Where to start here - a simply sublime experience for my husband and I on our honeymoon. This was our first time at a 3-Michelin star restaurant so we weren't sure what to expect but everything we ate was interesting and delicious and the service was beyond impeccible.

I think the dish they're most known for is their seasonal salad (ours had, I think 62 different vegetables? 62?) but it was probably my favorite dish of the night. So fresh and beautifully presented. Their signature dish, the forever (I'm exaggerating, I think it's only 4 hours) cooked turnip, was an interesting take on an oft ignored root veggie.

The best thing about dining here is that it didn't feel too stuffy or pretentious. The servers clearly were working very hard but they would bring out dishes for us to take photos of and encouraged it, and they had nice chats with us in between courses. We had a great time here and an incredible experience.

Well deserved ⭐️ !I had dinner here before, it was great. But it’s my first time to try their lunch course.I loved the succulent & creative lunch menu.After were done,i went outside thinking my driver is already there and i had to wait a little bit.3 staffs stood there to wait with me but i told them it’s ok.They should go inside because it’s a little bit chilly.That’s a michelin star service!

The service was excellent, and the restaurant was very accommodating of my girlfriend’s vegan dietary needs, which we really appreciated. The first three courses were fantastic, with some dishes being finished or prepared right at the table, adding an interactive and enjoyable touch. However, the remaining courses were unfortunately underwhelming. While there are many things the restaurant does well—especially the attentive service and creativity in the opening courses—for a 3 Michelin star restaurant, we had hoped for a higher level of consistency throughout the entire meal.

The sustainable commitment is unique! Big respect for their land, sea, local farms and Japanese ingredients! However foodwise for my pint of view miss the mark… for a 3 Michelin stars i was really expecting a lot! So i ended up a little unsatisfied. I was really looking for a very delicious food,  but i couldn’t find it. However. Amazing work achieving a green star. Definitely deserve it.

Some of the best restaurants constantly evolve with new ideas and concepts, changing flavors to match diners more sophisticated palates, and making dishes more eye catching. L'Effervescence was once such a place. Along with its three Michelin stars it was regularly ranked near the top of Asia's 50 Best and World's 50 Best yearly rankings. While inspectors and raters look for new, cutting edge, and exciting, L'Effervescence is happy to maintain its well honed and executed experience. Dress is "smart casual", which in Tokyo means formal slacks, collared shirt and a jacket for gentlemen. First, Western palates will often miss the sharper flavors of acid, salt, and fat. Other Asian palates may miss the deeper range of sweet, sour, salty, bitter, and spicy. The sum of the dish may not end where you expect. Yes, this is unmistakably French. But the execution and flavor palates reflect L'Effervescence's respect for letting ingredients be at the front. Several course will have unmistakeable flavors of alcohol, unless you opt out. The meal starts with "Welcome". A warm omotenashi cocktail of citrus, white peppercorn, and pungent greenleaf is crushed and mixed with your choice of green tea or nihonshu. Different courses along the way will have a table side presentation "Ars longa, Vita brevis" is their signature presentation of seasonal vegetables from their artisan farmers. A basket of the current bounty is presented before you receive the meticulously plating of local produce. The numbers of ingredients varies - on this night there were 61 different items. "Fixed Point", kabu turnip, from Yoji Kaneko, is slowly cooked for 4 hours before being seared to finish, is both simple and complex. Do not expect big flavors here. Rice, at the end of the courses, is replaced by Nanatani duck thigh in ravioli, also filled with Hoshikogane sweet potato, from Manabu Suzuki. This sits in a sweet, fatty, light umami duck consomme. As with rice, you can have multiple servings if you desire. You move to a plating of your choice of up to 6 artisan Japanese cheese ranging from hard to soft, funky to creamy. Then there is a main dessert. A set of petit four and a "World Peace" drink of peanut, milk, and shochu, are a prelude to the finale. A matcha service is prepared by your server - each server is trained to formally serve matcha. Before you leave the table a basket of local products used by L'Effervescence and specially packaged is presented. You are allowed to choose one item to take home. Then before you leave the restaurant you are also given a slice of the rice sourdough and some cookies as an additional thank you. L'Effervescence is no longer on the cutting edge. But it pursues Chef-Owner Shinobu Namae vision of being a restaurant that sustainably restores the well-being of people, society, and the planet. No apologies offered. None needed.

