Great dining experience at Impromptu.  This is a one Star Michelin restaurant.  Glad we got seated at the bar counter.  Loved interacting with the cooks and chef.  Made it more enjoyable.  The tasting menu consists 10 courses for $125 USD, which is a good deal.  I opted for the cocktail pairing which has seven cocktails priced at $50.  My wife had the wine pairing priced at $75 per person.

We also splurged and got their two additional dishes- one with white truffles priced at $30 an ounce,  They are heavy handed with it the truffles, so tell them to give you couple slices.  That was a little pricey, but worth it.

For the tasting menu, I really enjoyed the fish and seafood dishes.  The main dish is their sugarcane smoked duck which was really good.  I like how they highlight Taiwanese local ingredients.  The chef/owner Paul Lee was there and was overseeing his staff.

You have to make reservations one month in advance so make sure you add it to your calendar.  Overall we spent close to $600 but again we opted for the two additional courses. Total time was around 3 hours.

This was my first visit to the restaurant, and I was impressed by every dish presented. The impromptu dish that earned Chef Paul his Michelin star truly lived up to its reputation. The creativity in using local ingredients to craft such exceptional dishes was remarkable. Simple elements like locally farmed pork, fresh fish from Penghu Island, and local vegetables were elevated with expertly crafted sauces that enhanced the flavors beautifully.

I thoroughly enjoyed both the meal and the experience, especially sitting at the counter, where I could watch the young, passionate chefs work together to create a memorable dinner. In terms of creativity and flavor, I would rate the food five stars. However, the drink pairings were underwhelming and not as impressive as the food.

Chef Paul himself joined the team in the kitchen, occasionally chatting with customers, and it was clear to see his passion and dedication. I particularly enjoyed the appetizer, especially the homemade bread with dried tomatoes and shrimp in olive oil. A few standout dishes included a tomato dish with a special sauce that was incredibly appetizing, and the local fish with saffron sauce, which had a rich, oceanic flavor.

The slow-grilled pork ribs were another highlight, with each part of the pork offering a unique flavor. The rib bone side was especially flavorful, and the meat was perfectly cooked. The claypot rice could be improved by cooking it fresh in the pot rather than steaming it, as this would give the rice a more intense flavor.

The dessert portion could be made smaller for a more manageable bite—especially the watermelon, which was too large and messy to eat in one go. The wine and drinks were decent, but I wouldn’t recommend the pairings. Overall, it was a fantastic dining experience, with attentive service that made me feel truly welcome.

Appetizer: Thin noodle with a bit of wasabi and mushroom, rightly balanced seasoning, not salty nor sweet or spicy with a gentle soup. Right amount to open up your appetite even though I had an hour ago a big bowl of ramen. I didn’t know (rather I forgot) that my wife would treat myself and my son for her own birthday in this upscale French chic restaurant at B1 of the Regent.
2nd Appetizers: eat with your hand. Easy to digest with fresh fruit and vegetable flavors and light savory.
All were served at slow pace with the entire dinner lasting nearly three hours (not suitable for anyone in rush or impatient)
The best was the mango and coconut ice cream.
The dishes are seasonal and change every quarter.

Couldn't recommend this place more!

After having omakases around the world, I'd have to say this place ranks high on my list in terms of the entirety of the experience. I enjoyed the fact that it felt casual and unpretentious (I prefer straightforward no theatrics, only good food) yet private, seasonal menus were very well curated with the innovative dishes, harmonious blends, tastes of Asia that were a treat for my senses. If I were honest, I can't emphasize how much the food made me say wow. I walked out feeling extremely satisfied. Service was amazing as well, you could feel the teamwork and camaraderie that goes behind. In terms of pricing, it's more than reasonable for what you get.

Adding on that the entire dinner was from 6pm till 1030pm. 17 dishes in total. The intervals between each dish was a tad too long.

This would absolutely be on my list when I'm back in Taipei.
