This is the typical establishment that makes me wonder why we ever go to 3-star restaurants, unfortunately it is not the first time we were disappointed by the best... Let me go through the good and the bad of Hyotei though

The place:
It is charming from the outside. Unfortunately, the room they gave us was less than up to standard. The wall was falling apart in places. The A/C was terrible. It blasted arctic air at me from my arm's distance. We did not have a comfortable time at all.

The food:
We had the full menu, which on paper looked fab. The reality though was very different. The tastes were simply missing, everything was just flat, like what you would expect from a big industrial kitchen, not from a 3-star. There was no spark to anything. No soul. Very disappointing. I would venture to say that it was the worst and at the same time most expensive dinner of our 2 week stay in Japan.

The service:
This was the best part of the dinner. Like everywhere in Japan, polite, respectful and excluding significant delays from the kitchen, generally very good.

We had the loveliest experience here, notwithstanding the harsh comments in google reviews:
Some reviewers dont state clearly the amount they spent in Yen
Some dishes are really cold appetisers, if they are not, they are covered.  Japanese dishes are not piping hot unless its nabe.
Reservations issue - much like the furore in other countries over irresponsible diners who cancel on reservations at Michelin star restaurants (not so much about the stars but the staff, the expensive food ingredients, freshly ordered  edible flower decor etc), respect the local culture, book via your hotel concierge.  No need to headbutt your way in other countries.   Make better use of your hotel concierge ahead of time.

On a positive note:
The hostess was gracious.  The private room was quaint.  Love the garden setting, we could slide open the door for a beautiful view of a garden, sounds of birds chirping and sounds of water trickling as we dined.  The food was delish and beautiful to look at.  We booked months ahead via our hotel concierge.  A 15,000 yen menu per person.
After we left, the owner, an elegant lady in an exquisite kimono bade us farewell at the entrance in the cold, though we cannot communicate, we appreciate her pride in her work.  As we walked further away, she remained in her stance and bowed once again.  I will remember this wonderful once in a lifetime experience.

Legendary restaurant, traditional Japanese culture as its best. A 400 years old restaurant. The cuisine is good but the service and the settings are even more special. Amazing wines, sakes and non alcoholic beverages. Highly recommended.
