I've been eyeing the new Malagua food truck since they came to the area maybe a couple months ago. It's got this inviting, coastal vibe, and that big ceviche flag is definitely intriguing. It's located in the little food park just to the left of the car wash. They did not disappoint! I tried their Ceviche De Pescado. It was ready in about 5 minutes, during which I enjoyed their music in the shade. Well worth the wait. It's a super generous portion, probably could feed two unless you have a super big appetite. The fish was ultra fresh, firm, and juicy. The avocado was perfectly ripe. Their ceviche seasoning is packed with flavor, tho definitely a bit lime forward. I can't wait to come back and try more from them!