On our Japan trip, we wanted to take advantage of the Michelin price cut - meaning, two- and three-star spots are often less expensive here than in NYC - and ended up booking L'effervescence (***) and Crony (**). L'eff was the better of the two, fwiw. While I would say it's not quiiiite on the level of Per Se or a pre-vegan EMP, the food was overall excellent and we had a lovely time here. Highlights for me were the 64-vegetable salad, ravioli (get a refill!), tea ceremony and dessert course. Our captain was great, and really took care of us. Choose-your-own-take-home gift was a really nice touch!

Delicious, amazing Christmas Day lunch. Very friendly, approachable staff. Beautiful restaurant. Everything was amazing and perfect. I can see why it has 3 Michelin stars. I definitely recommend for a special occasion.

To be honest, the only redeeming part of this restaurant experience was its service, and even then I think it's a little disrespectful when a waiter says to our face there are too many foreigners in Japan. Other than that, we had pretty good service, and they even walked us out at the end of our meal. The food itself was very disappointing. For ~$300 a person I expect to be wowed or at least have over half of the dishes impress me. For starters, the majority of the dishes, including the signature shallot and the mushrooms, were so unimpressive they were actually worse than much of the street food we had in Japan. The way the food was displayed and prepared was pretentious, with grandiose gestures that ultimately led to disappointing flavor and texture. We waited for extended periods of time between dishes to the point where we were at the restaurant for 3 hours. If you're in Tokyo, please save yourself the time and money and eat somewhere else.

Location: In a quiet residential street across from a temple, in Nishiazabu (near Roppongi). Restaurant in its own building, very zen feeling. Walking distance from Roppongi Hills. Price: $$$$$ Omakase menu (almost double if you go for the wine pairing). 4 stars because of price/value and alternatives in Tokyo. We ate at a lot of amazing places in Japan and this was one of the most expensive meals. Reservations: online booking available on OMAKASE app 30 days in advance. Ambience: Minimalist elegance. Dress code is smart casual, collared sleeve shirts for men, jacket optional. Service: Definitely Michelin star impeccable service. Service team also speaks excellent English. English and Japanese menus offered. Food: The food is French techniques with Japanese ingredients. I would say flavor profile is lighter in flavor and more nuanced than traditional French food. All dishes were beautiful to look at and tasted great. It's also winter, so turnip/radish features prominently on the menu, this ingredient may not suit everyone's tastes. It's a very Asian flavor that for non-Japanese, is mostly an accompaniment at best. Also, nothing jumped out at me as epic. For me, I prefer the flavor profile at restaurant Moliere Montagne just a bit more, some epic dishes there is still on my mind. Wine: Extensive wine list, sommelier was very helpful. We ended up doing the wine pairing and there were definitely some hits and misses from my perspective (did not agree with some pairing choices). I have strong preferences for certain types of wine and profile that I like and don't like. So pairings often disappoint given the price. I would have likely enjoyed just getting a bottle of white and a red that we love instead. Definitely feel like a spot perfect for celebrations and special occasions.

