Wir waren am 27.09. anlässlich meiner Geburtstagsfeier im A-La-Carte-Restaurant. Die Karte ist klein, übersichtlich und hat für jeden etwas dabei. Wir wurden sehr herzlich empfangen. Nach einem Apéritif entschieden wir uns für ein Pilzcarpaccio und Lachsforellentatar als Vorspeise. Ich empfand das Tartar etwas mild, der Pfiff fehlte irgendwie. Unglaublich aromatisch das Dillsträußchen (das meine ich vollkommen ernst, der war super-frisch). Die Radieschen und die Kürbiskerne gaben den nötigen -Biss. Insgesamt sehr gut durchkomponiert. Als Hauptgang nahm ich ein Rumpsteak, das mit ca. 250g ordentlich ausfiel. Geschmacklich tippe ich auf Südamerika (Uruguay?). Auch beim Kartoffelgratin fehlte mir etwas der Pfiff - aber das war auch gar nicht nötig, denn es gab eine unfassbar großartige Portweinsauce dazu. In der Ergänzung brauchte ich die Kräuterbutter gar nicht, so köstlich war die Kombination. Der Jahre alte Bordeaux passte wie die Faust aufs Auge. Nach einer Crème Catalán und einen Espresso ging es zum Abschluss an die Bar.

Was unbedingt hervorgehoben werden muss, ist die wunderbare freundliche Behandlung. Wir kamen wirklich in Jeans und T-Shirt, wir wurden empfangen, als wären wir Mitglieder der Familie. Wir haben uns rundum wohl gefühlt, es war ein toller Abend.

We were there on September 27th. on the occasion of my birthday party in the A La Carte restaurant. The menu is small, clear and has something for everyone. We received a very warm welcome. After an aperitif we decided on a mushroom carpaccio and salmon trout tartare as starters. I found the tartar to be a bit mild, the kick was somehow missing. The bunch of dill was incredibly aromatic (I mean that completely seriously, it was super fresh). The radishes and pumpkin seeds added the necessary bite. Overall, very well composed. For the main course I had a rump steak, which weighed around 250g. In terms of taste, I'm guessing South America (Uruguay?). I also felt a bit lacking in the pizzazz with the potato gratin - but that wasn't necessary because it came with an incredibly great port wine sauce. I didn't need the herb butter in the supplement, the combination was so delicious. The year-old Bordeaux fit like a glove. After a Crème Catalán and an espresso, we finally went to the bar.

What definitely needs to be highlighted is the wonderful friendly treatment. We actually came in jeans and a t-shirt, we were welcomed as if we were members of the family. We felt completely comfortable, it was a great evening.

Danke für einen sehr schönen Abend im Winter 2023. 100% Empfehlung zum Besuch für die Fans von Gourmet Küchen.

Kurz zum Essen:
Grüße (Lachs+Japaleñocreme, Haselnuss+Foiegras paste) inkl. frischem Brot und Pastinakencremesuppe, Foie Gras (1 Gang), Jakobsmuschel (2), Wachtel (3), Ente (4) und 2 Desserts, plus der (scheinbar übliche, sehr feine) Kakaokeks mit Aprikoseneis auf Wildbeeren.

Die Gerichte waren schön präsentiert, wurden vom Service ausreichend erklärt und machten auf mich persönlich den Eindruck, ein nahezu maßgeschneidertes Verhältnis von Soße zum „Rest“ zu haben.
Ich persönlich empfand, dass das Gänseleber Gericht etwas zu viele saurere Noten hatte (Essigvignarette, Artishoke) - aber das ist völlig individuell.
Ansonsten war für mich jeder Gang ein Genuss.
Wir saßen von 19 Uhr bis ca 22:30 Uhr für dieses Menü.
Für Gäste, die sich in der ausführlichen Weinkarte verlieren, steht der kompetente Somelier bereit und berät & erklärt.

Man hat von den vorderen Tischen des Restaurants einen sehr guten Einblick in die Küche und auf das Anrichten, was Kochfans sicherlich nochmal extra gefällt.

Ein gelungenes Restaurant, welches hoffentlich noch viele Menüs produzieren wird. Alles Beste für das Hofstuben Team.

Briefly about food:
Greetings (salmon+japaleño cream, hazelnut+foiegras paste) incl. fresh bread and parsnip cream soup, foie gras (1 course), scallop (2), quail (3), duck (4) and 2 desserts, plus the (apparently usual, very fine) cocoa biscuit with apricot ice cream on wild berries.

The dishes were beautifully presented, were adequately explained by the service and gave me the impression of having an almost tailor-made ratio of sauce to “rest”.
Personally, I felt that the goose liver dish had a bit too many sour notes (vinegar vignarette, artishoke) - but that is completely individual.
Otherwise, every course was a pleasure for me.
We sat for this menu from 7pm to about 10:30pm.
For guests who get lost in the extensive wine list, the competent Somelier is available to advise and explain.

From the front tables of the restaurant you have a very good view of the kitchen and the preparation, which is sure to appeal to cooking fans.

A successful restaurant that will hopefully produce many more menus. All the best to the Hofstuben team.

Ausgezeichnete Küche und tolle Produktauswahl. Live Küche mit tollen Köchen. Herrliche Kompositionen mit natürlichen Produkten die klar und strukturiert angerichtet sind. Der Service nebst Sommelier ist überragend. Die Weinauswahl war wirklich grandios.

Wir waren dort zu unserem 10jährigen Hochzeitstag mit Übernachtung im Hause Deimann. Bei der Reservierung zum 6 gängigen Degustationsmenü wurden unsere Wünsche auf Fleisch zuverzichten (Pescetarier) berücksichtigt. Wir hatten sogar die Wahl beim Reh Gang entweder auf das Fleisch zu verzichten oder speziell für uns noch einen Gang Seelachs mit anderen Beilagen zu kochen. Das Essen war ein Traum und wurde mit zahlreichen fantastischen Grüssen aus der Küche noch bestens flankiert. Gekocht wurde vor den Augen der Gäste. Es ist beeindruckend mit welcher Hingabe gekocht bzw. die Kunstwerke kreiert werden. Sommelier und Restaurant Leiter waren ebenfalls perfekt. Die Weine wurden sehr authentisch und charmant erläutert, insbesondere auch im Hinblick auf die Wechselwirkung des aktuellen Gangs. Danke für das tolle Erlebnis und die Geschmackserfahrung.

We were there for our 10th wedding anniversary with an overnight stay at the Deimann house. When we made the reservation for the 6-course tasting menu, our wishes to avoid meat (pescatarian) were taken into account. We even had the choice of either skipping the meat for the venison course or cooking a course of pollack with other side dishes especially for ourselves. The meal was a dream and was perfectly accompanied by numerous fantastic greetings from the kitchen. Cooking took place in front of the guests. It is impressive with the dedication with which they cook and create the works of art. The sommelier and restaurant manager were also perfect. The wines were explained very authentically and charmingly, especially with regard to the interaction of the current course. Thank you for the great experience and the taste experience.
