Wir hatten einen schönen Abend im Tipkens aber das Preis/Leistungsverhältnis passt noch nicht.

Menüänderungen bzw. Kürzungen wurden nicht kommuniziert. Weinbegleitung sehr stotternd, leise und in vielen Fällen auf das nötigste beschränkt. Das Fleisch wurde überall vorher gezeigt, bei uns leider vergessen.
Es gibt herausragende Gerichte (Rotkohl bspw) und wieder andere die toll aussehen aber denen einfach noch das Gewisse (Fischgerichte) etwas fehlt. Dass das Brot weder warm noch selbst gebacken ist, ist bei der Preisklasse schade.

Es war dennoch ein schöner Abend mit sehr netten Service und einem großartigen Spot auf Sylt.

Menu changes or cuts were not communicated. Wine accompaniment very stuttering, quiet and in many cases limited to the bare minimum. The meat was shown everywhere beforehand, but unfortunately we forgot about it.
There are outstanding dishes (red cabbage, for example) and others that look great but are just missing something special (fish dishes). The fact that the bread is neither warm nor homemade is a shame given the price range.

It was still a nice evening with very nice service and a great spot on Sylt.

Auf Sylt ist es wirklich schwierig, überhaupt mal ein vegetarisches (Gourmet) Menü zu bekommen, von daher erfreulich, dass man hier in Keitum zumindest etwas aus Henkels 'Flora' anbietet und das auch auf der Homepage erkennbar ist.
Frühlingsmenü mit den bekannten Gerichten: 'Bunte Karotten' (ließ ich weg), Kohlrabi (die "Holunderkapern" sind so winzig, dass mein ungeübter Gaumen sie kaum identifizieren konnte und eher als teure Spielerei empfand), Grüner Spargel mit Umeboshi (tolle Idee, lecker und gesund), 'Frühlingsgemüse' mit der Sauerteigcreme, (hierzu bin ich der Weinempfehlung mit Barbera aus Neugier gefolgt, doch der Rote erschlug dann doch noch alles, außer der Sauerteigcreme), 'Old Groendal' Käsegang mit Hagebutte und Kleewurzel (auf den Käse hätte ich verzichten können, aber die Wurzel mit Hagebutte war besonders und lecker).
Vorab und zum süßen Abschluss jeweils raffinierte Grüße aus der Küche, der Auftakt ging so hektisch, dass ich mich nur noch an die Wachteleier erinnere...

Als Alleinspeisende habe ich mich hier allerdings, ähnlich wie in anderen non-veggie Sternerestaurants ziemlich vernachlässigt/allein gefühlt: 4h reichten selbst für das 5-Gang Menü nicht, weil (der eigentlich sehr freundliche) Service mich schlicht mehrfach vergaß: vergessene Getränkenachschübe, keine einzige Nachfrage nach meinem Zeitbudget. Es fehlte die Natürlichkeit/Stolz bei der Beschreibung der Gänge.

Ambiente: es ist alles klein und offen genug, um anfänglich fast jedem der Tischgespräche folgen zu können, andererseits ist die Tischanordnung nicht auf Kontakt der Gäste untereinander ausgelegt.

Manches mag jetzt so 'kritelnd' klingen, aber man muss sich die Preise klar machen. Und ich gönne mir solch einen Abend 1-2 mal im Jahr und möchte mich dann auch nicht wie das 5. Rad am Wagen fühlen, sondern komme für Essensgenuss und Austausch darüber. Die Küche servierte z. B. nur Fleischgänge am Tisch.

On Sylt it is really difficult to get a vegetarian (gourmet) menu, so it's good that here in Keitum they at least offer something from Henkel's 'Flora' and that is also visible on the homepage.
Spring menu with the well-known dishes: 'Colorful carrots' (I left them out), kohlrabi (the "elderberry capers" are so tiny that my inexperienced palate could hardly identify them and found them more like an expensive gimmick), green asparagus with umeboshi (great idea, delicious and healthy), 'spring vegetables' with the sourdough cream, (I followed the wine recommendation with Barbera out of curiosity, but the red one killed everything except the sourdough cream), 'Old Groendal' cheese course with rose hips and clover root (on the I could have done without cheese, but the root with rose hips was special and delicious).
Beforehand and at the sweet end, sophisticated greetings from the kitchen. The start was so hectic that I only remember the quail eggs...

However, as a solo dine-in person, I felt pretty neglected/alone here, similar to other non-veggie star restaurants: 4 hours wasn't enough even for the 5-course menu because the (actually very friendly) service simply forgot me several times: forgotten drink refills, none only question about my time budget. There was a lack of naturalness/pride in the description of the courses.

Ambience: everything is small and open enough to initially be able to follow almost every conversation at the table, but on the other hand the table arrangement is not designed for guests to come into contact with one another.

Some things may sound so 'critical', but you have to be clear about the prices. And I treat myself to an evening like this once or twice a year and don't want to feel like the fifth wheel in the car, but rather come to enjoy the food and exchange ideas. The kitchen served e.g. B. only meat courses at the table.

Das Essen ist Exzellent und der Service war unfassbar zuvorkommend, professionell und freundlich.
Wir hatten das "Menü für junge Genießer", was eine wirklich tolle Gelegenheit ist, Essen auf Sterne Niveau, zu einem guten Preis zu erleben.
Ich kann nur eine klare Empfehlung aussprechen. Es war ein sehr schöner Abend.
