From the outside you wouldn’t expect this restaurant to be of the caliber it is, but WOW! We got there just as they were opening and they treated us so we’ll. The food was excellent! It was a very cosy place to relax, feel at home and enjoy an amazing meal experience.

QUE DU BONHEUR !
On se demande encore pourquoi les guides Michelin ont pénalisé cette enseigne et surtout sur quels critères : décor désuet et carte peu variée ! Je passerais sous silence mon avis sur les enquêteurs chargés de noter les restaurants et ferais davantage confiance aux VRAIS (c’est-à-dire non fictifs !) clients émettant leurs avis sur les sites ad hoc.
Je rejoins Etchebest qui affirme que lorsque la carte déborde de plats divers et variés : ‘’quand on fait de tout rien n’est bon’’ ! Et il est sans doute plus difficile de ne proposer que du bon plutôt que de la quantité. Un restaurant gastronomique n’est pas une cafétéria !
Alors oui, chez les sœurs Egloff tout est parfait et surtout constant : Alain est à l’accueil, Lydia en cuisine, Isabelle en salle, le serveur également, ce restaurant fonctionne ainsi depuis des années tout est codifié mais personnalisé.
La cuisine est d’empreinte méditerranéenne, aux épices du soleil ou d’Orient. Etonnant dans l’Est de la France, et un magnifique olivier orne la salle du restaurant.
Ce soir j’avais choisi le menu ‘’tout Mer – Poisson’’ et suis sorti de mes clichés habituels filet de bœuf et foie gras ! J’avais décidé de faire ‘’différent’’ et je n’ai pas regretté ce choix : truite en marinade, accompagnement de crustacés en entrée, suivi de bar sur coulis et lit de légumes en trompe-l’œil, le tout aux essences originales (par exemple cardamome, cannelle, gingembre, etc.) bien entendu, chaque plat accompagné de sa surprise (sucrée ou salée), la violette étant la dominante actuelle
Une mention particulière pour la fougasse tiède avec tapenade et le pain maison.
Une dernière remarque concernant les tarifs : non, ils ne sont pas prohibitifs ! Un restaurateur gagne sa vie sur les boissons et les extras, pas sur les plats (s’ils sont de qualité et c’est le cas à la Bonne Auberge) qu’il propose. Si vous restez sages sur les vins les prix ne s’envoleront pas et Isabelle, sommelière émérite, saura vous conseiller.
Les tables sont bien espacées et permettent une intimité certaine dans cet espace de restauration très haut de gamme.
Alors oui, encore bravo à cette équipe, ne changez rien, chez vous on se sent (presque) comme à la maison.

WHAT HAPPINESS!
We still wonder why the Michelin guides penalized this brand and especially on what criteria: outdated decor and limited menu variety! I would ignore my opinion on the investigators responsible for rating restaurants and would place more trust in REAL (i.e. not fictitious!) customers giving their opinions on ad hoc sites.
I agree with Etchebest who affirms that when the menu is overflowing with diverse and varied dishes: “when you make everything, nothing is good”! And it is undoubtedly more difficult to offer only good things rather than quantity. A gourmet restaurant is not a cafeteria!
So yes, at the Egloff sisters everything is perfect and above all constant: Alain is at reception, Lydia in the kitchen, Isabelle in the dining room, the waiter too, this restaurant has been operating like this for years, everything is codified but personalized.
The cuisine has a Mediterranean touch, with spices from the sun or the Orient. Surprising in the East of France, and a magnificent olive tree adorns the restaurant room.
This evening I chose the “all sea – fish” menu and went beyond my usual clichés of beef fillet and foie gras! I had decided to do ''different'' and I did not regret this choice: trout in marinade, accompaniment of shellfish as a starter, followed by sea bass on coulis and a bed of trompe-l'oeil vegetables, all with original essences (for example cardamom, cinnamon, ginger, etc.) of course, each dish accompanied by its surprise (sweet or salty), violet being the current dominant
A special mention for the warm fougasse with tapenade and the homemade bread.
One final note regarding prices: no, they are not prohibitive! A restaurateur earns his living on drinks and extras, not on the dishes (if they are of quality and this is the case at the Bonne Auberge) that he offers. If you stay wise about the wines the prices will not soar and Isabelle, an emeritus sommelier, will be able to advise you.
The tables are well spaced and allow for certain privacy in this very upscale dining space.
So yes, congratulations again to this team, don't change anything, you feel (almost) like home.
