白金台にある中華料理店「シノワ」は、上品で食べやすい中華料理を堪能できる素晴らしいお店でした。

The Chinese restaurant "Chinois" in Shirokanedai is a wonderful restaurant where you can enjoy elegant and easy-to-eat Chinese food.
It is a departure from the general image of Chinese food, with a delicate flavor that does not feel heavy or greasy, and each dish is refined.

What was particularly impressive was the well-balanced flavor throughout, from the appetizers to the main course. None of the dishes are too rich or too light, bringing out the natural flavors of the ingredients, and you can tell that each bite has been carefully prepared.
The main dishes, fried rice, ramen, and sweet and sour pork, had a rich aroma and depth, and none of them were off.

The interior has a chic and calm atmosphere, making it perfect for special occasions or when you want to enjoy a leisurely meal. The staff was courteous and helpful, and I was happy to hear that they were able to suggest recommended dishes and wine pairings.

Chinois is a restaurant that lets you rediscover the new charm of Chinese cuisine. I was impressed not only by the taste, but also by the lightness and ease of eating the entire dish, and I felt extremely satisfied after the meal. 白金台にある中華料理のお店「ShinoiS」

駅から歩いていき路地を一つ入り、小さなビルの二階に向かいます。
小奇麗でおしゃれな雰囲気。
一つ個室がありそこを抜けると7席のカウンター席がありました。
少し厨房の様子も見られるような造りになっています。

季節のおまかせディナーコースにアルコールペアリングを付けました。

三種の前菜
芝士春巻　キャビアコンテ
怪味蒸餃　蛸、四川24の味
広東三味露筍　陳皮、黒胡麻の上湯

春巻きは手で頂きます。
どうやって作り出すのだろうと思ってしまう皮の食感と、複雑に凝縮された旨味が堪りませんでしたね。

冬茸魚子羹　能登、夏の風物詩

冬瓜と白子の衣笠茸包みのスープは超絶品でしたね。

辣子粟米　夏の薫り

生菜包水魚　鼈、薰香

レタスの食感が滅茶苦茶良かったです。
一度真空にしているようですが、レタスが身近な食材から貴重な食材に格上げされました。

清蒸鮮魚　西洋菜、夏の香港を懐って

沖縄猪肉拼盆　黒酢、梅菜、又焼・原点

沖縄の3種類の豚肉食べ比べ
あぐー豚、キビまる豚、石垣島のもろみ豚
一つ一つ超一流の調理で、沖縄で一番おいしいところで食べるよりも美味しいのではないでしょうか？
とにかく贅沢な食べ比べでした。

今天麺飯+α？　お好きな種類をお好みで

デフォで三種で大盛にするなど量の調整が出来ます。
低温で長時間炒める炒飯が、既成概念を覆すような味わいでした。

ペアリングが料理としっかり合いつつ、普段あまり見かけないようなお酒たちでしたので頼む価値ありですね。

以下を注文しました。
・最高級の乾物を使用した一皿を含む季節のおまかせ　[39,800円]
・中国茶ペアリング　[17,500円]

最初は春巻き。
キャビアとチーズが載っています。
普通に美味しいけど、くどい感じが。
嫌な予感。

アワビは磯の香りが強くてちょっといまいち。

食事は、ミニまん、炒飯、冷麺。
ミニまんは、ピザまんっぽい感じ。
炒飯はしらすとラー油をかけて食べます。旨いけども普通なんだよなぁ。
冷麺もシンプルな味。

最後まで、おっ！てなることなく淡々と進んでいき終わってしまいました。
タレ、ソース、餡、スープのどれも意外性がありませんでした。
繊細な味の違いをふむふむと感じながら楽しむものなのかなぁ。

中国茶は、色々な味や香りを楽しめ、また料理との相性も良かったです。
ただ、料理と同じで意外性はなく、この値段は高すぎる気がするなぁ。

I ordered the following.

Chinese tea has a variety of flavors and aromas, and goes well with food.

最近多いチャイニーズ。なかなか予約が取れないようなのですが、お誘いいただきました。「ShinoiS」。

コースは33,000円〜、お酒のペアリングを付けると予算は5万円くらいでしょうか。店内はカウンター7席と個室が1部屋。高級感がありながらも、気さくな店員さんで居心地良き。

