Drei Besuche im vergangenen Jahr und der nächste steht am kommenden Wochenende an, da muss das Hilmar uns offensichtlich etwas Besonderes bieten.
Die Anreise ist nicht einfach, eine Autobahnanbindung nicht gegeben. Freilich ist unsere Anfahrt schön, denn der Weg führt uns durch das Lipperland. Es geht durch Wälder und hügelige, landwirtschaftlich geprägte Landschaft.

Warum fühlen wir uns im Hilmar eigentlich so wohl?
Dies liegt am Dreiklang aus exzellenter Küchenleistung, zugewandtem & herzlichem Service und dem Ambiente des Schlosses und des Restaurants.
Restaurantleitung Mathis Ahlers weiß inzwischen, welchen Tisch wir bevorzugen, kennt unseren Weingeschmack und verfügt neben einer sehr angenehmen Persönlichkeit über eine umfassende Expertise in Bezug auf Weine und Speisen. Viel Freude bereitet auch der Dialog mit seinem Kollegen Vincent Fritzke. Zwei Menschen, die augenscheinlich sehr gerne Gastgeber sind.
Letztes Jahr konnte Herr Krogmann zwei neue Mitarbeiter gewinnen. Ein Kollege kommt aus dem „Rutz“, der andere von Juan Amador. Sollte man einen zweiten Stern anvisieren, das Vermögen dazu besitzt das Küchenteam definitiv.
Unter der Woche scheint es noch recht einfach, einen Tisch zu ergattern. Ich kann einen Besuch jederzeit uneingeschränkt empfehlen, egal an welchem Wochentag, es lohnt sich. Ein außerordentlich gutes Preis-Leistungs-Verhältnis ist garantiert.
Im Schlosshotel Münchhausen kann man wunderbar übernachten. Immer wieder findet man auf der Internetseite des Hotels ansprechende Angebote, die Übernachtung mit Genuss kombinieren.

Im Bereich der mit einem Guide-Michelin-Stern dekorierten Restaurants ist die Bandbreite des Angebots riesig. Meinem Empfinden nach gibt es zu viele "ausgezeichnete" Restaurants. Das Niveau der Küchenleistung liegt dabei irgendwo zwischen „Alte Herren“ und „Champions-League“.
Herr Krogmann und sein Team sind kulinarische Champions-League, da sollte kein Diskussionsbedarf bestehen. Jeder passionierte "Esser" wird dies erkennen.
Die Grüße aus der Küche überzeugen auf ganzer Linie. Großartig im Geschmack, handwerklich auf höchstem Niveau. Die Menüfolge ist absolut stimmig. Die Teller sind optisch anspruchsvoll, doch mit Instafood hatte das nichts zu tun. Man servierte außerordentliche Soßen. Bei unserem letzten "Mahl" (Ende September) genossen wir Artischocke und Wolfsbarsch, diese Gänge zauberten noch einmal den Sommer herbei. Kaisergranat im rosa Ingwersud, den feierten wir 😊, eine Hommage an Klaus Erfort.

Leider ergab sich nicht die Möglichkeit, Stephan Krogmann persönlichen Dank auszusprechen. Nach diesem Dinner hätte ich ihm gegenüber eine kleine Verbeugung angedeutet, dies als Ausdruck meines großen Respekts für sein Schaffen. Vielen Dank, dass wir zu Gast sein durften 🫶 🙂.

Three visits last year and the next one is coming up next weekend, so the Hilmar obviously has to offer us something special.
Getting there is not easy, there is no motorway connection. Of course our journey is nice because the path takes us through Lipperland. It goes through forests and hilly, agricultural landscapes.

Why do we actually feel so comfortable at Hilmar?
This is due to the triad of excellent kitchen performance, attentive and warm service and the ambience of the castle and the restaurant.
Restaurant manager Mathis Ahlers now knows which table we prefer, knows our taste in wine and, in addition to a very pleasant personality, has extensive expertise in wine and food. The dialogue with his colleague Vincent Fritzke is also a lot of fun. Two people who obviously really enjoy being hosts.
Last year, Mr. Krogmann was able to recruit two new employees. One colleague comes from “Rutz”, the other from Juan Amador. If you're aiming for a second star, the kitchen team definitely has the ability to do so.
During the week it seems quite easy to get a table. I can fully recommend a visit at any time, no matter what day of the week, it's worth it. An exceptionally good price-performance ratio is guaranteed.
You can spend the night wonderfully at the Schlosshotel Münchhausen. You can always find attractive offers on the hotel's website that combine overnight stays with enjoyment.

In the area of ​​restaurants decorated with a Guide Michelin star, the range of offerings is huge. In my opinion there are too many “excellent” restaurants. The level of kitchen performance lies somewhere between “Old Gentlemen” and “Champions League”.
Mr. Krogmann and his team are in the culinary Champions League, so there should be no need for discussion. Any avid “eater” will recognize this.
The greetings from the kitchen are convincing across the board. Great in taste, craftsmanship at the highest level. The menu sequence is absolutely consistent. The plates are visually sophisticated, but it had nothing to do with Instafood. Extraordinary sauces were served. At our last "meal" (end of September) we enjoyed artichoke and sea bass, these courses conjured up summer again. We celebrated Norway lobster in a pink ginger broth 😊, a homage to Klaus Erfort.

Unfortunately, there was no opportunity to thank Stephan Krogmann personally. After this dinner, I would have given him a small bow as an expression of my great respect for his work. Thank you very much for allowing us to be guests 🫶 🙂.
