Incredible meal with excellent service. This was Michelin star quality food in a beautifully restored ironworks building. The wine pairing list was expertly chosen and I would heartily recommend this fantastic little restaurant.

構成されています。

女子ウケ抜群だと思います。
しかし、ボリューム的には少し
物足りなかったかと思いました。

JR芦原橋駅から少し行くと小さな町工場が建ち並ぶ一画の中に蔦に覆われた「genso」と書かれた錆び色の鉄の扉を見つける。
ここが今夜のお店、マジマジと見上げても無機質な重い扉は沈黙のまま。
実はこのお店、ここから先は教えられた暗証番号を知っている者だけに鉄の扉を開く秘密めいたお店。

ロックを解除し暗いトンネルのような廊下を抜けると55年前の鉄工所跡地をベースにした非日常的な空間が広がる入口に使用した藤棚や天井クレーン、無機質な鉄やレトロな天窓など建物の歴史と背中合わせの新しさを感じさせます。

完全予約制のイノベーティブフレンチ「genso」さんはその店名通り基本物質と云われている”四元素”をコンセプトとし食材の火入れの方法や熱の伝え方である”火”、生産者がこだわる野菜やお皿の素となる”土、ゲストが口にする"水、ハーブの香りなど食材が持つ自然の香り“風”をテーマにされているのだそう。
今夜は2ヶ月毎に更新されるディナーコース(全13品)にアルコールペアリングをつけてお願いしています。

先ずはと出された一品目は鉄をイメージした一皿。
何と華奢な美しいフォルム、鉄分を感じさせる鮪とフォアグラ黒りんごの組み合わせと器との一体感、その美しさはアートという言葉が相応しく
合わせるシャルドネ100%のシャルル・プジョワーズの泡の軽やかさとりんごの酸がぴったり、鉄ってこんな味がするの？と新鮮に感じた味の組み合わせが想像の斜め上をゆく。

水をイメージした一皿からはシェフの出身地大分の日田天領水を使用し鱧と合わせて。
透明なお出汁は瀬戸内のマナガツオの骨から取ったクリアなコンソメ、
優しく雑味が無いので鱧本来の美味しさが引き出されている。

そして最も気に入ったお料理はこの店に来る価値を教えてくれたスペシャリテ。
大阪の夏野菜をふんだんに使用し多彩な調理法で作られた一言で表現するなら温かいサラダといったイメージ。
上にはサマートリュフのスライスを乗せとうもろこしのソースをかけ仕上げる。
ヤングコーンのフリット、八尾の枝豆、泉州の水茄子と一体何種類の野菜を使われているのだろう、この一皿だけの為に食べに来たいと思う程見事な逸品でした。
贅沢な茶碗蒸しフランは簡単なようだが実は奥深く鮑の肝と翡翠茄子旬の毛蟹が贅沢に乗る日本料理の様なきれいな味わい、
炭火焼きした瀬戸内のマナガツオは帆立のスープをベースに海水塩職人に作ってもらったという銀象ソルトのミネラル感と発酵アスパラの酸とのバランスが絶妙です。
メインのお肉は黒毛和牛のサーロイン(＋¥3000)、脂の融点がとても低く熟成庫で4週間寝かせた旨みは舌の上で蕩ける極上の味わい、炭焼きしながら割下を塗るという手間で味の染みたすき焼きを食べているよう、日本のフレンチらしい和洋折衷でした。
ご飯もので出される揖保乃糸の最高級「三神」のじゅんさいを落とした艶めく麺線は食べるのが勿体無いほど美しくて美味しかった。

気品ある甘味のデセールはフランスの伝統菓子クラフティオスリーズをイメージさせるスフレオムレツ、中にはフランボワーズやセミドライアプリコットを挟み巣蜜を添えて更に濃厚な甘み。
最後はカモミールの香り広がるハーブティの余韻に癒され楽しい時はあっという間に過ぎてゆく。

美しさと時折新味も忍ばせる料理たちにときめき心を躍らせた夜でした。
ペアリングも期待以上に面白いですよ。

A short walk from JR Ashiharabashi Station, you will find a rust-colored iron door with the word ``genso'' written on it covered in ivy in a row of small factories.
This is the shop for tonight, and even if you look up, the heavy, inorganic door remains silent.
In fact, this shop is a secret shop whose iron door opens only to those who know the password given to them.

After unlocking the lock and passing through a dark tunnel-like corridor, you will find yourself in an extraordinary space based on the site of a former ironworks factory 55 years ago. It gives you a sense of newness that goes hand in hand with history.

As the name suggests, the innovative French restaurant ``genso'', which requires reservations, is based on the concept of the ``four elements,'' which are said to be the basic substances. The theme is the earth that forms the base of the dishes, the water that guests taste, and the natural scents of the ingredients such as the scent of herbs and the wind.
Tonight, we are asking for an alcohol pairing for the dinner course (13 dishes in total) that is updated every two months.

The first item that was served was a plate with the image of iron.
What a delicate and beautiful form, the combination of iron-rich tuna and foie gras black apple, and the sense of unity with the bowl, its beauty can be described as art.
The lightness of the bubbles of the 100% Chardonnay Charles Pejoise and the acidity of the apples are perfect.Is this what iron tastes like? The combination of fresh flavors goes beyond your imagination.

A dish inspired by water uses Hita Tenryosui water from Oita Prefecture, where the chef is from, and pairs it with conger eel.
The clear soup stock is a clear consomme made from the bones of pomfret in the Setouchi Inland Sea.
The natural taste of the conger eel is brought out because it is gentle and has no unpleasant taste.

The dish I liked the most was the specialty that made me realize the value of coming to this restaurant.

The main meat is Kuroge Wagyu beef sirloin (+¥3000).The melting point of the fat is very low and it has been aged in an aging room for 4 weeks to give it an exquisite flavor that melts on your tongue. It was a Japanese-Western fusion that is typical of Japanese French cuisine, as if you were eating sukiyaki that had been stained with sukiyaki.
The shiny noodle strings made with Ibonoito's highest quality ``Mikami'' junsai served with rice were so beautiful and delicious that it was almost a waste to eat them.

The elegantly sweet dessert is a soufflé omelet reminiscent of the traditional French confectionery Craftiosleese, with raspberry and semi-dried apricots sandwiched inside and garnished with honey for an even richer sweetness.
At the end, the pleasant time passes quickly as you are soothed by the aftertaste of the herbal tea with the scent of chamomile.

It was a night where I was excited by the beauty of the dishes and the occasional new flavor.
