This restaurant is not just a dining place but an experience in itself. An opportunity to explore and discover the art of food and the mesmerizing flavors of exquisitely crafted dishes.
The service was impeccable, and a special thanks to Rochelle, who took excellent care of our table. She explained every dish in English with great detail and handled our dietary restrictions with the utmost professionalism.

As for the dishes, the restaurant’s classic—the artichoke—is a must-try. I immediately understood why it’s so highly regarded; it’s a delightful one-bite dish with a crispy and flavorful taste. The red tuna loin was absolutely out of this world, and I’d also highly recommend the beef carpaccio and the veal loin.

I was drawn to this place a few months ago just walking by. Couldn’t get a table that evening so I planned ahead on my second trip to Madrid. Overall, this was quite the experience, wouldn’t really call this a restaurant. It’s more of a food cabaret if there ever was one. Coming from a f&b background, I was blown away by the attention to detail and cohesion between design and execution. I can’t stress how spectacular the service was, our server Ebis was nothing short of a magician as we watched her finish dishes, provide a warm and inviting service, all in English which we were very grateful for as our Spanish is terrible. All the dishes we ordered save one were finished table-side. The only disappointment was the bread which in hindsight we should have skipped.  The design of the place is pretty out there and works great for the concept, not my cup of tea but definitely forces you to stand and admire, so it achieved its purpose. All in all not your typical dining experience and it’s a great special occasions destination, not a place you go on a whim. People don’t appreciate how much work and passion it takes to pull off something like this and my hat goes off to the team! Well done

We had the tasting menu and the food was all well prepared with good quality ingredients used. We enjoyed most of the dishes and were very full at the end of the meal. We were also surprised by the generous serving of the veal course. Maybe the table side service was a bit too much and the table space is a little cramped for it. Found myself having the twist and bend to make space for it.

Outstanding meal, adventurous dishes beautifully prepared. Chef David  was like a magician, finishing each dish at the table with torch and tweezers, and explaining each ingredient and preparation. When we arrived, we expected "normal" dishes (a hunk of veal or monkfish), but they delivered small jewel-like constructions we could share. After choosing several courses, David suggested an excellent wine to match, at a fair price. I'm looking forward to returning. Do get reservations, it's a popular place.

We had such a great time at Sala de Despiece! Even with some dietary restrictions (I don’t eat meat, and my partner’s lactose intolerant and not a fan of raw food), we found plenty to love on the menu.

The artichoke hearts? Absolutely delicious. We each had one, and it was one of the best dishes of the night. The baby leek was another favorite—so tasty and perfectly done. And we both adored the white fish bites on little fried buns—seriously, they were amazing.

We also tried the octopus, white shrimp, and lion’s mane mushroom. While the mushroom was good, it was a bit simple compared to the other things we tried, so probably wouldn’t order that again.

We also had two glasses each of El Hombre Bala, a lovely red from Madrid that went perfectly with the food. Highly recommended.

All in all, Sala de Despiece was a fun spot with inventive dishes that really impressed us - it's a tiny restaurant so maybe not the best if you're in a group and also the price point is a bit higher than usual but if you get the chance, definitely worth a try.