My 601st (!) review on Yelp. For about $300 USD per person at dinner (not including pairings), if all 3-star Michelin restaurants are like this, my wallet is in danger. This was my first 3-star Michelin experience and I couldn't have asked for a better one. Service was truly what set them apart. They accommodated our lack of Japanese and our host made every effort to make us feel comfortable and actively conversed/engaged with us. I'm sure I made some faux pas since I'd never been to a place so fancy (like, do you ask for the check? How do you indicate you're done? lol). The food was pretty great barring some minor things. I loved that they gave us a list of their artisan farmers and their products. Welcome course: The opening cocktail tasted orange-y and minty at the same time, not really great. The bouquets of vegetable crisps and the tofu sour cream were amazing. I did cut myself on a pepper one because it was so sharp. Underwater forest: Risotto is a nice dish, but I've never been wowed by it. This was genuinely a "Wow!" risotto. One of my favorites. Genesis of civilization: sourdough bread. Their bread course was kind of a letdown. I must be used to San Francisco sourdough, because nothing about it seemed sour. It was very soft, too. The potato focaccia almost seemed gummy, instead of airy, fluffy focaccia. However, the tofu sour cream I kept from the welcome course was really great on both breads. Ars longa, Vita brevis: I'd had a multiple vegetable salad in Kyoto just weeks ago and I was happy to see another take on it. Fixed Point: The Tokyo turnip was so bitter and too salty, even though it was juice and had a nice texture. I couldn't tell if the taste was intended, considering how "complexity and simplicity" were on the menu. River: Ayu fish was good, but a little bitter. The lime and cucumber were a great combo. I personally don't love mint/shiso in a sabayon but it was fine. Forest: I thought this was a perfect dish. The duck was juicy and tender, the wine sauce was strong but without the bitterness from alcohol, and the asparagus was fantastic. The morel tasted like smoked sausage; my personal notes say that the morel tasted like Lit'l Smokies from Hickory Farms, haha. The duck thigh and lemon-marigold ravioli had a familiar taste to us all that we couldn't place, maybe similar to oregano? To me, the duck consomme tasted like pate, honey, and soy sauce. It was an interesting mix of flavor. Migration: we tried a Bleu cheese, a brown cheese from Saga (?), a Brie-like cheese in a bamboo leaf from Hokkaido, a hard cheese from Hokkaido with honey, and an aged mozzarella in a gourd bottle shape. There were Japanese fruits soaked in brandy and some white peach sake sauce? Esperance: Dessert at the end was a pretty delight. There were lots of small little things. World Peace was a peanut milk that was so subtle and paired well with everything (alcoholic or non-alcoholic). The rosemary cream sando was a nice break from the sweet and had an intense rosemary flavor. The grapefruit and ginger crystal was amazing, especially considering I normally don't like either of those flavors. It was a traditional crystalized soft candy, but not gummy. At the end of the night, they presented us with a basket where we could each choose one souvenir to take home and some cookies. We picked some dashi and fish sauce that I have yet to bring myself to use.

