A quick review as it’s not a Michelin yet.

Something interesting is happening in Vendée. Thanks to the existing Michelin Stars, I see the gastronomic scene growing at a fast pace. In 2023, it had 3 new stars and a new 3 Stars.
This restaurant is a perfect example of the emulation. The chef worked in a Michelin a few kilometers away, and decided to have his own adventure as a chef.
So it’s not yet in the Michelin but it should be soon.
The appetizers (amuse bouche) are a great start. In general the plate are a notch above the setting which, at first, look more like a nice holiday restaurant. I think that once in the Michelin they will certainly ramp up the room and may be one extra person for the service could be useful.
But the good side of it, is the value for money today. Especially for lunch, which I did not try, but when I look at the menu (21 or 25€), I wonder why you would go to the strip by the beach and pay a premium when you could be here. I ll try it next time for sure. Especially with the champagne they have…
It’s a chef to watch grow. And it’s already a great place to go (with a great price / quality ratio).

If you do one thing while in Saint Gilles Croix de Vie, eat at this restaurant (but maybe not if you are a picky eater or have picky kids, this place is for people who enjoy delicious surprises). It was an exceptional meal with unusual food combinations. The mini appy to start which had a fruity shaved ice over sardine and seaweed tartar was both refreshing and savoury and will remain engraved in my memory. The appetizer, main and desert were also a delight. Kudos to the chef and the team for such a nice culinary experience.

Everything was fantastic from the very beginning. I will recommend this place to my friends for sure.
I just advise to not try booking a table online as it can be tricky because requires an additional confirmation by the restaurant. So just call them.
