Another Must-Visit Stop on Your Pintxo Tour

I don’t have much else to say except that the flavor of the mushroom-stuffed pepper completely blew my mind. Incredible.

The sardine pintxos—along with the crab (txangurro), sea urchin, and foie options—were absolutely outstanding. Truly impressive.

But for some reason, what surprised me the most was the taste of the peppers. The quality is genuinely exceptional.

The portions are just right, and the prices are reasonable.

How do they make anchovies taste so good?!?! I could eat the jardinera and the centolla all day, every day.
Absolute must. I recommend going on your first day in San Sebastián because you’re going to want to come back.

Lively bar and snack shop with really solid anchovy pinxtos. I had the trout roe, the black olive, and the piquillo pepper. The trout roe was my favorite due to its contrast of the sharp salinity of the roe with the sour salinity of the anchovies. Another person would disagree and say the black olive was a briniess that punched correctly with the umami in the sardines. The piquillo pepper was ok and I would have gone with the straight salted anchovy so as to avoid confusion.

Great place, and a perfect first start on a pinxto adventure.

Salt-cured anchovies are called anchoas in Spanish. These are the kind that most people are familiar with—anchovies that come in a tin—but high quality anchoas are vastly different from the cheap tins, with a rich umami flavor that isn't overwhelmed by salt, like the difference between jamón ibérico and jamón serrano.

Anchovies pickled in vinager are called boquerones, except in the north of Spain where they're just called anchoas en vinagre. These have less salt and a springier texture, like biting into a freshly cooked fish.

Bar Txepetxa specializes in anchovies and even has a few unusual toppings like coconut and blueberry.

My favorite is the classic with three filets of boquerón and one filet of anchoa, topped with a red pepper. The bright acidity of the boquerones combines with the deep umami of the anchoa, giving you the best of both worlds.

The boquerones topped with coconut was surprisingly good, while the blueberry one was a little weird but not bad.
