Food: majority of the dishes were delicious and creative. Great beverage recommendations too. Unfortunately not all dish acknowledged my food intolerances.

Service unfortunately not up to par:
1) waiter spilled my apero on the table. The drink was not replaced nor removed from the bill. Barely an apology.
2) I provided my mushroom intolerance with the online reservation and again at the beginning. This was clearly overlooked when two dishes with morels were served. Unclear if there were mushrooms in any other dish, but I had stomach discomfort after the dinner
3) only 2 waiters (from 5) really captured the story telling and essence of the ambience along with the dishes served, the others could profit to learn from them
4) the ending was very abrupt, the further along the evening the less attentive service was. It is not a pleasant feeling to see 5 service personnels and still having to catch their attention

Ambience: clean and beautiful decor, great ocean view. Recommend to get a table by the window.

Aus den vielen gehobenen Restaurants auf Sylt sind aktuell vier mit Michelin-Sternen ausgezeichnet. Eines dieser Spitzenrestaurants ist das „Kai3“ im luxuriösen „BUDERSAND Hotel - Golf & Spa“ in Hörnum im Süden der Insel. Küchenchef Felix Gabel lädt hier rund dreimal im Jahr zu seiner wechselnden „Reise der Aromen“ ein, die in fünf oder sieben Gängen genossen werden kann. Mit Blick auf die Nordsee erwartet die Gäste ein Menü, das regionale Zutaten von ausgewählten Erzeugern aus Norddeutschland und Skandinavien in den Mittelpunkt stellt. Ergänzt wird dieses nordische Fundament durch exotische Aromen, die das Konzept „Nordic Fusion“ auf kreative Weise bereichern.

Ein Fest für die Sinne: Der genussvolle Auftakt

Der Auftakt des Menüs ist ein wahres Feuerwerk an Kreativität und Geschmack. „Wir beginnen mit den Snacks des Abends“, kündigt der charmante Kellner an und stellt die kunstvollen Häppchen vor: „Links erwartet Sie der beste Döner Sylts –Ayran-Beese gefüllt mit zartem Kalbfleisch, umwickelt von Gurke, verfeinert mit Tomatengel und einer cremigen Zaziki-Note. In der Mitte ein Pekingenten-Tartelette: eine Kombination aus Pekingentenbrusttatar, Rosinen-Marinaden-Haube, Pflaumengel und Imperial Kaviar. Rechts schließlich unsere Interpretation der Currywurst-Pommes Schranke rot-weiß.“ Jeder Snack ist ein kleines Kunstwerk, das in der Küche meisterhaft mit Pinzetten arrangiert wird. Kurz darauf folgt ein gefülltes Takoyaki-Teigbällchen, das ebenso wie die Snacks mit den Fingern genossen wird. Für den stilgerechten Genuss wird Wasser aus einer Teekanne in die Handwaschschale mit einer Zitronenscheibe gegossen. Der nächste Gang ist eine spektakuläre Kreation: eine Mousse aus Entenleber, umhüllt von weißer Schokolade, serviert mit Maiseiscreme und Popcorn. Er wird auf einem Glasteller präsentiert, unter dem Maiskörner zu sehen sind.

One of these top restaurants is the “Kai3” in the luxurious “BUDERSAND Hotel - Golf & Spa” in Hörnum in the south of the island. Chef Felix Gabel invites you to his changing “journey of flavors” around three times a year, which can be enjoyed in five or seven courses. With a view of the North Sea, guests can expect a menu that focuses on regional ingredients from selected producers from Northern Germany and Scandinavia. A feast for the senses: the enjoyable start

The start of the menu is a real firework of creativity and taste. “We’re starting with the evening’s snacks,” announces the charming waiter and introduces the artful appetizers: “On the left, the best kebab in Sylt awaits you – Ayran-Beese filled with tender veal, wrapped in cucumber, refined with tomato gel and a creamy tzatziki -Note. In the middle is a Peking duck tartlet: a combination of Peking duck breast tartare, raisin marinade topping, plum gel and imperial caviar. Finally, on the right is our interpretation of the currywurst fries cabinet red and white.” Each snack is a small work of art that is masterfully arranged in the kitchen with tweezers. This is followed shortly by a filled takoyaki dough ball, which, like the snacks, is enjoyed with your fingers. For stylish enjoyment, water is poured from a teapot into the handwashing bowl with a lemon wedge. The next course is a spectacular creation: a duck liver mousse covered in white chocolate, served with corn ice cream and popcorn. It is presented on a glass plate with corn kernels visible underneath.

Fantastisches Menü! Hier scheint man mit dem ersten Stern 🌟 noch gar nicht am Ziel der Küchenträume angelangt zu sein 😉 viel Erfolg dabei. Grandiose Champagner-Karte. Das Ambiente wirkt, wie das ganze Haus, ziemlich kubisch und groß. Der Service ist eher formell, kann in der Konversation aber auch ganz locker sein. Gut so, wir sind schließlich auf Sylt! Toller Service auch in der Hotelbar.

The ambience, like the whole house, seems quite cubic and large. The service is more formal, but the conversation can also be quite relaxed. Good thing, we are finally on Sylt! Great service in the hotel bar too.
