I commend the creativity of this restaurant when it comes to giving twists to classic Filipino dishes. My favorites so far are their tortang talon, gising-gising, and pampano. I don’t normally eat these dishes so i was pleasantly surprised when i tasted their version . One of our favorite Filipino restaurants 🤍

Very nice Filipino restaurant tucked away in the very busy Makati CBD. We went on a Sunday so parking was not an issue. We arrived for lunch around 1245. There was a queue for a table and we waited around 30+ minutes which was fine knowing we arrived right at peak lunchtime. There’s a nice waiting area outside. They also took our orders ahead before we were seated.

We ordered the inasal chicken, garlic rice, batchoy, isaw, sago’t gulaman and tanglad ice tea. Food was great but on the pricey side but expected from this type of restaurant. The inasal chicken is the best I’ve had hands down. Batchoy was very tasty and not oily at all. Isaw was good too. A great representation of Ilonggo cuisine!

For the “atmosphere,” just be ready to smell like food when you dine in. The smell sticks to you and your clothes. Also, if you want a quiet place to eat, Sarsa isn’t for you. The chatter from the other diners can get very loud.. add to that the also loud music. Since the entrance is also through a sliding door that almost always remains ajar, expect a few wayward flies. My lunch was bothered by one pesky big fly that refused to go away.

Service was good. Staff was very friendly and attentive. However, I was surprised that despite ordering ahead (like 15 minutes before we were seated) our food only got served after more that 20 minutes.

Overall, I’d recommend Sarsa for their amazing Filipino Ilonggo food if you feel like splurging a bit. Our lunch for 2 was around ₱2400+.

The place has a fine dining vibe, with dim lighting and a cozy atmosphere where you can comfortably have a conversation with your dining companion without needing to ask the waiter to lower the music—a common issue in many European restaurants. The food concept is excellent, as it’s not the traditional fare typically served in Filipino restaurants. One of the standout aspects of this restaurant, based on what I’ve observed over the months and its long-standing reputation, is the regular updates to the menu. This approach greatly contributes to the growth of Filipino cuisine overall, offering foreigners who want to try our food—or those who have already experienced it elsewhere—a modern take on Filipino dishes. It reflects the version of our cuisine that we hope future generations will grow accustomed to and appreciate.

Cocktail: HALIMUYAK

For this cocktail, the preparation time and the time it takes to consume it play a significant role. Since it’s a whisky-based cocktail, if too much ice is added and it sits for a while, the flavors of the cocktail itself tend to lose emphasis. If it takes you more than 20 minutes to drink it—bearing in mind that a cocktail is meant to be enjoyed slowly—it loses its essence. Well, more than just its essence, the cocktail itself essentially fades, and after 20 minutes, it doesn’t have any noticeable flavor apart from tasting like whisky diluted with water. To address this, they should consider reviewing their ice supplier or using a type of ice that lasts longer in this kind of setting.

Longanissa Piaya (8)
I really like the concept behind this dish because it requires a lot of technique to achieve it. Since it’s a piaya bread, the meat needs to be just right—not dry. However, if the meat is too juicy, it will make the bread too soggy. This clearly shows the level of skill involved in preparing this dish.

Palabok Negra (7)
I really like the concept they have for the Palabok since it’s not the traditional one we see every day. Being a Palabok Negra, it seems to reference a Spanish dish called Fideuá negra, So the concept behind this dish seems quite appropriate and well thought out. The only thing is that it’s missing a bit of flavor or a punch to bring out the characteristic taste of the Palabok we’re used to. When you taste it, the main thing you notice is the texture—the crunchiness of the small fried crab and the pasta, which is cooked to a nice balance, not too soft or too firm. However, it’s lacking a bit in flavor in that regard.

was on a business trip nd colleague brought me to this place. Food was very good and yummy but the restaurant's ventilation was an issue. I smell like a walking bbq after my meal.

The bbq skewers were charred, well marinated and yet not too salty or overly flavourful. Usualky I dont eat pork intestine but my colleague said their intestine skewer is very cleaned and different, so i gave it a shot and yes indeed was worth the calories.

This Iloilo-centered restaurant is a rare find in the city. They have the region's favourites with their modern take on it.

The molo soup is has the classic flavour. Love the crunchy strips pf what seems to be fried molo wrappers. It's a tasty dish. Feeling slightly adventurous, so instead of getting the regular kansi, tried their sizzling kansi. This didn't pan out too well. Found the balance to be a bit off. Somehow, it lost its kansi-ness. On the bright side, the beef chunks are tender.
