We visited Txirene on our first night in Bilbao with high expectations, guided by its Michelin Guide recommendation. Unfortunately, the disappointment could not have been greater.

Starting with the interior, it looks nothing like the photos. Perhaps they did a staged photo shoot and removed the furniture afterward, because the actual ambiance was underwhelming.

The service was shockingly slow and inattentive—the worst we’ve ever experienced. We were the first table to arrive and sat for at least 20 minutes before anyone came to our table. Shortly after, the room filled with large groups and multiple tables, and the service became practically non-existent. There wasn’t even ambient music to create a pleasant atmosphere—it was just dead silence then the radio started playing.

As for the food, it was at best uninspired and, at worst, completely tasteless. The only thing that stood out as good was the bread and the tomato starter. Beyond that, nothing impressed us. We are still baffled as to how this restaurant made it onto the Michelin Guide’s recommendations. The experience left us questioning what has happened to the Michelin selection process.

Overall, the slow service, lackluster food, and unremarkable ambiance made for a truly disappointing experience.

This is a tourist trap !

Really solid spot for grilled Basque food. The food is incredible, we had Anchovies, Croquets and the Txuleta which were all great.

We asked for wines by the glass and were giving good recommendations.

The Bar out front is great but the change to the very quiet dinning room at the back is a slightly odd vibe.

Love this restaurant in Bilbao.

We were firstly impressed by the crowd and atmosphere at their bar. We wanted to have dinner there but were told that they were fully booked. We immediately asked for reservation for the following day and luckily there was one last table available for our reservation.

Their dining room got a completely different style and atmosphere. Minimal and elegant decoration, cosy and cheerful atmosphere.

Their staff were very friendly, professional and customer centric. They provided good suggestions on food selection and quantity, rather than pushing us to order more and the more expensive dishes. All the dishes we ordered were all very delicious 😋 especially the starters.

I just can’t get the good reviews, let alone the Michelin guide recommendation (the reason we went in the first place).

After waiting for 15 minutes without drinks or anything, we ordered à la carte, two starters and two mains.

The ceviche as amuse bouche was warm and did not have a fresh taste. The bread was okay.

First starter was four filled artichokes. It was just too much and you could not taste artichoke, because of their lack of quality and the overpowering barbecue-ketchup (?) sauce.

Second starter were peppers in some thick sauce. The only thing we finished. Good produce and smoky flavors. The sauce tasted unnatural though.

The fish dish was bitter. The beef was partly tender, partly dry. The sweet potato purée tasted like butter.

In addition to that, the house wines (first time in life I didn’t finish a wine) just did not taste good. One of the plates we got for the starters had stains from another dish. Even the decorative grass fell off the wall.

As you can see, we did not finish the main courses. The waiter asked whether we would like any dessert or espresso, and then asked if we liked the food. There was no reaction after we modestly told the truth in a respectful manner. In the end a completely different waitress (very friendly) helped us pay.

The fact that it felt like only tourists (yes, us too) ate there, didn’t help to shake the feeling off, that we landed in a kind of tourist trap.

I have no idea how this restaurant has a michelin star recommendation.
Starting with the worst: There was a cockroach on our table and when we called the waiter, he proceeded to try to kill by stepping on it when we were still seated, instead of scorting us out and deeply apologising. We got up and while we waited with no explanation, he look over and he was serving another table. Hilarious. After a while we realised no one, neither the waiter or the chef would come talk to us and left by our own. In the front, he came and said everything was solved and we didn’t have to pay. Finally.

In terms of food, my oxtail was, to say the least, room temperature and looked like was 10min waiting to be served at the table. The mashed potato pure was a foam that added nothing to a well known fat meat that needed more substance. My partners cod was blunt and full of an unexplainable thick layer of butter. I will not even comment on the entrances that is basically wakame and supermarket crispy onion with a unflavoured salmon. To finish it all: no waiter came to check on us during the whole meal and only came to the table to rescue us from our uninvited companion: the cockroach.

Disappointing to say the least. Michelin was on some strong vermouth when given this recommendation.
