I came across this food truck parked at Dairy Mart on Bardstown Road a week or so ago. Pretty good find from burritos to tacos and on my third visit, the real test, a torta. The meats and veggies (usually peppers and onions, right?) here are near perfect to my taste. There are a few things I'd improve about Cabrera starting with the stale torta bun. This would easily be yet another 4-star entry in Louisville's food truck convoy with a few adjustments, and it is a welcome addition as is whenever parked along the Road in the Tyler Park/Deer Park vicinity. 3.5 stars (I'll lean to 4 since I don't want to penalize them for no half on the scale)!
