your hands (perhaps they weren't replenished because we were the last seating). On the other hand, the open kitchen is interesting. I believe there are many details to consider for improvement: clarity in explaining the dishes, they made us wait a few minutes before leaving to give us the menu of what we ate. Considering what one pays, perhaps improvements in certain areas are expected since I left feeling a bit underwhelmed.

One of the best Michelin starred weekday lunch in terms of quality/price that we've tasted! The dishes were a marvelous mix of flavors and textures. Highly recommend!!
