Santo is an above-average Mexican spot with some excellent dishes including the Queso, Birria tacos, and fish tacos. Stick to those items for an excellent experience. Don’t expect very formal service but the ambience is very welcoming and has an authentic feel. Overall, a recommended spot that is also on the Michelin Guide.

Santo is my favorite Boulder restaurant. I love you Santo. Could you return that love to me and others by returning your breakfast burritos to their former glory? They were great because the wrap was perfectly sized to the contents within. Every bite had minimal wrap and maximal filling. None of the wrap was dry and overlapped. No more. The filling is still great, but it’s insufficient. I end up with a pile of dry wrap each time. I used to buy 1 on my way skiing and then that counted as breakfast and lunch. I can’t eat it whole driving anymore. Numerous friends have expressed they don’t buy them anymore since they’ve gone downhill. The morning staff tells me it’s just the weekend ones due to who fills them. I don’t know what the real story is but I’d gladly pay more for a “large” vs. a “small” that is currently sold. Otherwise I am cashing out my nearly full burrito card and making my own from now on.

My daughter and I had chicken enchiladas with green salsa. Nice and spicy, very nice flavor. Wife had the wagyu tacos, also great. Blue corn tortillas with guac to start, both great. Also had a margarita. It's not cheap, but quality has a cost.

Every dish was delicious. Our server, Olivia, was a great help not only with sorting our questions, but also making us aware of things that constantly change (like the ice cream flavors.) We spent more, I think, than you really need to. We each had two cocktails, we ordered two appetizers, each big enough to share, and then we each had dinner platters. We ate too much! Lol! Every bite was worth it! Update: we took home the leftover sweet potato enchiladas (more than half of the dish,) and the leftover Montadas (same) and had them for dinner the next night. I swear they were even better than the first time! Over order! Haha.

This place was so tasty! The server started by asking what dietary restrictions we had and brought over a special menu with vegan options! The zucchini burrito was so good and the horchata and passionfruit habenero limeade was very flavorful. They also had vegan ice cream flavors! We will definitely be back!
