One of my favorites, very unique.
Their philosophy is based on not only the traditions, but also the very best ingredients of the 4 northern regions, prepared with minimal intervention.
Very simple, very delicious, slogan of the night was: "This is the best *insert ingredient* I've ever head. Tomato tart was a standout dish, but the Goxua outshines any dessert I've ever had.
Great selection of natural wines.
Lastly, the atmosphere is unmatched and Julen and his team are not only very attentive, but also very friendly and welcoming.

Amazing and carefully elaborated tasting menu inspired by the northern part of Spain, from the Basque Country to Galicia.

All of the dishes are homemade and crafted out of ancient recipes that the Islares staff have dedicated a lot of time and care to recover and bring to your table.
