My wife and I went here for our 12 year anniversary. “Perfect” is an understatement. I’ve been to a little more than half a dozen 3-star Michelin restaurants over the past decade, and Chef’s Table was one of the best for me. They nailed it from the moment we walked in right to the very end, when they brought out a special dessert dish with a candle to top off our anniversary occasion, and then one of the chef’s came by to congratulate us. I can say they had incredibly fresh and rare ingredients, and prepared it all impeccably - almost in an unreal, dreamlike fashion. But that’s what you expect at a 3-star Michelin place, so that shouldn’t be surprising (although I feel that I ate more flowers here). The way they combined the ingredients, the meticulous attention to detail (that we could see clearly form our table), and the clear respect the kitchen and waiting staff had for each other might have been what set this restaurant apart. The flavors came to life in my mouth. I wouldn’t stop chewing after the food was gone, just to savor the flavors for even another short moment. I know things can’t be perfect in this world, but Chef’s Table is right there. Our waiting staff was incredibly professional, knowledgeable, and prompt, but they were also very human and able to anticipate our thoughts. They connected with us unlike previous experiences - simply because they knew that’s what we wanted. Chefs Table has left a lasting memory better than any I’ve had to date. We went there right after seeing The Great Gadspy, and I couldn’t be happier with the decision. This is a meal we will remember for ever. Thank you very much for being so amazing. We will be back.

What a fantastic experience, truly one of a kind! I have had the pleasure of enjoying Chef Max Natmessnig's food at some of the other restaurants he worked at previously (Alois in Munich and Rote Wand Chef's Table in Zug) and when I heard that he and Marco Prins had taken over the Chef's Table at Brooklyn Fare I just had to visit. Safe to say I was not disappointed!

I feel that this is his best venture yet, even surpassing what I had been fortunate enough to witness before. The collaboration of these two creative geniuses, the unique ambience of the space at the back of a small deli in Hells Kitchen, the warm and welcoming atmosphere that the wonderful service team create right from the beginning multiply into a dining experience that deserves only the highest of accolades.

The highlight of course is the food itself and naming favourites is an incredibly difficult exercise as each dish is a mind blowing flavour firework on its own. That said, standing out for me were definitely the tuna and foie gras starters, the newly created Hokkaido uni dish, the scallop with caviar, the langoustine (melts in your mouth), the turbot with Szegediner goulash (you wouldn't believe how amazingly well these 2 go together), the strawberry and rhubarb desert (that fruit explosion!) and the Fujisan bread (an all-time classic in Max' repertoire).

My recommendation would be to come early, start with a cocktail and also order the wine pairing that so accurately balances the flavours that you will experience through the food. They also serve super tasty non-alcoholic drinks that are put together with so much attention to detail and are a great alternative for those that prefer not to drink wine. The diner leaves well saturated without feeling overfed. The portion sizes are good, the whole experience does not feel rushed and there are plenty of opportunities to chat to your fellow visitors, the lovely service staff and of course the chefs.

Jag tänkte ta hit min fru som en extra - speciell födelsedagspresent. Jag är ledsen att inte hålla med de flesta av granskarna här, men vi blev besvikna. 
Här är några punkter: 

Servicen var konstig. Det verkade som om vi hade ett dussin människor som serverar oss och visste inte om vi hade en huvudkypare. Vid ett tillfälle hällde någon stillastående vatten i min frus kolsyrade glas. När han inte återvände med ett nytt glas / flaska som utlovat, var vi tvungna att flagga någon annan ner & göra begäran. När jag reserverade, fick jag frågan om ett speciellt tillfälle & sa att det var min frus födelsedag, men vi ville hålla det lågmält. Jag fick höra att de bara hade lagt ett ljus i efterrätten, vilket jag tyckte var okej. Men de gjorde ingenting. 

Maten. Jag njöt mer av maten än min fru gjorde. Av de cirka 15 kurserna tyckte jag att 4 var utmärkta, 3 var mycket genomsnittliga, och resten varierade från bra till mycket bra. Jag kände att tillsatsen av små bitar exotiska ingredienser till varje rätt inte hade någon större inverkan på smaken, vilket jag tycker är det viktigaste kriteriet för en restaurang: ) . 

Depositionen. De kräver en $ 200 per person icke - återbetalningsbar insättning, vilket är ganska galet i sig. Men när du äter där tillämpar de inte depositionen på din måltid; du måste betala för din måltid och sedan ett par dagar senare får du återbetalningen. Ganska skandalöst, IMO.

om du är 2 eller 3 personer väljer baren, där det är öppet för att se köket, 4 eller fler personer kan du fortfarande ha utsikten, men svårare att konversera. Personalen är super vänlig och inte kvav. Kocken kan även göra ett framträdande för att presentera en kurs. Menyn kan vara för långt ut på kurvan för vissa: uni, havsöron, tänk sjögurka. Mennu tung till skaldjur; räkor, fisk, ostron, mussla. Middagen kan vara 10-15 smårätter. Kändes som det var en bra mängd mat. Såser, prep och kvalitet varje top notch. Glad att vi gick och fick uppleva detta. Klädkod, ledigt jobb, jacka att föredra.

