If you’re reading this review, deciding which Michelin star restaurant you should try on your trip to Spain, constrained by limited time and $$$, I recommend adding Ugo Chan to your list. Madrid was the last stop of our Spain trip and by that point we were “all tapas out” and really needed a good fusion restaurant. Ugo Chan was just spectacular, every dish was bursting with flavor and freshness. We had the omakase menu and they were kind enough to accommodate to one of our party that didn’t eat raw fish by providing a “cooked” version of the omakase. Hugo himself was a delight to meet and to speak with. You can tell that most diners were locals and regulars.

Si yourself a favor and make a reservation to dine at Ugo Chan. It was probably one of the best culinary experiences, from the chef coming to greet us, to the very attentive servers carefully explaining every dish as it came in and how to properly eat each of them. Five stars all over! Will return for sure when we go back to Madrid

Wonderful experience. Ugo was so warming and very hospitable. The whole staff was wonderfully trained and knowledgeable. The service was impeccable one on par with 2-3 starred Michelin restaurants. Every dish was fun and inventive. As english speaker who is visiting this is a must stop if you love food.
