Delightful! The focus on seasonal foods - especially fruits and vegetables - brings a special touch to the dishes, as does the menu that changes daily according to Chef’s inspiration on what products are at their best. For the main dishes, the chiperones were the best we have ever had, and the bonito was quite tasty as well. The meat fell a bit flat for us, as did the wine pairing. incredible food, amazing wines, feeling at home in an very special restaurant. the long menu was my choice, and I did not regret it at all.  I skipped the cheese (bad for my at night) but I should come back for lunch to try one of the best cheese carts in Madrid. Vegetables are trully outstanding and the pullarda was a feast. the final soufflé was a fantastic note. all of this accompanied by and outstanding wine choice and the most friendly yet ultra professional service.