Min fru och jag åkte hit på vår 12-årsdag. "Perfekt" är en underdrift. Jag har varit på lite mer än ett halvdussin 3-stjärniga Michelinrestauranger under det senaste årtiondet, och Chef’s Table var en av de bästa för mig. De spikade den från det ögonblick vi gick in ända till slutet, när de tog fram en speciell desserträtt med ett ljus som grädde på moset, och sedan kom en av kockarna förbi för att gratulera oss. Jag kan säga att de hade otroligt färska och sällsynta ingredienser, och förberedde allt oklanderligt - nästan på ett overkligt, drömlikt sätt. Men det är vad man förväntar sig på ett 3-stjärnigt Michelin-ställe, så det borde inte vara förvånande (även om jag känner att jag åt mer blommor här). Det sätt på vilket de kombinerade ingredienserna, den minutiösa känslan för detaljer (som vi tydligt kunde se från vårt bord) och den tydliga respekt som köket och serveringspersonalen hade för varandra kan ha varit det som särskiljde denna restaurang. Smakerna kom till liv i min mun. Jag skulle inte sluta tugga efter att maten var borta, bara för att njuta av smakerna ännu en kort stund. Jag vet att saker och ting inte kan vara perfekta i den här världen, men Chef’s Table är precis där. Vår serveringspersonal var otroligt professionell, kunnig och snabb, men de var också mycket mänskliga och kunde förutse våra tankar. De tog kontakt med oss till skillnad från tidigare erfarenheter - helt enkelt för att de visste att det var vad vi ville. Chefs Table har lämnat ett bestående minne bättre än något jag haft hittills. Vi åkte dit direkt efter att ha sett The Great Gadspy, och jag kunde inte vara nöjdare med beslutet. Detta är en måltid vi kommer att minnas för evigt. Tack så mycket för att du är så fantastisk. Episk plats. Värt hypen. Trots den senaste tidens dramatik har de hamnat på topp. De 2 nya kockarna med sina hemstadsprodukter & hemliga mor- och farföräldrarecept tar verkligen död på det. Många laud le bernadin som den vara alla slutet allt när det gäller skaldjur men denna plats är mycket bättre. Så många utmärkelser som bästa öppningen till bästa Wagyu & bästa pilgrimsmusslan jag någonsin ätit. Den jäkla brödrätten till dessert är glaserad i Yamazaki 12-whisky. De bokstavligen kastar lyxboken på med kaviar & en 5 & en 4 biff. Kom hit snabbt innan de tjänar sina 3 Michelin stjärnor igen och reservationer blir omöjligt

Det måste vara svårt att "överträffa dig själv" hela tiden. Men kock Ramirez och hans team av kockar och uppmärksam personal. . . det gör de, varje gång! Varje gaffel är himmelsk. . . . på något sätt gör det lite nervöst att du inte får njuta av nästa. Men. . . du gör. . . och denna härliga upplevelse "delas" på något sätt av dem som förbereder den för dig. "Jag ser att du skymtar i min riktning" sous chef. . . . och BRAVO!

12-rättersmenyn med kocken Ramirez är den måltid jag någonsin har haft i NYC och den dyraste.
Alla rätter var exceptionella, unika, smakfulla och kreativa och förvånansvärt känner du dig inte tung i slutet.
Ingången från stormarknaden är cool.

En slags konstig inresa genom en mataffär ligger en av New Yorks bästa restauranger. Chef's Table är en tre Michelin-stjärnig restaurang med köket från Chef C sar Ramirez. Varje maträtt var fylld med smak. Det fanns inte en enda maträtt som vi inte tyckte om. Matens kvalitet är också av hög natur. Inredning och atmosfär är enkel men elegant. Tjänsten var professionell och uppmärksam. Hela matupplevelsen var felfri förutom vad som hände i slutet. Kocken Ramirez deltog i borden och hälsade sina gäster, vilket är vår vanliga gest på high end-restauranger och med välkända kockar. Vi blev förvånade över att han inte gick förbi vårt bord eller hälsade på oss. Vi trodde att han kan göra detta mot slutet. Vi bad om lagförslaget och det var uppenbart att vi inte skulle träffa honom. Så när vi lämnade frågade vi servitörer varje kock stor kock Ramirez. Vi blev förvånade över att få höra att han är upptagen i köket med att göra glassrätten! Ingen erbjöd ens att kolla eller fråga oss om vi kunde vänta på honom. Detta gav oss ett intryck av att ignorera oss var avsiktligt och av skäl som vi inte har någon aning om. Vi var uppenbarligen besvikna men detta skulle inte låta mig betygsätta restaurang mindre än 5.

