Incredible and hard to beat restaurant. Highly recommend the Berkshire pork chop and truffle risotto. Extensive wine list with a hefty price tag but worth it. The ambiance here is 11/10. It feels as though you’re dining in a castle. Top notch experience all around.

Very elegant, cozy and romantic place that serve by far be best food in Beaver Creek. Amazing flavors and creative dishes. Outstanding service. I’ve never tasted a rack of lamb so tender and mouthwatering. Applause to the chef!

Our reviews had over 56 million views in the last 12 months.  We do not get paid we just love to eat and have fun.  We really love Splendido At The Chateau.  This some of the best food in Beaver Creek.  You can dress casual or dress up.  Lots of tables but always requires a reservation because it always sells out.  It is connected to some of the most expensive and elegant private homes and condos in Beaver Creek.  All of the food we had was spectacular. To start we suggest the Mushroom Potage, the Apple & Fig,  and the Bison Carpaccio.  All are just divine, melt in your mouth fantastic.  Bread is served hot with a sweet salty butter we could not get enough of.  Special app we had was the scallop ravioli which was a ten plus!!!!  For dinner we had the Colorado Rack of Lamb and the Miller's Chicken.  Lamb was served rare as requested and was super juicy full of flavor and it was A LOT OF MEAT!!!!  4 full ribs.  She had the Miller's chicken which is cooked "brick" style and "Neapolitan" style.  So top and bottom layers of white meat plus a darker center blend.  We asked the waiter what was in the center blend and he said "horsemeat".  We could not believe it so we asked another waiter who said he doubted it.  Ask our original waiter again and we all laughed when he said "Forced Meat".  Forced meat is when they take the dark meat, mix it with herbs and spices, and then force it through a press much like play dough so that they can make the final product in the shape of a brick.  It was really lovely and we all had a laugh about "horse meat" which was not horse meat but was forced meat.  Spectacular!!!!  For dessert we had the Lemon Souffle which is one of the best in the  world.  Light, hot, like eating a sweet lemon cloud.  Perfect.  She had the apple pie and I had the chocolate croissant as well. Both were really good.  The apple pie is a totally different presentation than you are used to but OMG is it good!!!  Great service.  Fun, funny waiters that really new their stuff.  Explained every dish to perfection.  This is truly one of the best places to eat in Vail or Beaver Creek area.  Perfect on all accounts. Check out all of our reviews and look at all the photos below. I want to thank the chefs, servers, and hosts at Splendido for the lovely birthday dinner.
For my first course,  my steak tartare  was delicious and paired well with the potato baked pavé. I also tasted my family's appetizers, which were also amazing. The foie gras was especially excellent.
For my main course,  my rack of lamb was perfectly fatty and a was a satisfactorily hearty size.

I only wish we were made aware of the time sensitive soufflé desserts before the end of dinner, as that sounded delicious.

The restaurant is beautiful, with even more beautiful views. The dining room was quiet and felt intimate even with other diners next to us at the other tables. As the evening progressed, it did seem that the servers were a bit stretched thin. Nevertheless, our server Jared was professional and described all the food with vivid details.

Again, thank you to the chefs and waitstaff for the excellent  meal.

Yes, please stay away from lovely Splendido if you intend to conduct yourself like Ms. White, who at peak time during service demanded the Chef--who was visible in the open kitchen but certainly not available--join her tableside to create a personally curated menu that addresses her dietary sensitivities and ignore the other 75+ guests dining in the restaurant at the same time. Rather than contact the restaurant in advance to discuss her dietary sensitivities, she apparently risked her life during this visit to Splendido and gambled that the stars would align to allow the entirety of the staff to cater to only her.

We appreciate that on this dining experience, like our many dining experiences at Splendido previously, management, the servers and the kitchen demonstrated the painstaking attention to detail in all aspects of food and service that we have come to know and love to ensure that their guests had a memorable evening.