Matt B. and I celebrated our tenth anniversary with a remarkable dinner at L'Effervescence. I booked our table two months in advance, the actual minute reservations became available. The best time I could get for a party of two was at 5:45. I guess you have to be on the ball if you want to eat at a Michelin three-star joint in Tokyo. L'Effervescence is fancier than any restaurant back home, and we welcomed the chance to dress up. The space was elegant and our table was great, in a large semi-circular booth at the edge of the dining room. This was a nice set-up: we got the intimate luxury of a private room without losing out on any atmosphere. I was surprised to find that we were two of the only customers on an obvious special occasion date. Most of the tables were occupied by three or four diners, just some friends or business associates hanging out on a Thursday night. Service was impeccable. There was a whole team attending to us, and they were all super professional, with a finely calibrated level of warmth that managed to come across as genuine. I especially appreciated Shogo and Yuga, who were genial and even funny. Their English was good, and they obligingly praised my Japanese. L'Effervescence only offers one menu option, Chef Shinobu Namae's French-Japanese omakase. They'll work around allergies but don't really take other dietary restrictions into account. The night's menu came printed on thick paper, with amusing little names for each part of the meal. The only decision we had to make was what we wanted to drink. We went for the standard wine pairing, and it added a lot to L'Effervescence experience. Dinner was spectacular, starting with the "Welcome" course: an omotenashi cocktail, a bouquet of vegetable crisps, and tofu sour cream. The cocktail was light and fragrant, with Mitosaya Cinq Sec, a white curaçao made with Japanese orange, fish sauce spray, sisal flowers, and sudachi. The vegetable crisps were wonderful--paper-thin, crispy, and flavorful, and just perfect with the lush, tangy tofu sour cream. Next came the "Circle of life," paired with a glass of Guiborat Champagne Grand Cru Extra Brut "Prisme." This was an earthy, aromatic dish of matsutake mushrooms and pike conger with a Sasasanishiki rice risotto, the top layer of mushrooms torched tableside just before serving. Just superb. "Genesis of Civilization" felt like a lot of name for the bread service, but both the potato focaccia and sourdough were quite good. They came alongside "Ars longa, Vita brevis," an impossibly vibrant, intricate salad of dozens of artisanal vegetables. There was only about one small morsel of each vegetable, but they all tasted fresh and somehow individually prepared. Their names and local provenances were listed in a separate document accompanying our menu. The plate was dusted with a flavorful kelp and fava bean powder, and there was a glass of Les Cantarelles Can Barcelò Free Rose to go with the course. "Fixed Point" was the restaurant's signature dish: "Tokyo turnip complexity and simplicity," paired with Hakurakusei junmai daiginjo sake. I don't know what they did to this turnip, but it was fantastic, sweet and juicy, finished with Basque ham, parsley, and brioche. From the "River" we had whole fried wild ayu with marshpepper knotweed sabayon, cucumber rapé and lime, suji-aonori, and uruka gastrique, made with the fish's guts. This came with a glass of Vitovska "Solo MM" Vodopivec. From the "Forest" there was beautiful Kyoto duck wood-fired over local mizunara oak, with red wine sauce, green asparagus, and girolle mushroom. This was paired with a glass of François Feuillet Morey-Saint-Denis. Then more duck in the form of rich dumpling-like duck thigh ravioli in Nanatani duck consommé with grilled eggplant, served with Beau Paysage Tsugane La Montagne. "Migration" was a pleasurable survey of artisanal Japanese cheeses: one brown, one blue, one semi-hard, one camembert, and one mozzarella, accompanied by a mirin sauce, figs, and honey, as well as a glass of Fugue de Nenin Pomerol. "Esperance" brought dessert, a gorgeous rhubarb and lime agar tart served with kaffir lime leaf ice cream and Rolly Gassmann Vin D'Alsace Riesling, as well as a decorative plate with "Happy 10th Anniversary" written in chocolate. Then there were six excellent mignardises: pineapple fig leaf choux, peanut financier, hazelnut montblanc, rosemary cream sando, ginger and grapefruit crystal, and chocolate with cardamom. Dinner ended with a "world peace" cocktail of homemade peanut milk and shochu, then bright green matcha, prepared at the table. We got black tea and coffee, which we nursed before figuring out we had to ask for the check. The staff called us a cab and sent us home with presents: rosemary sable cookies and a sweet bread for the morning, plus some cashews and a bottle of soy sauce. This was a memorable night, full of graceful hospitality and delicious food. I'm glad we spent our anniversary at L'Effervescence.

This was my second time eating at this establishment. The first time I was there, I enjoyed the superb service, but thought the food was a hit or miss. This time I did a non alcoholic pairing and that was a big miss. I had to leave some of the drinks untouched after one sip as I found them either bland or just distasteful. The service was excellent and all the dishes were beautifully presented but the food was again, a hit or miss.

We've been to a handful of three star Michelin restaurants around the world, including in Japan, U.S., France, Germany, Peru, Hong Kong, etc. but this is the only one that has so far made us want to keep coming back. In fact, we were so impressed that we immediately decided to book our next reservation to try their winter 2023 menu. The restaurant is in a quiet residential area of Nishiazabu and fuses French and Japanese cuisines. There is only one tasting menu for both lunch and dinner that is JPY 34,000 per person. What we love about the restaurant is the chef's commitment to sustainable food and agriculture and how he values not only fresh, local and seasonal ingredients, but also his relationships with the farmers and producers. While we don't normally prefer traditional French food because it can be quite heavy, L'Effervescence makes French food lighter by incorporating Japanese flavors. We especially enjoyed the snapper with broth that included yuzu and Japanese peas, as well as the crab risotto. The tasting course ends with a Japanese tea ceremony so that we finish the meal with Japanese green tea instead of coffee or tea, which is the standard ending to Western tasting courses. The restaurant itself is chic and elegant and incorporates designs taken from traditional Japanese tea houses. There is even a small Japanese garden outside even though it was too dark to see it when we went for dinner. The service was also top notch without it being stuffy and pretentious and it almost felt like a casual fine dining place even though it is one of the best restaurants in Japan and the world. I know it's an expensive meal, but it's definitely worth the price and we look forward to returning in early 2023.
