Watching the famous genius César cook right in front of me felt as exciting as being in a theater. The staff was incredibly friendly, and as the restaurant filled up, the tension in the busy kitchen added to the excitement. The food was absolutely stunning. I’ll never forget the intensity of the first bite—it was phenomenal. However, as the courses progressed, the flavors seemed to lose a bit of their initial impact. Still, overall, the dishes were impressive and left a lasting impression.

We had an amazing dinner at Cesar. Dishes are delicious and creative. Chef is taking care of everything, the staff are very friendly and professional. Price is a little bit high but we had a great time

I’ve always been a huge fan of CTBF, having visited several times, and it remains our top fine dining experience. That’s why we chose Cesar to celebrate our anniversary.

The food was great, and about 90% of it was close to the flavor we had at the old CTBF, especially the chef’s signature Uni on brioche! However, the service didn’t quite meet the Michelin Star standard. The waiter was a bit too pushy when it came to ordering drinks. Once he realized we weren’t interested in any add-ons like black truffle, caviar, or wagyu beef, his disappointment was evident on his face. Additionally, the waiter presented the dishes with little more than an emotionless murmur. Yet, when it came time to pay the bill, he spent quite a bit of time emphasizing that tips should be based on the entire bill, including deposits, for every table. It felt a bit out of place for the experience.

Food is good, but probably won’t come back because of the service.

We recently dined at César NYC and opted for the Seafood Tasting Menu for two. While we were informed that this menu included 7 courses instead of the 12 courses in the Chef’s Tasting Menu, we were disappointed with the portion sizes and overall value for the price.

At $300 per person (excluding drinks), we expected a satisfying, well-paced culinary experience. However, we left feeling only about 60% full—which is extremely underwhelming for a Michelin-starred restaurant at this price point. Having experienced multiple Michelin-starred establishments worldwide across different cuisines, this was unfortunately one of the most disappointing.

That being said, all the dishes were delicious—beautifully plated, thoughtfully crafted, and full of great flavors. But the overall experience? It was hilariously like the final dessert: a bowl of empty shaved ice, filled with air, with a little bit of ice cream and pearls. It looked stunning, tasted nice, but ultimately felt hollow and lacking substance—just like the meal itself.

The biggest issue lies in portioning and menu structure. Rather than adjusting portions appropriately, it felt like the 7-course menu was simply a downsized version of the 12-course menu, encouraging diners to pay for expensive add-ons (such as a few truffle slices for $100 per person on a single dish). This approach felt more like an upselling tactic rather than a carefully curated fine dining experience.

A better approach would be ensuring that both menus offer consistently portioned dishes, with the 12-course menu adding variety rather than reducing portions in the 7-course option. The overall narrative of the meal felt incomplete, as if we were experiencing only a fragment of the intended culinary journey.

Beyond the food, the service was disappointingly mid. Our server never checked in to ask how the meal was going, nor did they inquire about our experience when clearing plates. The person who initially introduced himself as our server only served us water at the beginning, and from that point on, a rotating mix of random staff took over without consistency. For a Michelin-starred establishment, we expected attentive and engaging service, but instead, it felt indifferent and impersonal.

For a restaurant of this caliber and price range, expectations are naturally high, and this experience did not justify the cost. While the food itself was undeniably delicious, the portioning, service, and overall value left much to be desired.

Would we return? Unlikely.

Our dinner at César for my birthday was an exceptional experience from start to finish. Seated at the counter, we had the perfect vantage point to watch Chef and his team work with precision and artistry in the pristine open kitchen. Every movement was seamless, every dish executed with thoughtfulness and finesse. The pacing of the meal was impeccable, allowing us to fully appreciate each course.

The flavors were masterfully composed: elegant yet bold, technical yet deeply satisfying. The langoustine tart with caviar and uni toast were among the most unforgettable bites of our evening, each showcasing the perfect balance of richness and delicacy. Adding 4 ounces of wagyu was an indulgence we were glad we didn’t pass up, as the melt-in-your-mouth tenderness and depth of flavor made for a truly decadent moment.

The wine pairings were just as remarkable. Guided by the sommelier’s expertise, we enjoyed two exceptional bottles of champagne, with the Bollinger standing out as a stunning complement to our meal—graceful, expressive, and perfectly suited to the evening’s flavors.

Beyond the food and wine, the hospitality was outstanding. Service was warm, intuitive, and flawlessly attentive, with every detail thoughtfully considered from perfectly timed wine and water refills to the genuine kindness that made me feel celebrated throughout the evening.

We’ve been fortunate to dine at many incredible restaurants, yet this meal reaffirmed why Chef Cesar is, without question, our favorite. My husband and I are quite picky and have high expectations when it comes to dining, but on this, there’s no debate. We still talk about our unforgettable meal at Brooklyn Fare in 2017, but Chef Cesar has outdone himself with this one, elevating an already cherished memory to new heights. We’re already looking forward to our next visit.
