I like this restaurant. The atmosphere is okay-ish, little empty and there’s no one to greet you at the door, but when the hostess came and was really nice and attentive, even folded my napkin when I went to the bathroom.

The food was a lot so definitely don’t eat before that, the whole experience was about 3 hours. I liked the starters but the mains was lacking which was sad :

In September, my husband and I dined at this one-Michelin-starred cave restaurant in Conversano, just a 15-minute drive from Polignano a Mare. The unique decor and divided seating created a private, intimate atmosphere. The menu highlights local Puglian ingredients, and my favorite dish was the burrata with caviar and tomatoes—simple yet incredible. For two people, with a couple of glasses of wine, the total came to 400 euros. Highly recommend for a luxurious meal and the quintessential Puglian cave dining experience.

We had a great taste experience and journey. Good command in English which is hard to find around Italy. My wife was pregnant, we told this and they were very careful about this.

I would def. recommend. They deserve the michelin star they have.

Beautiful place, delightful staff.
We did the "movimento" menu.
Many dishes were pleasently inspired by the southern Italian culinary tradition.
