Eliane, the new Brussels venture from Kobe Desramaults, the celebrated chef behind the now-closed In de Wulf, is a testament to his culinary genius and dedication to showcasing the best of Belgian produce.

Having previously experienced the magic of In de Wulf, my expectations were sky-high, and Eliane did not disappoint. The restaurant itself is elegant and understated, with a wonderful ambiance that perfectly complements the dining experience.

The menu is a journey through a multitude of  exquisitely crafted dishes, each a masterpiece of flavor and texture. From delicate amuse-bouches to the final, unforgettable dessert, every bite was a revelation.  Desramaults' signature style shines through: a focus on seasonality, local ingredients, and a deep respect for the natural flavors of each component.

Instead of traditional wine pairings, Eliane offers a unique and refreshing alternative: fruit and vegetable juices carefully selected to complement each dish. This innovative approach enhances the dining experience, bringing out subtle nuances in the food and creating a harmonious interplay of flavors.

Adding to the delightful atmosphere is the carefully curated music selection. I even recognized the theme tune from the French movie "La Horse," which added a touch of whimsy and nostalgia to the evening.

While it's impossible to single out specific dishes from the ever-changing menu, the overall experience was one of pure culinary delight. The service was impeccable, attentive yet unobtrusive, and the juice pairings were inspired and delicious.

This is another level. Eliane heeft geen open keuken; de 20 gasten zitten in de keuken. En zijn getuige (en onderdeel) van een spektakel onder leiding van Chef Desramaults. Hij leidt de dans van de vijf koks en zorgt als DJ voor ongewone vinyl-achtergrondmuziek. Het scenario is ritmisch. Geruisloos wordt de stroom gerechten geserveerd; steeds verrassend en vaak briljant. Het spektakel duurt zo’n drie uur en als dat niet ongepast zou zijn, zou je het af willen sluiten met een staande ovatie.

This is another level. Eliane does not have an open kitchen; the 20 guests are in the kitchen. And witness (and be part of) a spectacle led by Chef Desramaults. He leads the dance of the five chefs and provides unusual vinyl background music as a DJ. The scenario is rhythmic. The stream of dishes is served silently; always surprising and often brilliant. The spectacle lasts about three hours and if that were not inappropriate, you would want to end it with a standing ovation.

Expérience assez incroyable. Cela faisait longtemps que je n'avais plus été impressionné par un chef à ce point. Le menu est composé de pas moins de 18 créations, car il s'agit bien de créations, parfois très inventives (tant au niveau des textures que des associations de produits).
Parmi celles-ci, des produits nobles et d'une grande fraîcheur (langoustines, caviar, tourteau, huîtres, truffes, Saint-Jacques, rouget, turbot, etc.).
Il faut avoir du temps devant soi (plus de 3 heures), et bien entendu, c'est un budget élevé, mais cela en vaut vraiment la peine.
Eléments également très appréciables :
- la cuisine est ouverte et on peut assister à la préparation des différents plats.
- le chef est présent pendant tout le service et vient plusieurs fois lui-même présenter ses créations.
Seul minuscule bémol : la musique était parfois trop présente, mais je suis convaincu qu'il s'agissait d'une mauvaise manipulation (cela n'a pas du tout été le cas pendant tout le déjeuner, seulement une petite partie).

Pretty incredible experience. It's been a long time since I've been so impressed by a chef. The menu is made up of no less than 18 creations, because they are indeed creations, sometimes very inventive (both in terms of textures and product combinations).
Among these, noble and very fresh products (langoustines, caviar, crab, oysters, truffles, scallops, red mullet, turbot, etc.).
You have to have some time (more than 3 hours), and of course, it's a high budget, but it's definitely worth it.
Also very appreciable elements:
- the kitchen is open and you can watch the preparation of the different dishes.
- the chef is present throughout the service and comes several times himself to present his creations.
Only tiny downside: the music was sometimes too present, but I am convinced that this was due to poor handling (this was not the case at all during the entire lunch, only a small part).