もちろん、お酒はペアリングをオーダー。

コースの最初はフカヒレの春巻きから。

チャイニーズの定番春巻きですが、中にはフカヒレ、パリパリの皮の上にはチーズとキャビアが乗っています。食感を楽しみながらも豪華食材のマリアージュに大満足。

次のお料理に合わせるのは、日本酒。大好きなみむろ杉です。

いただくお料理は干し豆腐の煮込と賀茂茄子。

しっとりした食感の茄子に、ぷりっと弾力ある干し豆腐。シンプルですが、この組み合わせが最高。

続いてこちらの白ワイン。

色合い鮮やかで美しい、蒸し餃子。

甘辛いソースたっぷりで味わいます。

海鼠の醤油煮込みの小丼。

下にはご飯が隠れていて、食べ応えも満点。

見た目も美しい摺り流し。なめらかな口当たりが美味しい。

こちらは、なんとも珍しいアスパラガスを3種類の味付けで楽しみます。右から左へ食べ進めるのだそう。

透き通ったグリーンは、根元を上湯スープで炊いたて味付け。

真ん中はピリッと刺激のあるスパイスでシャキっと食感とスパイスを味わいます。

最後に食べるのはアスパラの穂先。こちらは塩でさっぱりと王道の旨味を味わいます。

続いて登場したのは、鮑です。

小ぶりですが、鮑まるごと味わえる至極の逸品。鮑の旨味が浸みた餡もたまりません…！

お魚料理も美しい〜。ねっとり柔らかい太刀魚です。

添えてある梅とパクチーのペーストはお好みで。

続くお肉は比内地鶏の3種類食べ比べ。これには赤ワインを合わせます。

カリッとしたげてスパイスをきかせた揚げ鶏。ジューシーで旨味抜群！

手羽は外はパリッと、中はしっとりで絶妙な火入れ。香ばしい風味がおいしいです。

そして、蒸し鶏。しっとり柔らかく、優しい味わい。

そして、〆は3種類。1種類だけでもよし、3種類全部食べても良し。さらに量も少なめ、並、大盛が選べちゃうんです！これはテンション上がる…！
ということで、もちろん3種類全部いただきますよ。まずは、胡麻ダレ水餃子。

ひと口でパクっと。胡麻の濃厚な旨味と甘味が〆にぴったり。

そして、葱炒飯。

味変用にじゃこが付いてくるところも嬉しい。

ご飯がパラパラでさっぱりとした後味、王道の炒飯ですね。

味変のじゃこもいいアクセントになっています。

そして、最後は酸辣湯麺。

〆にはやっぱり麺が食べたくなる〜！辛さと酸味がちょうどよく、ペロリと食べられちゃいました。

デザートはさっぱりと。

さらに、もっちもちの月餅を食べて大満足。

気軽に行けるお店ではないですが、斬新なネオチャイニーズと王道中華のマリアージュを体感できる、素晴らしいお店でした。
ごちそうさまでした！

There are a lot of Chinese dishes these days. It seems like it's hard to get a reservation, but I was invited. "Shinois".

Courses start from 33,000 yen, and if you include alcohol pairings, your budget will be around 50,000 yen. The restaurant has 7 counter seats and 1 private room. Although it has a luxurious feel, the staff is friendly and makes you feel comfortable.

Of course, we ordered pairings for alcohol.

The course starts with shark fin spring rolls.

These are classic Chinese spring rolls, but they have shark fin inside and cheese and caviar on top of the crispy skin. While enjoying the texture, you will be very satisfied with the marriage of luxurious ingredients.

The next dish to go with is sake. My favorite is Mimuro Cedar.

The dishes to be served are stewed dried tofu and Kamo eggplant.

Moist texture of eggplant and plump and springy dried tofu. It's simple, but this combination is the best.

Next up is this white wine.

Beautiful steamed dumplings with vibrant colors.

Enjoy it with plenty of sweet and spicy sauce.

A small bowl of sea mouse stewed in soy sauce.

There's rice hidden underneath, and it's very satisfying to eat.

Suri-nagashi also looks beautiful. Delicious smooth texture.

Here, you can enjoy the unusual asparagus with three different seasonings. Apparently they eat from right to left.

The transparent green leaves are seasoned with freshly cooked roots in hot water soup.

The center has a tangy spice that gives it a crunchy texture and spice.

The last thing to eat is the asparagus tips. This one has a refreshing taste of salt and classic flavor.

Next came abalone.

Although it is small, it is an exquisite dish that allows you to enjoy the whole abalone. The bean paste soaked in the flavor of abalone is also irresistible!

The fish dishes are also beautiful. It is a sticky and soft cutlass fish.

The plum and coriander paste that comes with it is your choice.

The next meat is a comparison of three types of Hinai chicken. Pair this with red wine.

Crispy, fried chicken with spices. Juicy and delicious!

The chicken wings are perfectly cooked, crispy on the outside and moist on the inside. The fragrant flavor is delicious.

And steamed chicken. Moist, soft, and with a gentle taste.

And there are 3 types of finishing touches. You can eat just one type, or you can eat all three types. Furthermore, you can choose between a small portion, medium size, and large size! This is exciting...!
So, of course, I'll have all three types. First up is the sesame sauce soup dumplings.

Snap in one bite. The rich flavor and sweetness of sesame seeds are perfect for finishing the dish.

And green onion fried rice.

I'm also happy that it comes with a jako for a different taste.

The rice is fluffy and has a refreshing aftertaste, making it a classic fried rice.

The strange taste of jako is also a nice accent.

And finally, the hot and sour noodles.

After all, I want to eat noodles at the end! The spiciness and sourness were just right, and I could easily eat it.

Dessert is refreshing.

What's more, I was very satisfied with the chewy mooncakes.

It's not a restaurant that you can easily go to, but it was a wonderful restaurant where you could experience the marriage of innovative neo-Chinese cuisine and traditional Chinese cuisine.

見た目シンプルな高級中華ですが、味は凝縮された旨味がたくさん詰まっているって言う印象のコース料理の数々でした。金額もそこそこ張りますが、一品一品が中華定番のフカヒレ、ナマコ、干し鮑等の高級食材を春巻き、餃子、スープ、肉まん、炒飯、餡かけおごげ等の定番料理にふんだんに使い、創作にも溢れ、見た目はシンプルですが食べた瞬間に口の中で美味しさが広がるって感じでした。すべての料理が想像をはるかに越えて美味しかったです。季節で年間に4回コース内容が変わると聞いたので、是非また訪れたいお店のひとつです。
