Quite simply the best food we have experienced throughout our travels in Corsica.

The service was warm and welcoming, the menu choices were all really interesting and detailed and the execution of each dish was superb - a wonderful find in the middle of nowhere (it seemed).

Thank you I Salti, you will be my best memory of Corsica and it's food.

We had a wonderful meal at I Salti which was recommended to us by another local restaurant. The food was exceptional and the settings is beautiful in a converted mill by a stream. It has a lovely relaxed atmosphere, but with beautiful attention to detail with the food & restaurant.
It is more expensive then some other nearby restaurants, but the attention to details & inventiveness of the food is well worth it.
