A fantastic value of 7 courses for €65 (vegan).  The food is fresh, innovative, and local, with an extensive menu accompaniment explaining every ingredient, including different types of wood and flowers (who knew birch ice cream could be so good?).  The waiter explained to us how each component of the course was made by the chef (he only spoke French but we got through fine!).  Even the meat lover in my group loved it.  We’ve also been to the more expensive and extensive Distillerie restaurant next door, but this was just as good, only a smaller menu.  We left quite full!

As for the ambiance, I’ll only add that food of this caliber deserves nicer furniture, even for a “brasserie” ;)

Starting off with the "LES SNACKS"—a trio of wild herb-infused treats like charcoal crackers, tempura of wild leaves, and a vibrant wild herb pesto—each bite was a discovery of robust and earthy flavors.

As the courses unfolded, each dish seemed to tell its own story. The "EAU SAUVAGE" with its infusion of spring flowers and leaves brought a subtle, refreshing twist that cleansed the palate beautifully, preparing me for the delights to come.

The highlight of the evening was undoubtedly the "PRELUDE" of nettles, an intricate mix of chlorophyll, buds, grains, and forsythia oil. It was a dish that captured the essence of spring on a plate—vibrant, fresh, and invigorating.

A beautiful brasserie in a very picturesque location, in a castle in a quaint countryside village. Both vegetal and omnivore menus were delicious, with fresh local ingredients and creative recipes.
The service was very friendly and professional. Great drinks and wine recommendations.

The best restaurant any vegetarian, vegan and nature lover could wish for. vegetables, herbs, and wild plants are the centre piece of elaborate dishes. For those wishing for animal proteins, there are still meat and fish options as well. The dishes are all light and won’t make you feel overloaded at the end. The menu changes every season, to propose seasonal ingredients and new tastes. The menu of the brasserie is a shorter version to the one of the Michelin star restaurant next door, so you get taste haute cuisine at reasonable prices. Also, the setting is a more relaxed one. And in the summer, you can eat on the lovely terrace of the castle. This place is also great for people with intolerances: all food is lactose and gluten free.