Mitt andra besök på Chef's Table och en påminnelse om varför jag betraktar det som min favorit 3 Michelin. Kocken Cesar tar ingredienser av hög kvalitet och lyckas balansera dem perfekt i sina rätter. Hans uni och tryffel toast är oöverträffad. Toro tårta var magisk. Anka-ravioli var en retas som lämnade dig som ville ha en skål med den. Och den frysta souffeln var som att äta ett läckert moln.

Jag kan verkligen inte säga tillräckligt bra saker om Chef's Table. Jag kommer tillbaka igen.

Jag har ingenting annat än bra saker att säga om kockbordet. Service på punkt, maten kreativ och välsmakande. En av de bästa !

Så jag kommer bara ihåg den första maträtten: Japansk havsfrö från Hokkaido med tryffel.

Vi firade vårt 20-årsjubileum här, en årlig tradition som vi började för år sedan för att besöka en topp Michelin-stjärnas restaurang i NYC. I ett ord är det överlägset det värsta vi åt, och vi har besökt dem alla.

Höjdpunkten är dess plats. Visst en oväntad överraskning att hitta sin entré på baksidan av en matmarknad. Det är snyggt inrett, även om det mesta av platsen tas upp av en stor bar i stället för intima bord. Servitören var artig, men tvingade säkert varje leende som han inte kunde vänta med att torka av ansiktet. Det var så ojämnt att det var omöjligt att inte märka. Han rusade för att beskriva disken som om han var snabb läsning. Bredvid vårt bord sprängde talaren 70 s rockmusik med en väldigt dålig choiced spellista som var väldigt hög.

Maten (vi beställde en provsmakning meny) presenterades vackert, men smaken var inget att skriva hem om. Av 11 eller så rätter vi blåses bort med 2, de andra var blid, bitter eller bara udda. Med all ärlighet smakade vi mycket bättre efter ett YouTube-receptlagning hemma.

Det är vanligt att i slutet av måltiden får du lite token från restaurangen, en liten väska med godis, en meny med en anteckning, bara en fin touch för att komma ihåg dem. Här fick vi ett förseglat kuvert med en meny av vad vi beställde. Sidan var dock en slarvig röra utan omsorg eller någon uppmärksamhet bakom den. Bara 1 ordbeskrivningar, inte ens centrerad på sidan, och ingen referens eller önskemål om en lycklig årsdag eller ett tack för att du besöker. Mycket billigt gjort.

Jag tror att denna restaurang är ett fall av kejsaren utan kläder på. Eftersom du betalar $ 800 för 2 för en provsmakningsmeny, är du nästan generad att säga att den suger. Men det gjorde det. Vet de ens vem de tävlar mot? Om du ska spendera pengarna, gå till elva Madison, Daniel eller Per Se. Att lägga denna pretentiösa röra i samma kategori som de ställena är att jämföra McDonald's med Jean-Georges.

Michelin stjärna min rumpa.

När du besöker för första gången och sätter dig vid räknaren, som är öppen för att förstå varje enda sensuell impuls som kommer att påverka dig, rör aldrig din smartphone, du kommer inte vara samma person som du har varit tidigare när du lämnar restaurangen. Först måste jag revidera negativa fördomar som lanserades i sociala medier. Aldrig igen sedan Charlie Trotter Chicago hade vi ett telefonsamtal 2 timmar före vår bokning för att påminna oss om att lämna hotellet på rätt tid med hänsyn till trafiksituationen. Välkommen på Brooklyn Fare var som om vi träffade vänner. Vi skämtade och skrattade och tjänsten var avslappnad och mycket vänlig. Kocken Ramirez och hans team visste förstås att förväntningarna var extremt höga. Så de var mycket koncentrerade och disciplinerade under hela tjänsten. Kockens förberedelser kan inte beskrivas med några ord. Låt mig säga att de öppnar ett nytt universum. Detta var definitivt det mest utmanande och spännande middagsupplevelse för mig i år.

Jag brukar inte bli alltför alltför upphetsad när en anläggning får 3 Michelin-stjärna, men när det gäller kockens bord, är jag verkligen orolig. Jag märkte att rätterna tillgodoser mer mot den asiatiska gommen, eftersom de tenderar att njuta av umami och salta smaker, men ändå med varje maträtt ser jag det engagemang kocken har placerat i maten och det är ganska underbart. Tack för måltiden.
