We went to Central during lunch and were blown away by the couture dining experience we had. We opted for the tasting menu, which is extensive.

Their education regarding native ingredients, arts, and crafts was a refreshing preface for what we would be enjoying. It elevated our experience and ability to further enjoy the nuances of the dishes presented.

Central does an amazing job of combining textures, flavors, culture, and knowledge of native ecosystems into each of the courses.

Our favorite courses were black rocks, extreme altitude, warm sea current and cacao chuncho.

Definitely one of our most memorable dining experiences.

This is the review that I’ve been dreading writing most. I hope this doesn’t get me banned from the building… Central is an experience. Chef Virgilio Martínez Véliz put together a creative voyage through Peru. Unfortunately, I think he tried too hard to keep true to his vision and missed on a few of the dishes. That is not to say that anything was bad. Nothing was bad; only a few of the dishes were not amazing. For the price point (PEN 1500 without tip/$490 USD after tip) and compared to a few other restaurants it wasn’t worth the price. As far as food, this ranked as my #4 favorite in Lima. So the food was very good, but not every bite was “Wow!”  As far as value, it ranks a lot lower, which is why I gave it a cost-adjusted 4-star. If you must go to the #1 restaurant in Latin America and possibly the world, then go. As I said, it is a wonderful experience. But don’t miss out on the restaurant upstairs which I rank as my #1 restaurant PERIOD.

Experience of a lifetime. My mind was completely blown. Literally worth every penny to me. If you don’t like strong, experimental flavors, not for you. But if you are a true food lover, your life may never be the same. I literally woke up the next morning somewhat depressed… I think it flooded my brain with too much dopamine. That or I am just sad that the experience is over. This is art in every sense of the word. I think it is worth going to Lima for. Probably ruined fine dining for me forever because everything will always be compared to my first time at Central. If I didn’t force myself to write this review I would have no words.
